If she wasn't dependent on his money, I can't imagine a reason why she tried to steal his life insurance policy from his friend.
She played the long game. I guarantee the moment she met him, she knew how this would end. And she love bombed him into a marriage, kids and a life of luxury... Knowing full well that one day she was going to kill him and take it all. That's the kind of personality we're dealing with here. But she will probably die still professing her innocence. Or she may even try to pretend she's the "real victim" and make up a wild story of "abuse". Who really knows how far she's going to take this game.

      Because Kouri is a psychopath.
He was up against a manipulative, driven, dangerous woman that on the flip side, he loved. She would have immediately love bombed him when her 1st poisoning attempt failed. He probably knew on some level that he was in danger, but she would have been soooo loving and over the top afterwards, that he would have felt like the crazy one. He probably eventually even felt guilty for ever thinking that his wife was capable of hurting him. That's how she did it. He was so confused between his feelings, her actions, their long history, the kids and all the other factors, plus female psychopaths toss in hyper sexuality so he probably had no idea that his gut was right all along.
It's sad but true. Ted Bundy's GF knew things were "off" but then he'd swoop in and smother her in love and she'd put her weird feelings aside. For years. Even when the media published a sketch of a guy named Ted who looked exactly like her BF, she was just sure he couldn't be "that monster". Some psychopaths are really good at being normal, almost too nice. I bet Kouri played the part super well.
He needed to leave the very first time he thought he'd been poisoned. You can't stay and let them get their claws back into you emotionally. He needed to trust his instincts... And unfortunately he didn't. Hopefully it's a lesson for someone else out there.

And that meal nobody is poisoned. Then the next meal... And the next... And she's being extra nice and the sex is mind blowing. You'll eventually think you're the crazy one.
That's how the merry-go-round would have been for him. And why he knew on some level that she'd poisoned him, but then everything was so nice and normal immediately after. Total mind f**k.
I bet if someone had asked Eric 10 years ago if he would leave if he thought he'd been poisoned, he would have also said yes. But then when you're actually in the spider web.... It's hard to say how you'd really react.

If I were Eric, asap I would've packed a bag, moved to my parent's (or sibling's) house temporarily and filed for divorce. Things are replaceable; human life is not. Kids or no kids is NO EXCUSE to stay! They said he wanted to be in the house with his boys but how can he be there if he's DEAD?! Better to move out and divorce than to be dead. No? And how can you share space with your spouse who's trying to poison you? And how did she manage to avoid poisoning herself while preparing the drink? And why did he even drink the cocktail if he was already suspicious? Doesn't make any sense! 😵‍💫

I am not victim blaming, so don't attack me. But this needs to be a lesson for everyone watching : someone who changes your will, someone who poisons you, they are dangerous. You need to trust your instincts and LEAVE. Yes, you probably feel crazy thinking about being poisoned, yes you probably love this person, but someone who is this mentally unstable is not going to get better overnight. Their next dangerous act may be the one that kills you. Like what ultimately happened in this tragedy.
Trust your gut. If you feel something is "off" do not sit idly by waiting for them to outsmart you.
I hope she rots in prison forever. And I hope her children can heel and lead healthy lived despite their mother's awful decisions.
