Just made this for my family. Holy moly it's so good! For the salt factor I used salt and Worcestershire sauce and for the onion I used half of a large red onion. For cheese we had a vegan shredded cheese sitting around, adding that to the pot before putting in the pasta. This will definitely become a regular meal.
I literally just made this out of a frozen bag of cauliflower and broccoli. I can't believe how well it turned out. I used Plenty of garlic, olive oil, even added two smoked sausages I sauteed alone with cayenne and paprika. Channeled my inner Carla. But I used ditalini instead. Lol
I know in the past Carla has said she was a gm at the original Shake Shack. I feel like she'd be one of those great bosses where if you came in on time and worked hard, she'd have your back 100% and make sure you had opportunities to grow in the company.

This dish was AMAZING. I had no shame in taking a spoon to the nearly empty Dutch oven and scraping out every last bit of that delicious cauliflower sauce! It’s unbelievable how the veg transforms after braising like that. Cannot wait to make this for everyone I know! Thanks, Carla!

Great video, great hassle-free recipe. Love the "spin it" tips: I used broccoli, a box grater, worcester, red onion, kashmiri chilli - and it turned out very tasty. A welcome change from the usual tomato- or cream-based sauces, esp for those who actually like vegetables as opposed to just putting up with them. Oh and Cosmo is such a charmer already.

I’ve been making Allison Ronan’s Creamy Cauliflower Pasta for quite some time now and I’m glad to have another version in the rotation. Funny you mentioned the garlic crumbs because the cooked down romanesco looked like a sautéed fresh breadcrumb and I was already deciding which bread to use to make some as a topping. Right now the choices are Asiago bread or Rosemary olive oil. Maybe both! Congrats on NYT bestseller status!
I've just made it replacing anchovies for canned sardines (more accessible here in Brazil) and adding capers as you suggested. I'm amazed at how delicious cauliflower mush can be, genius recipe!

for my plant-based crew, i used miso paste instead of anchovies and nutritional yeast instead of parm and it was exCEPtional
