Smoked Brisket Mac and Cheese

- Smoked Brisket Macaroni and Cheese is my favorite side dish. This smoked mac and cheese recipe is so hearty that it could even be a main course! There are many ways to make mac and cheese. In this recipe and video we add several smoked elements to the dish, plus add a toasty, buttery crunch element at the end that really completes it. This is a 4 cheese mac and cheese that uses my secret ingredient, smoked cream cheese! You can use your favorite cheese for the other 3 cheese, but the smoked gouda, sharp cheddar, gruyere in this recipe are excellent. Bonus, everything including mac and cheese is better with brisket!

Brother, ignore the trolls. Your instructional videos are first rate.
Thank you!
Side dish??? THAT is an entire meal Matt. Holy smokes!
Agreed!
Nobody does smoked food better than you Matt. These videos are gold, thanks for sharing your talent and inspiring us all.
I sincerely appreciate that!!!
Lmao we haven't seen Matt react this much to a dish in awhile! 🤣 Thats how you know this is one to try for sure! Awesome job man
YES!
You’re a bad ass outdoor cook . Learning a lot.
Matt you’ve inspired me to to grill often. I just made the Mac and Cheese. Family loved it as well as the brisket I made last weekend. Love your videos! They’re real and authentic. Thank you Sir!
Can’t recall you ever swearing when you tasted the dish 😂😂😂. This truly looks epic. I can’t wait to do another brisket just so I can use the leftovers to make this! Thanks for another awesome video!
Looks awesome Matt. Been smoking for years, going to make this for my next family outing. Love the videos, I look to your videos often for advice. Thanks - keep smoking
Thank you so much George!!
Bro I’ve been doing smoked Mac and cheese for awhile and never thought about smoking the cheese sauce and putting everything together. Definitely doing this. 🙌🏻 Father Matt🙌🏻
Cheers!
I put this together today. Gonna bake it tomorrow. I can’t wait!
Hell yeah. I usually incorporate rub into the panko topping, gives it a nice color. That and a poblano with some bacon if I didn't have brisket frozen
The smoked cream cheese seems like it could be a real game changed. Thanks for doing more outdoor side dishes. Keep em' coming.
Proud of that element. It's great!
Always appreciated. Thank you sir.
I cannot wait to try this! Love your videos...keep up the great work.
Thanks Gregory!
I just don't know when I'm ever going to have left over brisket! This looks amazing as always Matt! Thank You!
I had to plan for sure. :)
I do smoked Mac and cheese at events. My secret to awesome toasted breadcrumbs is to pre toast them on a sheet tray and take them with me. It’s easier to keep adding a little milk or butter to the pans of Mac and cheese on the smoker to keep it creamy and then sprinkle the bread crumbs on during the last 15 mins before I serve.
That Traeger Mac & Cheese is my favorite from them. Glad you are brining some light to that recipe.
You keep knockin em outta the park! ❤❤
Will try!
recipes for sides are always welcome
Aaaaaaaa!!!! That looks like a little slice of HEAVEN!!!
This is going to be my daughter birthday dinner. Thanks for all your content
Ooo baby. I've been wanting this video for a long time. And I got a brisket going on the smoker before bed tonight.
Matt, when I heard you say in one of your videos "Get your head out of the recipe.", I subscribed! Please keep the videos coming and ignore the trolls who can't boil water without a detailed recipe.
About to give this one a try.
Wife was gone over the weekend and I had some leftover brisket so I made a quick version of this which turned out pretty good ... wish I would have gone full blown on it, but it was a last minute decision. I ate the entire cast iron skillet full of it. Shame on me. Full disclosure, over two meals 🙂.
I do all of the cooking in our family and I make a hell of a mess every single night. Thanks Matt, I will add those cheeses next time, great idea.
Thanks Scott!!!!
So love this recipe so much... huge fan and anything MAC & CHEESE, Sriracha, Buffalo, Blue Cheese, BBQ prepare your meat of choice and there you go!
Damn, sounds good.
I've made smoked Mac n Cheese before, but like the idea of smoked cream cheese and smoking the liquid. Have some left over brisket, guess this will be made today!
First off, if you are looking to hire a taste tester, I'm available. Lol... This looks amazing man. I'm a big fan of the sides. My three favorite sides are mac n cheese, baked beans and slaw. Lastly, I'm enjoying the wrap-up videos. Getting those compliments from family is gold. One of my sons will only eat the bacon that I home cure. My youngest gets excited when I make it. Again, those compliments from family are gold. I even made about 80 pounds of bacon a couple of years ago and took it a homeless ministry in Trinidad Colorado. They loved it as well. Keep up the great work man. These videos are always a good part of my Wednesday's.
I'm from Monterrey Mexico, Love your video bro !!! 🇲🇽🇲🇽👏🏻👏🏻👏🏻
That looks amazing!
Outstanding !
Looks fantastic. I think I will try that and add some chopped Hatch green chilies.
I'd eat that.
Best side dish....Sir, that is a MEAL!
It's like you read my mind. I was wondering... What would meat church do with Mac and cheese... And 💥 boom! Very delicious! I also make a huge mess when I cook... I know the pain!
Damn,
Now I'm going to try this tomorrow. Thank you for taking time to film, edit and post this video.
Our pleasure!
Just when I thought I reached the end of Mac-n-cheese recipes you come up with a new one. The butter in panko is genius for the crust. Smoked cream cheese for the extra smoke. I look forward to making this recipe.
Making it this weekend! Can’t wait!
Enjoy Ken!
This is comfort food at its finest 👌😍
I agree!
I love me some mac and cheese! And wow with that brisket! It's a definite must try.
Hope you enjoy
Loved your reaction when you tasted it, looks delicious!! Loved Dolly! I always have my little smoking buddy Kodiak at my feet!
Love that!
This is going to blow my family away this thanksgiving! Thanks for sharing!
I always have brisket leftovers and never thought of vacuum sealing then sous-viding it. Wild. Thanks for teaching me this
we do it 100% of the time. Great way to reheat it. The best way actually. We even have a brisket reheating video.
I made this last night and it's a definite winner!! Thanks for another great detailed video, you're making me a better cook.
Great video! Here in Idaho we finally got a BBQ store. I was excited to see your gospel seasoning there, I bought 4.
Making this one tonight!
Looks delicious for sure! Definitely gonna do this one. Thanks for the recipe and idea!! YUMMO!!
This looks absolutely delicious, Chef!! 💕🙏🙏
Good recipe! No roux or eggs needed if you melt in some cream cheese! The only changes I would have made is to use whole milk instead of half and half (there is *plenty* of fat in the cheeses), only a half a package of cream cheese and seasoned traditional breadcrumbs (properly toasted on top) instead of tasteless panko for the topping.
Thank you Matt! This is a staple a couple of times a month. Great recipe!
Looks fantastic... will have to give it a go......
Haha. Glad you said something during the video. I was going to give you a hard time about leaving all that "yield" behind in the pans. I started salivating when you pulled the cream cheese off and still am. I can't do basic M&C. Has to be notched up. This is several notches up. Dude, you have me hooked on using panko in new ways, too. I started getting all kinds of ideas after the egg video (although I couldn't talk the wife into letting me fry the whites for easter, LOL)
Love that!
We are making this for our New Year's Eve party this year. Thank you for the direction and inspiration!
Looks delicious right there
Making this for thanksgiving! Thanks for your videos!
I make a similar Mac in the traeger but I mix The Gospel rub into the bread crumbs and it is a game changer!
Love it!
Brother, trying to keep the videos shorter?! I can sit here and watch you cook up delicious meals all day! Love all you’re recipes and can’t wait to try this one!
Enjoy!
Can’t wait to make this side dish. Looks delish.
This is awesome! Looks fantastic and I've got a youngster at home who's been super excited about this week's video since I told him what it was gonna be. He loves mac and cheese and anything Meat Church so I can't wait to get this in front of him.
That looks awesome.
Matt another awesome video. I will cook this for Sunday dinner
I’m definitely going to try this great job Matt
I got to try this!!
More doggo! Looks like a great cook and has me drooling for the weekend.
Holy Smoke N Cheese! Nice work my man!! Great job Matt!!
Thank you for helping me enjoy life!
That looks amazing! We are opening our beach house this weekend, I do believe this will be on the Saturday afternoon menu.
Fantastic! I won't get back to mine until June. Missing it!
O M G. This is my new Mac n cheese recipe. You never fail to amaze!
THANK YOU!!!!
This looks amazing
Thanks!!
Making this today, can’t wait.
Matt, I made the Mac and Cheese for Father’s Day for family. Thank you so much for the recipe! I also cooked some chicken and steak and reviewed your videos for how to cook them on the grill (how often to turn). I got some great compliments…I deferred them all to you.
New to Meat Church, best instructional videos on the internet. I spend hours looking for your recipes. By the way, great clip on Jimmy Fallon
This is SO going down for the 4th this year. Thanks, Matt! Happy 4th of July, brother.
Looking super good!
Man this looks like the best thing ever I'm definitely going to try it
You should!
Looks great !!!! trying it this weekend
Hope you enjoy.
I’m going to try this!!!
Brother, you're the f'n man. I love everything you make. Can't eat most of it due to health issues, but if ever I get better, I'm making some of your awesome BBQ concoctions. One thing they make a rotary grater when grating that much cheese. You'd fly through it and save your knuckles. Just a thought. Keep it smoking, dude, UDAMAN!
Yesterday I made this recipe and used my Pit Boss vertical smoker to smoke it. The results were excellent! I used brisket from the local Harmon's BBQ. I made a serving to welcome a new family to the street and one for a guy who had just come home from the hospital. The portion we had was gone in one sitting. I'm going to be making your shotgun shells next.
Love your videos every week that looks by far the easiest way for tasty Mac and cheese, some other channels make it way too complicated
Thanks for that feedback. We try to make things as approachable as possible.
Looks amazing! Can't wait to make this for the family...thanks for sharing!
Enjoy!!
I love these wrap ups! I really think it adds a ton to the video having after thoughts from days later. Great video!
Thank you for that feedback!
I always save some brisket for another recipe or experiment. I'm looking forward to trying this for my next pot luck meal, looks delicious.
I might take that a tad further and put that in the oven under the broiler for a few minutes after pulling out of the smoker. Very nice though! Gotta try it!
This looks amazing! Definitely going to try it!
Cheers!
Correct...not many side dishes better than that. My dad and I had a bbq business for a few years and made a brisket mac and cheese. Cant wait to incorporate some of your recipe in and try it. Well done as always, gold top cheers to you.
Everytime I cook a brisket I vacuum seal a big chunk from the flat and the point for easy fast dinners and Mac and cheese is definitely one of my favorite meals to use brisket. I will have to incorporate the bread crumbs next time for sure!!! Keep up the good work, love how informative your videos are!!!!
Sounds great!
That looks delicious!
it's soooooo good
That looks amazing! I have to admit, I was slightly annoyed when you didn't put all of the brisket in there. But then you piled it on top at the end and everything was good again!
YEP!
Can’t wait to make this!! Thanks for sharing, Matt!
My pleasure.
Another masterpiece Matt! I’ve been smoking food for years and I haven’t done Mac and cheese before. Looks like I’m in for a weekend brisket and a killer side dish!👍
Enjoy it!
Great video Matt. I have done mac and cheese on the smoker many times. Have tried a couple of different recipes over the years. Yours sounds great. As an alternative to the panko I have used crushed up Cheez It's as a topping and it adds another layer of flavor and texture. Can't wait to see the carnitas recipe.
Great job Matt as always, can’t wait to try it
Enjoy Don.
Amazing!!!!!! Great job man!
Thank you!
Awesome video Pastor 💯 Totally love the after video commentary. ❤
Thanks Michael!
literally laughed out loud at your taste reaction, thanks for making this video, looks amazing!!
Glad you enjoyed it!
I did the same thing lmao 🤣
My wife has made Mac and Cheese with smoked gouda and apple slices before and that little bit of smoke really added a different component to the dish. This is undoubtedly on another level. Added to my list of things to make. Looking forward to it Matt, thanks for the recipe.
Sounds great!
Can't wait to try the mac
Man! That looks amazing
Thanks Walter!
I just found out that we used you guys seasonings at a national level cook-off in México we ranked on pork 28/120 and on beef 50/120.
Pd.Had the time of my life
