How to Make the Best Potato Salad in the Instant Pot ~ Easy Cooking

  • In this easy cooking video, I make some potato salad in my Instant Pot electric pressure cooker. I added 2 cups of water to the pot and cooked the potatoes for 20 minutes on the pressure cook setting. Then released the pressure after the potatoes had been in the pot for 40 minutes total.
    The ingredients I used are russet potatoes, sweet pickle relish, dill weed, onion powder, green onions, mayonnaise, and salt and pepper.
    Other optional ingredients are hard boiled eggs, lemon pepper, grated carrots, and chopped red bell pepper.

    Too funny. 25 years ago when I we got married my husband loved best maid mayo! Haven't seen it here on Texas gulf coast in 20 yrs. Now it's Dukes mayo here in the south! Cant wait to make it July 4th! Thanks!

    Best Foods bought Hellmann's in 1932. Some say it's Slightly different taste, but I can't tell. I grew up on Hellman's on the east coast. One thing for sure... NO MIRACLE WHIP ! Duke's is pretty good too

    Even easier, to avoid having to break up hot potatoes, peel (or don't peel) them and cut the raw potatoes into bite size chunks. Put the water and a trivet or steamer basket in the IP. Pile the potato chunks on/in the basket or trivet. Then put the eggs (whole) on top of the potatoes. Cook 4 minutes high pressure then QR or do a controlled release if it tries to spit liquid. Remove the eggs and place them in ice water or cold water to cool them. Remove the potatoes and cool them. You can make the dressing and flavorings whatever you like but cook the potatoes and eggs together like that. Cut up the eggs and add them to the potato salad. Russets and red potatoes are my two favorites. I'm not a fan of the gold ones. Too soft.
    A full recipe of potato salad would be about 6 medium russet potatoes, cubed; 1.5 cups water (works in 6 or 8 qt IPs); 3 or 4 eggs. And the dressing starts with 1 cup mayo and about 1/4 cup chopped onion then add whatever you want.

    Onions are toxic. Please don't give any more to Annie. I personally would not want to take the chance. Not worth it. Annie has plenty of food she can have without making her sick or possibly killing her. I know, my opinion but I'm sticking to my comment

      Read my separate comment for alternate method. You can cube potatoes first, peeled or not. Put them in steamer basket or foil-topped trivet. Place the eggs on top of potatoes. Cook both 4 minutes high press, QR. etc.

    Looks great, on of my favorite side dishes. I do have to go with red onjun, I like the heat. Also, get a medium size groeing pot, add the green onion.
    In a few weeks, new green onion.🙃⛷🐕‍🦺🧄👍
