Puerto Rican Arroz Con Gandules | Perfect every time | Mari's Cooking

  • Let’s make the national dish of Puerto Rico - arroz con gandules!
    Ingredients:
    •2 cups medium or long grain rice (washed n rinsed well)
    •2-3 tbsps oil
    •2 oz cooking ham
    •1 tbsp pimientos
    •1tbsp spanish olives
    •2oz sofrito (my recipe linked below!)
    •1/4 cup tomato sauce
    •1 packet sazón
    •1 packet pork sazón (optional)
    •1 bay leaf
    •1tsp garlic powder
    •1/2 tsp black pepper
    •1/2tsp - 1 tsp salt
    •1 can gandules (pois congo/gungo peas/pigeon peas)
    • about 1.5 cups water (maybe a bit less) + the liquid from the can of gandules

      @@jim8572 Hi Jim! No, the rice was raw - it was Just rinsed with water. Gandules verdes are perfect! ☺️

    I'm puerto rican and have followed many different recipes for arroz con gandules however this by far has been the best, made it for Christmas and my family smashed it

    Hi. I'm from Connecticut but live in Arizona. A Puerto Rican woman used to babysit me until I was around 7 years old. She had 3 daughters that I would play with. I made multiple attempts to locate one of them since I've been in Arizona with no luck. She made the most amazing chicken and rice. No one has been able to share a recipe even remotely close. She actually sat me on her counter and I didn't move. I watched her every step. I honestly think you duplicated what she did. I'm excited about trying your recipe. She even made me the same oatmeal that you made. I'm so excited to try your recipes. Thank you so much.

      Yes!! Same!! My mom’s Mexican but a PR lady babysat me, she was my second mom, mami ♥️
      She passed away and I miss her and her cooking SO much! This food is nostalgia. I feel like you’re the only one that has replicated these recipes and I just can’t wait to make these for my baby girl now, in honor of my PR momma. I even named my baby after her ♥️

    My neighbors growing up were Puerto Rican. My home away from home. And Mrs Acevedo (RIP🌹) was THE BEST COOK, EVER.! I loved her azzro yellow rice & her beautiful roast pork shoulders!🤤
    Watching U make that brought me back to Cypress St 1973.
    yea, I'm crying. Oh oh oh... can't 4get her Pastellia..!!!! Christmas isn't the same without some!

    This is the best video. Straight to the point and not too long.
    I love how Chicken Buillon was not included. Many of the other Arroz Con Gandules videos are way to salty. The Sazon, the Pork sazon adds enough salt, no chicken buillon needed.

    My mom wasn’t the best cook growing up and my grandmother was the best cook in the family I use to cry when she left cause I would miss her cooking when she passed away when I was 12 I didn’t get to learn any recipes but thanks to you I learned a lot and remembered how she did things and I’m so close to recreating her recipes that it’s crazy I’m so grateful for you being my guide through my cooking journey I can’t say things enough but godbless you and thank you for these videos

      😊 if your rice comes out alittle hard cover it with wax paper or foil put the lid back on and keep on low it will help keep moisture in

    So my girlfriend taught me to make this years ago, but not with fried meat. I used ham and I have to tell you it took this dish to the upper tier level! Thank you it’s so delish. I added diced fresh garlic after I fried the diced ham. Bomb. Thank you 😊

    The tastiest part of the rice and peas found at the bottom of the pot!!! Man do I miss living in Connecticut!!! So many varieties of Puerto rican dishes I can’t find anywhere here in the south! Puerto rican cuisine reminds me how we prepare soul food with soul and a whole lot of love looks delicious

    I must admit I follow another youtubers ingredient measurements and there are a couple other ingredients. However, when I followed his cook times/method my rice ALWAYS had too many hard/raw grains. I have followed your cooking methods three times and the rice has come out PERFECT!!! Thank you! I felt so embarrassed being Puerto Rican and not being able to cook my favorite puerto rican dish.

    I do this recipe once a week now that I know how to do it. Being non Hispanic American I have always called it rice and beans haha when I was little my Puerto Rican neighbor who I referred to as grandma (I was 2 and loved her at first sight, was never told any different lol) well she never corrected us on the rice and beans. So I’m very happy to be calling it for what it is now, and to know for myself how to make it!     Thank you so much for this video. My grandmother (95) recently passed, and while my entire family is Puerto Rican, I live on the other side of the country from them, and can't often visit. since her passing, I wanted to get back in touch with my heritage, and while I may not speak much spanish, and my skin may be very fair, my family has always maintained a close tie to our food culture. While I was down for the funeral, my family taught me how they make sofrito, and Arroz Con Gandules was my Grandma's favorite dish. And frankly, a lot of the "authentic" recipes I've found online are just a mainland white chef parroting other white chefs say our food is like, and it often feels like they miss the point.
    Im going to try this recipe closer towards Christmas this year, and see how it goes! Thank you, so much for this clear, concise and well made step-by-step video. It means a ton.

    Thank you!!! Finally! I am half PR ( from my dad's side ) & love the food!!! I have always wanted to know how to make it, but so many people don't want to share it! Lol I'm a newbie to your channel but like how simple your videos break down how to make your recipes, and your alternates you include! I also took a moment and watched your Q & A video that you added where you been doing this for 3 or so years before adding your face to it & think it should be all about the food, but you also get a stronger connection with your subscribers as well with let's just say a meet & greet! I'm looking forward to following your recipes, & making and trying them out & really miss the aromas it gives in the kitchen while cooking and the food!!!!     Finally, measurements! Every time I've ever asked someone they've always laughed or just cupped their hands.... I've had to teach myself through trial and error, and even figured out a way in my pressure pot! BUT!!!!! It's either someone the rice is a little under done or it's too mushy, but when I reheat it the next day it's perfect! I'm going to try this RIGHT NOW! I can't believe I haven't seen this sooner!

    Looks delicious. Haven't had Puerto RIcan rice since I moved to L.A. from Chicago...my next door neighbors always made it when I was a kid. I was always at their house lol...they would tell my parents I was adopted lol, can't wait to make this.

    Love your Sancocho recipe. Easy to make and so good. Expanding my cooking repertoire sadly, as a Puerto Rican in the US, our traditional recipes get lost. Thank you for the help. Newly divorced and my kids can’t stop coming over for my dinners. Enjoying father time with them.

    I used your recipe yesterday and it was perfect made some adjustments, because I don't use SAZON. Used 1 TBspn Adobo with 1/2 tspn of Achiote Molido, mixed together with garlic powder and black pepper. I used no salt because I have to watch. I think I added 1 tspn of onion powder too. It was perfect for my taste buds and my sons loved it.

    This is AMAZING - I'm Puerto Rican but am only now learning how to cook, and I've had a lot of arroz con gandules and this is one of the better ones. Rich, filling, so much flavor, no arroz amogollao, just beautiful. 😁🇵🇷

    Interesting to see your approach. My mother always used chorizo for the meat and would brown the rice in a skillet with olive oil and minced garlic before adding to the mixture. She did not use white rice, I forget the type she used; but it was always delicious and sat on the stove so whenever we came in late at night we could heat up some rice with gandules.

    I've seen so many videos related to making arroz con gandules. So far, the process you use is the closest to mine. The ingredients vary a bit, but that's what makes for individuality. The important thing is that this dish is purely Puertorriqueño. Good job. 🎉

    Yo soy Boricua de Adjuntas, y me gusto esta receta la cual la practique pero sin pimienta y bay leaf, yo no me acuedo haber comido arroz con gandules que fuese picante. Algo que hice fue que el arroz lo mezcle con un poco de aceite de Oliva, y despues lo anadi a toda esa mezcla, y asi lo cocine y quedo BUENISIMO!!!! Gracias por darme tan buena receta y proceso!!!

    I just made this recipe on the spur of the moment. I didn't have ham so I used bacon. I also didn't have the 2nd packet of sazon, but we have to watch our salt anyway. It came out pretty great! Thank you Mari.
