Fried Grain Bowl with Bacon, Mushrooms, & Kimchi

- A quick and super easy dinner for 2! Making a batch of grains on the weekend is pretty much the only type of meal prep I've ever subscribed to. To make this vegetarian, omit the bacon and cook the mushrooms in two to three tablespoons olive oil to compensate for the bacon drippings. Mushrooms are porous and thirsty, and they won’t sear and soften without enough fat in the pan.

I make my own white kimchi, and the juice is literal magic. It can be served with everything. I love it on tacos. Also, when you said, "I'm gonna put an egg on it." I blurted out, YES! Startling the dog, but not the cat, who is unmoved by excited outbursts.
I’ve liked adding some sugar to leftover kimchi juice used to make a glaze for fried spam

Thank you for leaving in the broken egg. I can’t tell you how many fried eggs I’ve cooked in my life and there’s always that ONE time I break an egg out of nowhere and am like “can I even cook” 😆😆

What She meant is that every cured pork product is fine, whatever you have in the fridge is ok (-also leftovers from a possible previous recipe you’ve done)

Old farro in the cupboard, old sad mushrooms in the fridge… the quality will not equal Carla’s, but I’m goin’ for it anyway 🤷♀️ Craggy, high heat roasted tofu will make it ok.

Love this recipe, but this is kimchi fried rice with barley subbed out. I understand the branding of your channel and love your recipes. We don't need to americanfy a food name that already exists... Call it what it is! As someone who makes this often, adding a tad bit of butter is amazing!

I know I could remove the bacon, as I'm sure vegan and vegetarian viewers would figure it out as well. I was more acting for a non-pork alternative that she would suggest.

In general, cooking shows and recipes often neglect the fact that not all people eat pork and at best just say to omit it. I am an experienced enough cook to know how to adapt recipes to fit my dietary restrictions but many people struggle with it and it would be nice, especially if the recipe is already providing alternatives (and a long list of pork based ones, at that) to also provide maybe a suggestion for a non-pork one too.
