Before you return the damaged freeze dryer you should ask if you can purchase the trays that came with it. Nice to have an extra set to prefreeze stuff while your freeze dryer is running. It would save on shipping charges if you decided you wanted a second set of trays in the future.

That is sweet of you to create an emergency preparedness food kit for your older children. I'll bet they will be so happy to have it.
I did the same for my older son, he likes to camp as well so I bought a Rubbermaid tote with latches on it and put everything from freeze dried eggs to freeze dried stew in there. This way he has a preparedness kit as well as some thing to use when camping. I also included a gallon of water.😀

Good job! First time I have seen a pastry dough recipe that resembles what I have used for over 30 years - except that I sprinkle vinegar over lard, baking powder and flour (5 c) , then to one whisked egg, I add milk to make 1 cup. pour over and mix with fork and then I knead the dough for a few seconds just to form ball and use up flour. I use hands to crumble lard. I never refrigerate it. Always flaky. Good video!
I got a freeze dryer for Christmas but my 95 y/o Aunt fell ill the 19th of December and I have moved in with here to be her caretaker until she is better. I can not wait to use mine!
I have very picky eaters, if there are any chunky vegetables they wont eat it. I freeze dry all my veggies that I love to cook with and then i powder the veggies and it so easy to hide them in what i am cooking. Last week I made chicken noodle soup and hid zucchini in it and they didn't even know
If you keep a small bowl of water to dip your fingers into, you'll find it much easier to stretch and pull your sourdough. It won't stick to your fingers. :)
Freeze dried eggs are great. Try some out. They make really good scramble eggs and great added in to recipes. This is fantastic for the winter when the fresh eggs become less plentiful. 1 tablespoon of whole powdered eggs with 3 tablespoons of water equal 1 eggs.

I've got sliced bananas in my freezer dryer right now. We were given 3 cases of really ripe bananas last week so I have a couple more loads to do when this one is done.

Evening from Scotland U.K. We buy free range eggs and we cant get the ones we would normally buy.. these free range eggs hubby bought from ASDA were different sizes and they are £2; 00 per half dozen. Thank you for sharing your recipes I and my husband are just like you make from scratch and it is a little bit o this herb etc...
Eggs in Wales UK are £2.50 per 12

We love our freeze dryer!! I'm so happy that you have one. Following to see all that you do with it.
You might try converting your recipes by taking the new recipe ( the smaller one) and dividing that amount by the large recipe amount (ex. 8 servings divided by 12 servings). The number you get (.667) is your “conversion factor.” You multiply that number by each ingredient to get your new amounts. So if you have 1/2 cup of flour in the larger (old) recipe you multiply by .667 to get .334 or 1/3 cup. You might already know all this lol, but if not then I thought it could make it easier for you. She probably knew but I did not. I sm a widow now living in Costa Rica. North American food is what I must cook. Local food is 3 or 4 starches with each meal plus rice. I must eat very little starch to control my diabetes with my diet. So I am constantly looking for diabetic friendly meals made from scratch. All the sugar free ingredients available in the US are not available here. They are not imported into Costa Rica. Cane sugar is raised here and sold all over the world. Local diets are loaded with it as well.

I so badly want to get a freeze dryer! I can see so many possibilities for it, and see how it would pay for itself very quickly! I'm hoping in the next couple years I can afford to get one. I've used their scientific model before at my previous job for preserving bacterial cultures. Really fantastic technology!

Remember when freeze drying fruits with skins, you need to poke holes in every one to get them to dry correctly. And dark sweet cherries are so sweet, they don't freeze dry well

On eggs. I missed the memo on the egg shortage and was surprised to see 11.99us, on sale, for 18 non organic eggs and shelves almost bare. I made a trek to costco for 5 doz organic at 3.79/doz.
Glad to see the small meal prep. My kiddos are accelerating through the teen years. They were 11 just moments ago. Now they're busy and meals are smaller, and quieter :(

Just now found your videos. Eggs in AZ are $4.62 for 18 count. Price has gone down but Eggs are rather small.
Eggs are almost $8 for18 here in NY. Sometimes the store is low on eggs. I save my eggshells for the garden.

We love our freeze dryer from Harvest right. Have had our for almost a year and a half. Best tip I can give at this time that I love is to freeze dry tomatoes and save the skins to freeze dy then I use it to make paste when needed. Also all fresh fruits. Enjoy

Welcome to the Freeze-Drying world. I just did a bunch of sliced strawberries and raspberries and they are absolutely amazing as a snack, on yogurt or cereal. Freeze dried squash re-constitutes very well, as do mashed potatoes :) You are really going to enjoy adding the freeze dryer to your food preserving methods. I know I have :) Just wait until you try freeze dried herbs (so much better than the ones I dehydrated...in my opinion)!

Oh I so agree on the freeze dried herbs. I just got started running some herbs since we finally ran out of fruit. And the cilantro has been amazing. I separate the stems from the leaves so I can have crushed leaves, and powdered stems for different uses. So great. Also did celery powder with a bunch of spindly celery from my winter Aerogarden grow. Kind of a fail but also a win.
What is the difference between freeze drying and dehydrating? I’m so curious about this!

I'm not surprised the biscuits turned out, the baking soda would have reacted with the vinegar to cause a rise. I believe baking powder is simply baking soda mixed with tartaric acid or cream of tartar. I've mixed that together in a pinch (ie at someone's house). That also looked like the tenderflake pie crust recipe. I make that all the time. So good. I use it for meat pies (not tourtiere). I just got my onion seeds started today, it was so nice to get my hands in dirt even though I have been gardening all winter in Aerogardens. Can't wait to see what you do with the freeze dryer. I need to get into more meal prep using it. Would make summer meals a little easier without heating up the house.

you cant freeze dry high sugars like syrup. 1/2 and 1/2 and whole milk are fine. Enjoy, I love my freeze drier

So excited for your new adventure with the freeze dryer! It is really a game changer . I freeze dry a lot to save the freezer space. For short term storage (2-3 years) I prefer using mason jars as I can see what’s inside😆.
I can never stock up enough freeze dried strawberries or peaches.... our kids and the grandkids always ask for those to be shipped to them.
My good friend raises sheep for milk because her husband can't do cow's milk either. She says they are easier to keep then goats.
Eggs are $5 a dozen at the Farmer’s Market but we get a $1 discount because we also vend my skincare products. Vendors give vendors discounts. This is my 10th year of my business. I make about 100 different products.

I have purchased a fair amount of freeze dried foods for emergency supply. If my family was larger I would surely have one. One of the things I heard was dehydrated carrots retain their color better than freeze dried.
Eggs went down to $4.04 from $4.99. Birmingham Al area. ( we live outside of Bham really small town). Aldi grocery

oh, wow those biscuits look so yummy! Unfortunately, I developed gluten sensitivity with Lyme disease, so I can't have our genetically screwed up American wheat anymore. But I can make sourdough with Einkorn which I love! I will have to see if I can find a way to make biscuits with it.

A dozen eggs in Ontario ranges from $6 to $8 unless on sale or purchased in bulk.
$3.69 doz for generic large white eggs.....$7.69 doz for organic free range large brown eggs....Southwestern Ontario (lots of eggs, no shortages here)
Eggs here in Oklahoma are around $7 for 18 eggs.
My freeze dryer arrives tomorrow!! I sure hope it works : )
