i made this and it turned out so good! I can say - restaurant quality ! :) i did change a few things: i used homemade pesto (basil, garlic, pine nuts, salt, black pepper, (optional)chili flakes) in place of a store bought one. I used baby bella mushrooms, carrots, fresh spinach, zucchini, bell peppers and it turned out great. the pesto really makes a difference! the ricotta cheese i used said fat free but i am skeptic.

Outstanding!!! I followed your instructions to the letter...just added frozen peas and carrots, and left out mushrooms. I also added a few more spices to the veggies. All the layers were so tasty!! The no bake noodles were perfectly moist. This was so good that not only my pescatarian daughter loved it, but my meat-eating family members loved it too! Thanks for another delicious meal!

A little tip for Laura and everyone else, when you're done making the Bechamel and you let it rest and cool, you wanna cover it in contact with Plastic wrap or cling film. This way, you'll prevent it from creating undesired crusts in the surface.
I made this recipe, but substituted firm tofu for the ricotta and added some italian seasoning to it and it was soo delicious. Everybody loved the sauce!
I've also created my own vegetarian lasagne with a filling made of creamy spinach, roasted peppers, carrots and sweetcorn as a replacement for the meat and it is delicious. I'm a non-veg but really wanted to see if I could come up with a nutritious and yummy vegetarian version and challenged my self and it seems I succeeded as my family were impressed!!!

Two great ideas from this video! I never thought to use asparagus in veggie lasagna, and I never thought to add pesto to the bechamel! Really just walk around the produce section (or farmers market in summer) and grab whatever veggies look good and/or are on sale! I agree about the lack of fresh basil. Here in Wisconsin it's pretty much grow your own in the house or you're stuck with those tiny bits of any fresh herbs from the grocery store. Thanks, Laura!!

I think I would add some fresh grape/cherry tomato/basil/shallot and roasted garlic sweet red sauce to this dish. Also, butternut squash and a diced eggplant to this dish. Take out the peas and asparagus I also like a touch of nutmeg and cinnamon as well to the bechamel sauce. Add a variety of mushrooms and any other meaty root winter veggies that you like.

The only differences are; the noodles, Most of my family, including myself does not like the no cook noodles at all and for the top I put bread crumbs, melted butter & sometimes finely crushed p.nuts. Gives it a bit of texture & flavor.. Enjoy your video's, Thank you! By the way, I used to feel the same way about basil, now I grow it inside & out, It's really not difficult or time consumings.
A tip to fix the basil problem: You can buy basil seeds, so you can grow you're own. Way cheaper and no chemicals! Like this, you will always have basil (or other herbs) on hand :)

You can still do it, you just have to adjust a bit. All goat milk products are naturally lactose free, so you can use a mild goat cheese instead of provolone (just make sure they are 100% goat and not mixed). There are also a lot of lactose free products one can buy in almost every supermarket if you don't want to overpower your dish with the specific "goat taste". Sure it will taste a bit different, but cooking is all about experimenting and finding what you like.

I forgot to update how it came out. It was very good. The sauce seemed to curdle (? not sure if that's the right way to describe it) a little during cooking, but that seemed to only effect texture (it wasn't smooth/creamy, but as tad gritty texture?), but the flavor was fine. I think it would have been really bomb if I hadn't had the mishap with the sauce. Can you do a video on how to save a sauce if something doesn't go right? Like, if it turns out to be too thin or cheese won't melt?
If you're making this for kids who don't like seeing or eating whole bits and chunks of vegetables, just blitz all the veges in a blender or food processor. It makes them a part of the sauce almost and is so much easier for kids to stomach who are picky eaters and you don't lose any of the flavor.
TheLivingDeadOne the majority of kids are too young and/or naive to fully understand that concept so there's really not much point. I'm surprised people still think that works.

You can sift it and what may also help is to lower the flame under your pan a little bit. And of course keep stirring very well.
