@@nadiahassan6228 You can make a side of stewed beans-I actually have a cook-with-me where I make this rice and beans on the side! Other items that pair well are-salads, potato or macaroni salad, avocado slices, etc
@@mariscookingpr Pulao in South Asia uses Masala, that's the only difference, one common spice being cumin / jeera with Pollo, the rest are different LoL

She used tocino as a base and I remember her cooking the the sofrito, tomato paste, cilantro etc in a small frying pan then added it to the chicken being cooked separately. The other thing was her beans!! With calabasa!! 🥰🙏

Hi! I always recommend to use a combination of both the red (tomato based) sofrito and green (recaito) sofrito! If you can find the frozen Goya sofrito, then even better. 😊 I do have 2 sofrito videos on my channel in case you’re interested. A traditional version and a more practical one. 🙏🏽

I used to live at his house in the summer. His mother is an angel. But back to the story. The bone creeped me out. Until I took my fist bite! Then I was like omg I want this everyday. but I just talked to my buddy Juan. I told him about your recipe. He's like yeh Mike that's the way my mom makes it. That's the same dish. I'm like yep I'm making it. You added stuff she didn't. Money and time of course. She was single raising two kids. But omg that dish is so good I never ever forgot it. I'm sooo happy I can make it now! He's like I'll ask my mom for her way to make it. She also had yellow rice that was also a banger.

I use Sazón with “culantro y achiote” (coriander and annatto)! You can use any brand.

Use chicken thighs juicy flavorful meat.Without all the tendons.
Great idea! A lot of people also use a whole, cut up chicken but keep the bone in and they simply debone as they eat. Whatever your preference!
