    I grew up in a family where boys had to learn cooking and cleaning right beside the girls, and the girls had to learn to drive tractors and operate tools right beside the boys.
    The funny thing was, the girls once noticed that the boys were being tasked with more of the cleaning chores than the girls on those days, and the answer was genius, it's because they'll learn to make less of a mess if they have to clean up the that mess.
    Some families didn't agree with these tactics, but our family produced men that could take care of their children if something happened to their wives, and wives that could run the farm if something happened to their husbands.

    My hubby has no interest in canning but he is always so pleased and impressed when our counter top is full of jars, and that makes me feel happy. He has also taken a liking to making homemade jerky which I think is pretty cool and he's very handy when a chicken needs to be turned into broth.

    I (Sandy) absolutely love your tips and all of your recipes. Love it. Love the love for nature. My husband and I have decided to return to a live on land and just sold our sailing yacht. On the sailing yacht I canned food, made pizza and baked bread with my own sourdough. We will move into our house in Greece in July. I will return to a life where I grow my own food, even own olive oil with 35 olive trees. I absolutely share your passion. When we were sailing the oceans for 3 years and I could not have a garden you were my highlight of the week. Thank you so much for everything you are: authentic, funny, with a love for life and nature.

      When you get moved in to your new home in Greece start a UA-cam channel and do videos from there on olive oil making, and how gardening is done there. All regions of the world are so different in their seasons and and what you can grow

    Love the free canning resource. I am 78 years old and still can jams, fruit and some vegetables. I have just started canning home made bacon and beans. A pressure canner is just not in my budget but I would have one in a heart beat if I could. Both times I've done the bacon and beans I have cooked then did 3.5 hours water bath. I know it isn't acceptable these days but it is all I have! I do keep my finished jars of beans in a spare fridge. We do what we can

      It’s very acceptable to waterbath in Europe, as it’s all we have historically done. In U.K., it’s very hard to get a pressure canner, without exporting one (I think one or two importers are now bringing them over but costs are ridiculous). I know the Amish also waterbath safely. My understanding is the US recommend pressure canning as the safe thing to do because they have not invested in testing water canning efficacy, and when you want to sell expensive canners, why would you?

    I find it delightful that your husband is learning to can.
    I feel the only way to be sustainable is that every one can cook, clean, preserve, garden, and animal husbandry and processing.
    My husband is coming up to speed with the garden and livestock.

    Although I love canning anytime, one of my favorite canning weekends was when my husband helped me can all day and all night. We watched the sunrise from the front porch after finishing our last canner loads. It was wonderful quality time. He really enjoyed learning how to can. He likes not doing it as much as me but he will do it if I need him. That’s a wonderful husband!

    I add about an inch of water under the insert in my electric roaster, and this also keeps any food you're cooking from scortching. I also save any old socks that get holes in the toes. I wash them and slide jars into each one to give protection in the freezer. I also do this when we go camping, so jars can be next to each other and not break.
    Great content!! Dan is right at home in the kitchen!!

      I saw a comment on another channel from someone who worked at the roaster factory and they said it is not recommended to put water under the liner. The person was pretty adamant about it. I’m not sure why, maybe the steam could get in between the layers of metal and mess up the element?

    No matter how much I have to do I find canning is such good therapy. Just because I am worn out afterwards it doesn't matter. What a problem to have in this crazy world. My husband was a mechanic also (like Dan) until he got hurt. You two talk like we do when he helps me with something, it's either a car part or it's not! So funny!!!

    I have been canning for I don’t know how long , I miss the old lids from years ago, never had fail sealed. I can upwards 1000 a year and inevitably I have a few fails, Last year I has fails with Food for jars , I contacted just for educational and they were so helpful and sent me so many new lids . I love my pressure canner . New Gas stove last year and love it .

    Thank you for providing the canning book to us!! I am a fairly new and nervous canner.....and having all the information in one place, given by someone who knows what they are doing (you!) will help greatly with my confidence. I also bought a steam canner (boy it saves a ton of time!) based on your channel....who knew there was an alternative to waiting, what seemed like forever, for water to boil in those big pots! New pressure canner user too - thanks to you! 😊I absolutely love how you and Dan work so well together and I am so excited for you both and all the new adventures on the farm!!

    My aunts in Virginia did lots of canning; I was fortunate to be part of the process each Summer. I 💚 canned green beans, beef, sausage & tomatoes. I 💜 my heritage!

    My Mom did some canning when I was a kid. I am in my 60's and I never have and never will do it myself. HOWEVER, I found your tutorial today very enjoyable, educational, and entertaining. You are so knowledgeable and genuine and a pleasure to watch - whatever the topic. Dan too!

    I rarely involved my husband in freezing/canning - we both participated in the family work as kids. However, we did involve our kids, as that's how they learned 'how' as well as appreciated the foods throughout the years(s).

    I moved 6 years ago and went from a natural gas stove to a propane stove. It is a little more difficult to regulate temperature but not a lot. I think each set up is different and it is just about learning your individual stove. Don’t let it discourage anyone from canning.

    Extreme temperature changes can cause jars to burst.
    When I was a youngun I got a huge shard of glass embedded in my leg from a jar bursting after being removed from the canner into a really cool house.

    My daughter is getting my canning bug, I hope to be able to find her an AA Canner. She also wants a dehydrator , their home has Peach and Cherry trees on it . She canned peaches for the first time last year . I did 15 quarts of pitted Cherries last year and will do 2x as much as this year .

    I put a cup of water in each jar first and then put the meat in, which has helped eliminate the air bubbles

      I do the same, just a small amountb of liquid in the bottom before putting in the product really helps decrease bubbles.

      Broth or H2O, 1". Works both pt & qt, and with meat prevents that 'scorch' mark which can be hard to scrub.

    I love my ForJars canner!! Hubby got me one for Christmas! I can use it on my glass-top stove inside the house. My canning kitchen is outside. Now I can have pressure canners going in both places at the same time!!

    This is so timely...I've really felt compelled in the last month to start canning meats and bone broths as well as the veggies I grow. (Which isn't a lot, but canning meat or vegetables found on sale is a very smart preparation--in more ways than one!--that many of us can do.) Thank you for the guide!!

    Thanks Chelsea! Dan is a great student and he listens! Could I make a suggestion? Move the mixer out of the way when you're doing a project like this. It'll give you more work space and also not get splattered next to the canners. Can't wait for the next one!

    So happy about the canning guide- this is our first year canning (we usually freeze all our garden produce- which is about 1/4 acre- even though we have a huge chest freezer(like the ones you have on your porch) we also have a 3 one that are little smaller- my grands want to learn to can- so we will be following your guide and also the ball books- wish us luck
