    Broiling is a great method for getting grill-like results in the kitchen. Both grilling and broiling are fast and easy, and both use direct, high heat to brown and cook food. Broiling is like grilling, then, only turned on its head. In this video you'll learn how to broil in four easy steps. You'll get great tips for preparing your meat in advance, for trimming fat to avoid flare-ups, and for preventing your meat from curling up under the broiler. You'll discover how to keep lean chicken and fish moist under the intense heat of the broiler. You'll also learn how to prep the broiling pan and get advice for making cleanup time fast and easy. You'll also see a great trick for broiling meat without a broiler pan. We'll show you how close to the heat source your food should be and where to set your cooking rack. You'll learn which foods cook best at close range and which need a few extra inches distance from the heat source. You'll find out why it's best to use tongs when turning broiled meat and chicken and a wide spatula for turning broiled fish.     I had no idea what broiling was, i thought when you broil something it goes in that little mystery drawer underneath your oven that holds all your pans hahaha

      I was confused about where the broiler is too and had to research it. Turns out that each oven is different and, to locate yours, you have to look for the red strip that lights up when you turn the broiler on. For most electric ovens, the broiler is at the top of the oven as shown in the video while the drawer is just used to keep food warm or for storage. On gas ovens, however, the broiler may be at the top or it may be the drawer so look for the heat source to find out. Hope that helped!!!

      @@MitchMitch77-77 Thanks for your comment. For a long time I thought every stove had the broiler in the bottom. I grew up with the broiler on the bottom, but we always had old stoves back then (1960's & 70's). As a young bride and then as a Mom (80's & 90's and 2000...that last one was a real surprise, lol), we still had older stoves in our apartments/homes. When we got a newer model many years after moving into our own very first home, I did not know what to do except store pans down there as no heat ever touched that part, lol. So I cooked, never broiled. Now, as a Grandma many times over, my husband has recently gifted me with a (well deserved) fancy stove that has settings for air fryer, convection, roast, bake, bread proofing, dehydrate and broil, as well as griddle burner. I'm going to make up for lost time and use every setting as much as possible. Yeha, I love cooking.

    This was so helpful! I found out a long time ago my oven had a broiler in the bottom, but no one in my cooking-inept family had a clue how to use it, so I delayed trying it. Now I can finally accomplish my dream of "broiling" dinner.

    Hi Nancie, thanks for your question. The difference between the high setting and low setting for broil is 25-50 degrees. Depending on your oven, typically high is the best option.

      The hint is in the term.....'To brown or crisp', the heat is lower.
      Besides, glass can be used if 'Oven Proof Glass' is used.

      Should never use salt seasoned meat directly on alu foil either. The salt will dissolve the alu into the food potentially giving rise to Alzemers / Pakinsons later in life

      you should never use alu pots pans or foil for cooking , there are numerous studies showing alu leach to foods through cooking does cause serious brain disorders , hence we don't make pots that come in contact with food anymore

    Great question! Generally the water is added when you are broiling a fatty piece of meat. The water prevents the fat from catching on fire. If you are broiling something that is more lean and is not likely to produce too many drippings, there is no need to add the water.

    This information was helpful. I wish u would have emphasized keeping the door open to prevent burning. Also, the burning and popping and coming in contact with the element scares me. This is why I don’t using that top rack. I like the 2nd one.

    Thank you Bill. To answer your question, this will depend on your oven and broiler settings. Some manufacturers do suggest leaving the door of the oven slightly open when broiling - we would recommend checking your manual.

      She used the glass dish for the casserole to slightly brown the top which doesn't take long. For meats it takes a little more time. The dish it not designed for that length of time.

    I kept hearing this broiling word being used, and it turns out it's just grilling in the oven...every oven iv'e ever owned has called it the grill setting, guess it's a yank thing?

      No, In my oven when you put on bake their is a concealed burner on the bottom, Set to broil and their is a exposed burner with a flame at the top if you have a Gas oven.

    When broiling should the oven door be open or closed. For and electric I thought slightly open. Also one part of this video used a glass dish, I am not sure if glass should be used under a broiler?

    Thank you for your question. There is no need to keep the oven open while it is is preheating for baking. If you are preheating the broiler, please follow the manufacturing directions of your oven. Some do recommend to keep the door open.

    I assume this might be a UK v USA language thing.
    In the UK when we say grill we generally mean what is described in the video.
    If I am not mistaken the USA meaning of Grill is over direct heat, ie charcoals. What us UK'rs would generally just call BBQ :D

      Some people in the US also call that BBQ, but in places where Barbecue is Serious Business, that's sacrilege. BBQ is "low and slow" cooking, and grilling is over direct heat.

      +Samwise Gangi don't use a fork to turn....then jabs a thermometer into th side of it. might as well used a spigot. Poke it with your finger quickly to see how done it is.

    I just went to school. I am trying to eat healthy (or more so that I have) and have a lot of food to do something with. I can't decide what to try first. bet this makes me feel better too. thanks for the vid, it rocks. I even know what to do with my toaster oven to make it broil now since I didn't know what one piece of it was for. lol the stand you put the meat up on and the container that catches the grease. I have been cooking things in the catch part. lmbo.... omg. I can rebuild an engine though....... I'm humbled.

    Good question. When you are grilling, the heating element is underneath the meat. With broiling, the meat is cooked from the top (where the broiling coil is attached to the stove).

      Maybe in the US the heating equipment for grilling is underneath the meat - this is what we would call roasting. Most ovens in the UK, as far as I'm aware, have the grilling element at the top of the oven, therefore acting in the same way as what you call a broiler.

    You will want to set your oven to the "broil" setting. If you don't have that, usually broil is about 500-550F.

    Broilers are PERFECT for cooking Neapolitan-style pizza dough......... but broilers that run on natural gas (employing a gas rod that shoots flames throughout the entire length of the rod) and are in a drawer compartment UNDER the oven are better............. because right after you broil the pizza's top, you simply place the pizza (still in the pizza pan), directly on top of the (steel?) base of the oven (it comes in DIRECT contact with the flames in the broiler drawer below) to cook the bottom crust of the pizza. The only thing is that you have to rotate the pizza pan (using two long pairs of tongs) under the broiler so that the entire circumference of the crust gets even exposure to the heating element/gas rod.

    Had to look up ‘what is broiling?’ I have lived in uk, South Africa, and now in Australia and it’s always been known in all these parts of the world as GRILLING. Lol trust the USA to have their own name for it.

      We have gas grills in the USA or some use charcoal to cook outside with flames on the bottom during spring, summer & fall . It’s called broiling here when it’s done inside in a oven & when heat is from the top.
      Getting ready to make some thick steaks now in the broiler because it’s very cold and windy at the moment

    When I broil I don't use the broiler rack cuz I like the sauce that the Worcestershire sauce and the BBQ sauce makes. Like teriyaki steak or with A1 sauce

    I live in an apt. and my stove is a "cheap Chinese made" Fridgidare model. I have two Broiling options - LO and HI. I don't know which one is the 160 deg. F one.

    I suspect this might be the case for us Aussies too.... grilling is the heat element above the food and barbequing is the heat under the food.

    what about when you flip the meat? when you do it on a grill, the surface the meat is on is between the heat and the meat, so when you flip it, its going on a hot surface again. but when broiling when you flip, you're putting the cooked surface of the meat onto the surface that just had raw meat on it, and it was insulated from the heat source, has a bunch of the raw meat juices that got broiled out of the meat on it...

    For the rest of the non American population of the planet. Broil/Broiling is the American term for Grill/Grilling. Grilling is a form of cooking that involves dry heat applied to the surface of food, commonly from above or below.
    Aloo'minum is Aluminum.

      HiOn Maiden a grill is an appliance that sits on your porch and uses charcoal, and broiling is a method of cooking in the oven. the heat source comes from above when broiling, and on all sides when baking.

    Thanks.That's a lot of help.It's a basic must know,u know..I had been wanting to know the right thing.did somebody tell u how much I love u guys."All recipes" just rocks.:-) just 1thing more, could u tell ne the timing(I know it would vary for diff. veggies but some idea would be help).also I do it on middle rack(or top rack should be considered).Thanks & let me know:-)

      Thanks for your questions, Asna Ali. Do not cover the meat with foil before broiling. The broiler heat won't be able to cook the meat. And keep the oven door closed. You can open it slightly to make sure the food isn't getting over cooked, but keeping it closed maintains an even temperature inside the oven.

    In UK we call that grilling. Using the the grill/element of the oven to GRILL.

    Wait I'm confused what's the point of using the top rack on the broiler If you're just gonna cover it in foil ? May as well just place the meat in the covered pan or just use the sheet pan/rack setup

    What should be the temperature of the oven for grilling chicken? Making piri piri chicken and live in an apartment, so can't grill it outdoor. Should I let the door of the oven open so it gets nice grilling texture?

    What is broiling ? I got a small table top oven with heating elements at the top and bottom and a metal pan. Is it a broiler or an oven?

    Newer Pyrex isn't as strong as the old Pyrex. I've broiled with my familys Pyrex, while my new Pyrex did crack when broiling, the older Pyrex has been used to broil for years... But yes, never put glass in at those temps because it is still a bad idea.
    Otherwise it is a good video.
