My wife and I had a date breakfast every Saturday morning at this terrific little cafe. This date was an every week event. The restaurant offered what they called Stuffed Hash Browns. It was my favorite, and without fail, I ordered Stuffed Hash Browns. The owner had a heart attack and unfortunately passed away. Several cooks took over the cafe and changed the menu. They stopped offering Stuffed Hash Browns. I was done, and we stopped going to that cafe. You have taught me how to make the Stuffed Hash browns. I wish I had found this long ago, but I will get my grill hot and make my own stuffed Hash Browns. Thank you, they look delicious.

Instead of going thru lots of paper towels, I use rolls of microfiber cloth towels. They're washable for about 40 to 50 re-uses and they soak up a LOT more oil/grease/water than paper towels.

I followed your recipe exactly. Used chorizo instead of ham, green onion instead of bell pepper.

Most of us who love omelettes probably always have hashbrowns on the side. Why in the world did it never occur to us to combine them?! Genius! Giving this a go this weekend

I have been adding my hashbrowns to my omlette just before I fold it. ON the one side, I will have one slice of ham, one slice of cheddar, and one slice of gouda. I add the hashbrowns on top that and then fold. Will give incorporating the eggs into the hashbrowns a try one day.

I do something similar, but not quite in the same vein. I make the Hashbrowns first, then the omelette. While the omelette finishes, I put the Hash brown over top, and flip it onto a plate. The result is an unfolded omelette resting on top of a hash brown. You get that crispy saltiness combined with the soft fluffiness, and you can cut it like a pie for serving others.

I've always wanted a full-size griddle in my home since I started working in kitchens... Super-jealous of your set-up!
    Just a couple notes:
    1) PLEASE cross-section the final product!!! Everyone wants to see what it looks like in the center. 🤗🤤
    2) Yeah, definitely let them rest until they're just about done steaming off their own heat. That should let the eggs cook through completely too, due to residual heat! 🥵

Made this amazing dish for dinner tonight and it was a HUGE hit. I used frozen hash browns I let thaw a bit before griddling them and they worked perfectly. Used green onions because we were out of sweet to go with the peppers. I will be making this again very soon. Fun to make and super delicious! And your video rocks.

I'm another line cook with many hours over a flattop, I can think of a lot of variations for this but it doesn't really need them.
It depends on what ingredients you have, what equipment you have, what you feel like making and your confidence in your skills. Don't be afraid to experiment.
This would be awesome on a biscuit or waffle smothered in bacon or sausage gravy.
One professional cook to another, you got mad skills. ✊👍✌️🖖

I can totally relate to your story. I was new in the food industry and was will to work my way up the chain starting as a dishwasher and helped prep food. one Friday night I walked in and the Chef called me on to the line. the flat top/ fry cook had bailed lol and I got my 1st shot. it was a sink or swim situation and I managed to stay a float lol. after that I became the friday/weekend fry cook and eventually worked my way to sauté/grill station, and eventually managing that kitchen.

That's almost the exact way every cook starts. When you look at famous chefs, like Wolfgang Puck, they started doing a bunch of bullshit and not even cooking. Same happened for me. I started busing tables and doing random shit until I ended up becoming one of the saute cooks. That's the restaurant business

One advice about cooking hashbrowns: put down plenty of butter, let it melt, add the hash browns. Using a spatula press the potato’s down slightly all over. Then cook them on one side for six minutes (use a timer!) flip them, add more butter, and cook them on the other side for additional six minutes. This will produce very crispy, medium golden brown hash browns.
Additional note: you can use either unsalted or salted butter. Use salted butter only if you want to add a salty taste to hash browns. I prefer unsalted butter. If you want to add salt after cooking them, then add the salt then. Remember, generally, unsalted butter is meant for cooking and baking whereas salted butter is for seasoning already cooked food and toast and English muffins.

The way you use that spatula, you for sure worked cooking breakfast. It’s a skill so few know about. You’ll never lose those skills.

Thank you for inspiring us. My husband and I just purchased a Weber griddle. Because of you and the Waltwins our first meal was hashbrown omelets. They were great. Thank you!

Stumbled across video a couple weeks ago, and had been itching to make these ever since. Found the time Sunday morning, and while they didn't turn out quite as pretty, they tasted great! My wife and kid both enjoyed them Definitely adding this recipe concept to my bag of tricks (and hopefully hone my technique after another try or two). Thanks!

Omg I finally made these and they were out of this world amazing! I didn't use my flat top bc it's still not weather friendly here in NH, but it worked out great using my flat square cast iron pan. Butter and patience 😆 🤣 thank you for my new fav breakfast!!!

He looks and acts like my brother In-laws son . You are so right about looking delious. I use to get that at the Huddle House on Hwy 4. After covid and everything going down hill, they closed, re-opened and that Omlet never hit the menu again. I'll have to purchase another griddle. My son has mine. Thank you so much for the share.

I tried this yesterday on the Vevor 21" griddle at around 350F. I cooked the potatoes using Bacon Up triple filtered bacon grease and filled with scrambled eggs, bacon lardons, and American cheese. Came out amazing!! Thanks for the great video!

There's a restaurant in some town I passed through in Missouri that had these, but they called them "stuffed hashed browns" so i tried it and I've been making them at home here in Georgia ever since. So good.
