    Looks delicious! Salting the eggplant removes the water, but also the bitterness. Best to lay them on paper towel while salting so the towels absorb the bitter water.

    By the way, the main reason (as I have been told) for salting the eggplant is so to remove the bitter after taste that you can get with cooked eggplant. Also, after salting, do not leave it lying flat, by place it in a colander place over a bowl to catch the liquid, and with this amount of eggplant the amount of liquid that is drained from the eggplant can be quite a lot.

      I salt the eggplant too then rinse it off and pat dry before proceeding.

      @@larrygrimes824 why would you rinse of the salt with water, the sole purpose of salting is removing the water from it, ure just fucking it up again lol 🤣.

      @@timo8032 The salt pulls the bitterness out of the egg plant and it accumulates on the surface. I rinse it off with water then pat it dry before using. You are welcome to prepare this recipe any way you chose, this is just the process I’ve had 100% success with. By the way, you choice of language in your inappropriate for a cooking video comment.

    I tried it yesterday and it. was. AMAZING! I honestly did not expect it to be so good. And your pasta sauce recipe with carrots is a game changer! I couldn’t stop eating it right out of the pan! Everyone loved it! Finally, vegetarian comfort food!

    I made your eggplant lasagna this evening for my adult son. He loved it! So glad I found your channel and website. I love Mediterranean food, whether Greek, Italian, or Middle-Eastern. To me, the Mediterranean foods are the most delicious. I'm half Lebanese, and I guess it's just in my genes!

    I just made something like this just earlier this week before watching this vid. My oven is down so. Steamed the eggplant (3)., red bell (3) peppers & 10 oz. portabella mushrooms. No spinach. I used the no boil lasagna noodles & cooked it in a slow cooker on high for 1.5hrs. Only used half the peppers. Really good. Thanks for the vid. I like the spinach Idea.

    I’m gluten intolerant and I adore this recipe. I also love your sauce. I too use grated carrots and lots of good grade olive oil.

      I don't think gluten is good for anyone, it's just some peoples bodies rebel more than others. I think gluten is responsible for a lot of obesity. bread is just a cheap filler.

    the liquid that comes out of the eggplant after you salt it is bitter--try tasting it--and by drawing it out and dabbing it off, it makes the eggplant have less bitter flavors. Just fyi.

      That is the real reason you salt the eggplant and let it stand for 15-20 mins. or until it "sweats". To get the bitterness out.

      Some "connoisseurs" claim it's no longer necessary to salt and let eggplant sweat because new breeds of the plant are no longer bitter. I don't bet on that and always salt it, let sweat and rinse off.

    This turned out amazing, my friends loved it! I left out the egg, added extra ricotta. I also used fresh spinach. Next time I'll use frozen because I could of used more in there. I added some extra cheese on top, asiago,because I love it! The demonstration and drawing the moisture out of the eggplant has helped me become a better cook! I appreciate it, awesome recipe!!😊

    It is parmigiana but less work and calories since you’re not breading and frying the eggplant. Lovely recipe! 😊

    Omg this lasagna was so good I had to share it with my mother and sister. I followed the recipe to the T! The only thing I did different was broil it for 5 minutes for that crispy cheese crust I love. Very delicious!

      what temp,she doesn't say, except at beginning she puts raw eggplant in oven high400 for 20 min.? so what temp did you cook the finished lasagna?

    Awesome job! In some schools of thought, they call it eggplant Parmesan. You added Ricotta and not fried but it looked unbelievable.
    My brother taught me to use full-fat, small-curd cottage cheese because sometimes Ricotta has the taste and texture of drywall compound or plaster.

    Made this. Actually combined it with the minced beef recipe. Marinara sauce, aubergine layer, cheese and greens, then bolognaise, aubergines, green layer, marinara sauce, grated cheese. Superlicious!👍👌

    Salt it when raw and let it sit for 20 min or more and get ALL the salt off of it or itll be oversalted. Looks wonderful. Gonna try this weekend

    I made it exactly to the recipe, but added Fennel Pollen. It's my favorite spice for just about anything that is tomato-y, and earthy vegetables.

    Super recipe - I loved the use of eggplant as a replacement to the lasagne sheets. Makes it much lighter. Interesting how you used spinach in the cheese filling adding more nutrition. I guess I could use bechamel sauce instead of ricotta cheese. Great channel 👍

    My momma taught me to salt the 🍆 not only because it releases moisture but also because it takes away the bitterness of the veggie. ☺️❤️ (I wouldn’t skip it;). Dish looks delicious and can’t wait to try!!

    This is the best eggplant 🍆 lasagna everyone just loved this i will make this again many times over .Its a award winning recipe I have changed it up abit and made this with Greek Feta cheese and its was the best a must to try it with Feta cheese then the other cheese 😋

    I bumped in to this channel and loving it just by watching. Ordered a few products from the site. Unfortunately the Olive oils sold out. Can’t wait to make all those salads. It’s a big dilemma to me everyday what to eat, I am hoping these salads should help me😊. I don’t like regular cooking
