- I grew up in the South eating at Waffle House for breakfast regularly, so I am a big fan of short order cooking on a griddle. I came across a video from True North Cafe in 2022 where I learned of this concept of a Hash Brown Omelette. I considered it sort of a reverse omelette. This is a very filling and hearty recipe. It's also a great hangover cure! Feel free to make this recipe our own and load it up with whatever sort of toppings you love! In this video we cook on the brand new Traeger griddle. AKA The Traeger Flatrock Flat Top Grill. However, you can replicate this on any sort of griddle you like or a skillet.

I also found these in 2022 and I've gotta say man a hashbrown omelet with sausage gravy on top is just about the best breakfast known to man. I could eat it until it killed me and die happy.

I’m a chef who doesn’t care for eggs and have been making something like this for myself for going on 35 years. I use shredded white cheddar to bind the taters instead of the eggs. Works pretty well especially if the cheese gets a little bit crispy too.
Barf.
You being a chef should have noticed that his eggs were undercooked,,, the cheese wasn't melted, and since he poured the wet eggs over the potatoes which weren't even crispy yet, he made them soggy.
It's basically dog barf on a grill.
go back to Chef School and then come back and comment on this video sign a real chef, Diablo valley College.
Hopefully Traeger sees this and does away with the "handle" on the grill surface. You were losing too much through the hole when scooping it up. And as we all use the sides like that to move food around this is a bit of a design flaw. With that said, I'll still be getting one...

Traeger makes some good stuff, but the location of those openings on the side seems really stupid. Matt slid a bunch of stuff out the side.
Dude all your videos are absolutely amazing I’ve watched every one. Keep on going long time subscriber and will continue to make these recipes for my family. My wife and I had a date breakfast every Saturday morning at this terrific little cafe. This date was an every week event. The restaurant offered what they called Stuffed Hash Browns. It was my favorite, and without fail, I ordered Stuffed Hash Browns. The owner had a heart attack and unfortunately passed away. Several cooks took over the cafe and changed the menu. They stopped offering Stuffed Hash Browns. I was done, and we stopped going to that cafe. You have taught me how to make the Stuffed Hash browns. I wish I had found this long ago, but I will get my grill hot and make my own stuffed Hash Browns. Thank you, they look delicious.
the Traeger Flatrock Griddle is $899. Screw that. My 36 blackstone does more at a 1/3rd of the cost (when I bought it).

Totally agree. I have a 36” for the house (and sometimes travel) and a 17” with side burner for the camper. The both of them cost less than this thing.
@Muther Goose, I'm curious what the blackstone can do that the traeger can't, or is it just bigger?
If def doesn't do more. Isn't built as well and comes with a 1 year warranty. But I never fault folks for picking what grill they want. Usually budget driven.
@@MeatChurchBBQ come on matt man. this only has a 1 year warranty. "5 year warranty'' is only for the legs and base. if this wasnt free for you there's no way on earth you world you would choose this over another griddle.
Price will come down in a few weeks 😅

It's really disappointing to see some of the BBQ greats selling out to these big companies for either free stuff or kickbacks on sales. It's almost like every other video is a advertisement for one product or another. I understand they need to make money, but come on man.
Not so in this case. This is not how I make my money. I do this out of my joy for cooking. A few weeks ago I started trying to say in my videos that I am not like every other content creator or UA-camr taking sponsorships and even that was not taken the right way. No one asked me to make this video. It's my 6th griddle. I did it out of my passion for it and cooking. Cheers.

Hi Matt. Wow just tried this recipe out this morning.....new favorite breakfast!( after biscuits & gravy, of course ) Forgive me for cheating, I did it on the stovetop, as it was -6F this morning. I will, and do, smoke meat( and use a closed grill ) all winter, but no way am I standing out there fussing over a griddle or open gill. I may be stupid, but I'm not crazy. I can see all kinds of variants with this omelette as a base. Garnish with bacon crumbles, green onion/chives, & sour cream. Oh ya! Really enjoy your content, and how you present it.
I always put sour cream on my omelets, try putting your favorite hot sauce on there too, kicks it up a notch. Great video, Pittman, will have to try this!

Yes. By getting rid of excess water, you enable the potatoes to brown more evenly and quickly.
Makes me want to go get some smothered and covered hash browns at Waffle House.

Damn. This one's on my list for sure. I'm also a sour cream on my omelette kinda girl, no shame in that game. But for real, this is the channel that gives me the most inspiration for cooking. Great video. My first griddle experience When I was very young my Dad took our family to my uncles Hunting Cabin. I was always fascinated by the kitchen and the the things in it. The table was in the center and full length with columns in the center. Sat about 20 to 30 if I remember. Later on I found out that they had purchased the equipment from a restaurant. Had a huge 8 burner stove but what always caught my eye was the Gigantic Griddle. My cousin says it was 48" wide x 32" deep. My uncle cooked me a many great Breakfast on that griddle and on e similar to yours was and still is Called Mish Camash!!!!!

Great video, however I see a massive design flaw that would piss me off. What's up with the huge side handles on the griddle? Food falls through to the outside of the griddle! A huge pain in the butt if you ask me. Sure, a simple fix like throwing down aluminum foil and just dump the spilled food back on the griddle, but again, a pain in the butt. Did you find that to be annoying for you as you flipped the onions, ham, and tomatoes?
Matt, try a light drizzle of Maple Syrup on that ham before dropping it in

Matt, your seasonings/rubs have become a staple in our house. Holy Cow is amazing! My wife is very picky and loves it too! We haven't come across one we didn't like! Never thought about trying it on hashbrowns but will next time. Your vids have upped my game...keep them up!

Is the griddle surface similar to the Blackstone's cold rolled steel griddle surface? I'm assuming that the Flatrock does because you were using a steel spatula. I have both a standard Blackstone 28" griddle and the 17" E-Series electric griddle. I do probably 90-95 % of my cooks on the regular griddle, but the E-Series does come in handy when it is too cold or too windy outside to use my standard Blackstone.

I have to tell you that I am really glad that I found your channel on UA-cam, I try to see what I can make my wife that she’s never had before. Im from the PNW and right now I’m living in Brazil my wife’s Country. Theres so much that we have there that isn’t down here you don’t realize that until you are there.. So it’s hard for me to find a lot of spices and other stuff that I need for seasoning.. But 3 weeks ago I seen the North Cafe guy cooking this omelette and I had to have it, so I this down and it’s as good as it looks. So when I was going through the list of your videos and I saw this on there it was like a sign here where you will find the good stuff. So I have a question about a seasoning everyone just uses already made up jared sold at the store, so I’m hoping that you can do some videos of what seasoning actually are going into these recipes so that someone like from back can try to find the spices that are needed for the recipe.

Most people don’t know there is a big difference between American cheeses. If you get the wrapped one they are the least expensive and probably the worst. If you read the label you will notice it doesn’t say American cheese - it was will say processed American cheese “product” (not cheese).
If you look at others like Kraft Deluxe they will be processed American cheese. The differences is milk fat and flavor.
American cheese is real. Singles are cheese product.
Love the recipe. I only use Meat Church spices and have watched every vudeo. The background music was very distracting.
Man I love my blackstone don't get me wrong . All in with adds have a G in it , My problem is the paint on the body chipped a few weeks in and I have rust on it and IT"S covered . buyer beware

Traeger really didn't need to put "handles" on their griddle. Watch how careful he is and STILL gets food falling off the griddle, through the handle hole. Poor design from an otherwise smart and innovative company.

Once I get my Blackstone unburied from snow and ice I’m making these! Freaking killer breakfast!
Ok, I make a variation of this in a skillet. Start out with the veggies, onion, bell pepper, etc. Get them going and then add the potatoes. Once potatoes and veggies are just about done, pour the eggs over everything and then top it off with Cooper Sharp cheese. I find the Cooper cooks up best, even if you burn it a little. In fact, that’s what’s for dinner tonite!

Those cutouts in the side of the griddle top look really problematic as that surface is constantly used to "spatula" things and on this it looks like you are constantly going to be loosing stuff off the side (imagine fried rice). The only purpose I could see for these cutouts is for placing or removing the griddle top from the unit. Can you elaborate on this?

The Traeger looks very nice with some great features, but the grease trap like so many others are right in the way of the cook. You have to work around it. Why not put it the back like the blackstone. It's so much easier to use. I'd have to stick with the blackstone for now.

I was like wow that's a lot of onion, peppers, and ham but then I realized you dump half out of the grill from the holes in the side.
love the recipe, but ditch the music, it just makes it harder to focus on the recipe explanation.

Sorry, I owned a traeger scout and it really turned me off to traeger. I won't buy another traeger product period.
Looks awesome... Im not a fan of that handle opening on the side watching those ingredients fall thru though.
I would have to find it and cook both sides 1st. I do not like the hashbrowns cooked on one side. They may be done, but there is no flavor on the top side.

Curious as to whether your hash browns were frozen hash browns, simply shreds, or freshly shredded
