- Arroz con Pollo always brings back sweet memories, it is a dish my mom prepared often. I remember the sound of the molcajete grinding fresh spices and the sound of the rolling pin as she made delicious flour tortillas, they go so well together. I like to use a combination of chicken legs and chicken thighs, and i always remove the skin off the thighs because even though i love the flavor the grease gives this dish i just don't want it very greasy. Whether you side it with traditional beans or just enjoy it alone this dish will be a hit in your home. I hope you give it a try. ❤️

2 Tbsp Canola oil
4 Chicken Legs (skin on)
3 Chicken Thighs (skin Off)
1 1/2 C. Rice (rinsed)
3 C. Water
1/4 green Bell Pepper (strips)
1/4 chopped small Onion
2 Chopped green Onions
1 medium Carrot (small dice)
1 finely chopped Celery Rib
1 small/medium diced potato (rinsed well)
1 C. diced Tomatoes
1 Can tomato Sauce
1 Tbsp Chicken Bouillon
1 Serrano Pepper (optional)
Small bunch Chopped Cilantro

And all the years I have been watching her I have never found a bad recipe and I’m talking about years not a month or two. I’ve been watching her every since I found her probably four years ago. There is an episode of I Love Lucy where Lucy finds out that Ricky’s favorite dish is arroz con pollo. Of course, she and Ethyl decide to make it one evening for Ricky’s birthday. They are clueless about making rice and Lucy asks Ethyl, “You figure about three cups (uncooked) per person?” Ethyl agrees that sounds right. They put it in a smallish saucepan, and of course it boils over and rice just keeps spilling over onto the stove and onto the floor. It’s ridiculous, but it’s fun.

My mother used to make this (with some slight differences). Of all of her dishes, this was always my favorite. Although I was present on many occasions, I never thought to write down the recipe. Because she passed before my step-father, her recipe box was lost to me. I never thought I would have the chance to taste this dish again. Until now. I can never thank you enough for sharing this.

My mom makes thus too with some differences. I believe she cooks to separate the chicken from the rice but it still looks so delicious
Tina, I feel for that recipe box loss, my stepdad did that too. Mom loved to cook, shared the passion with me as a kid. She started a project, spent months entering them on her "new" computer back in early 2K, proudly telling me months later, she threw the paper ones away because she had her computer for me. I was devastated a few months after she passed, when he said he got rid of the "stupid" computer, he was only playing solitaire on it. He then was devastated too, when I just sat down looked at him, what about her recipes? He never gave it a thought and was so sad he took them from me to prepare for all of us again. I hope your stepdad just had a never gave it a thought moment. I know how mangy my old recipe box looks, but since Mom, my whole family knows better than to toss anything accumulated with love like that.
@@krisa8649 What happened was that my mother died first, then my step-brother talked his dad into signing a power of attorney. When my step-dad died just over a year later, everything went to my step-brother.
I got a phone call a year later from his wife telling me that she had come across a box of memorabilia that had a lot of things that my mother had saved through the years of my report cards, drawings, etc. and would I like them?
My step-brother and I have never gotten along and the same was between me and his wife. I reminded her that my mother was in her 40's when she met my step-dad and that there were probably a lot of her possessions that I would like to have other than that box. She ignored that comment and asked for my address so that she could send it.
Before she could, my son talked to her about maybe getting some things of his that was also in the house at the time of my step-dad's passing. There was also bad blood between them, so that didn't go well. After that, she even denied sending me that box.
I got absolutely nothing from them. Everything my mother had; her jewelry, things she had bought over her 78years, gifts I had given her, gifts my son had given to her, all of those things... just gone.
Of all of the things they took, her recipe box was the loss I felt the most. It's silly how when it comes right down to it, it's the little things that mean the most to us.
I love your channel Rachel. At 66 years I really crave these types of dishes. I'm a busy grandpa and I love a quick snack of tortillas, medium salsa and Queso. Fast and satisfying!

Arroz con pollo was my favorite dish growing up. On my mom's day off, if we didnt go shopping and go out to eat. Arroz con pollo with charro beans was my comfort food. Oh, the memories fill my heart with joy.❤❤❤

En mi país le decimos Pollo con Arroz, aunque tiene más arroz que pollo, el pollo complementa al arroz. Crecí disfrutando del arroz con pollo de mi madre y de mi abuela, ambos muy diferentes. Mi mamá hacía uno regular, con la salsa y condimentos y no le gusta el ajo. A mi abuelo no le gustaba la comida condimentada pero sí el ajo. Así es que mi abuela condimentaba su arroz con pollo sólo con sal, pimienta, ajo, orégano y perejil bien picaditos. Si bien todo era blanco, era delicioso.
Todos tenemos diferentes maneras de hacer Arroz con Pollo, y eso es lo bonito, a nosotros nos encanta el ajo. Te agradesco mucho tu comentario. ❤
