+Kyori Sato You can certainly make the lace months ahead. Keep them sealed in a plastic bag and in a cool location but not refrigerated. Some people wrap each piece of lace in a waxed paper, parchment or plastic wrap so that they do not stick together.
Thank you ever so much Alan for your swift reply and suggestions for storing the lace. As a follow-up note, I removed the lace from the mold a short time ago without an issue. Your suggestion to cut back on the liquid (part 2) made my first attempt a success. Just finished added a bronze luster powder for a antique lace effect. Such stunning results, I am hooked! My husband is equally impressed with the product and the results.
Great videos! My Grandson and I are opening a small shop in Alaska where we make all the decorations, laces, flowers, pearls, etc, and we sell to people who want to make their own cakes. I can't wait to try Sugar Dress!!
I am relatively new to cake decorating ,first let me say thankyou for your fantastic tutorials ....I live in a fairly remote area ... it is much easier and faster to buy equipment and products online ,saying that tho' I would not know what to buy if it were not for the informative and extremely helpful tutorials .....once again thankyou
Hi I really am impressed with the ease in which the Sugar Dress mix appears to work. I just ordered some. I have used Sugar Veil previously with mixed results. Thank you for your great tutorials, I have been watching them quite a bit now and you really do have a great style of teaching! :-) Thanks so much! Mr Bobby Cakes
If the second coat can be left out without the use of the oven, can the oven step be omitted totally? Also, your calm nature and very easy explanations/demonstrations make for enjoyable viewing of your videos. I am excited to try this. Thank you
I liked the way the patterns appeared as you scraped the sugar dress over the mats lol! I know it's such a simple thing but it still feels like magic hahahaha! :-) xx
Alan is it hard or soft to eat,its amazing and i have never seen anyone to explain so well, your amazing thank you i cant wait to order ,regards kathleen.
It remains soft but has a rubbery texture. I consider this more of an edible decoration that probably should be removed when serving a cake. But, it is edible and has a mild vanilla flavor.
Hi Alan, thanks for sharing your awsome ideas. Please can you tell me how to stick the lace on the fondant icing. Thank you. Awaiting your reply. God bless
Wonderful and very fine decorations, awesome! It looks very easy to do. Does exist a homemade recipe to get this paste? I think that in my country I cannot find this kind of product. Chile, Latinoamérica.
me gusta mucho esta forma de hacer butter cream,y me gustaría compartirla con mis mejores amigos, para probarla ,porque es una manera fácil ,y dulce ,de decorar mis queques.
Hello Alan, First, thank you ever so much for the tutorial. To say it helps is an understatement! I learn best by viewing rather than just reading and your tutorials are extremely helpful. I have my first batch of lace ready to be removed from the mold. My husband is so fascinated by the technique, he said he wants to witness the lace being removed from the mold today :) I live in a humid climate and used the suggestions that you gave another poster (Sheela Jose). Will see what results it brings later this morning. My questions are: I want to make a big batch of Sugar Dress (now) for the upcoming holiday season. Will they be good through December 25th and when storing them in a zip lock baggie, does the baggie need to be refrigerated and if not, what suggestions for storage do you recommend?
Once you mix a batch, how long can you keep it in a container before actually using it? I ask because I'd hate to mix up some, then only use a bit and have some left over...
I am just in love with all your tutorial if it's not to much trouble could you add a list of all the products and tools you use,I know all of them are on your website www.globalsugarart.com,it would be easier if I knew exactly what to look for on your website. Thank you so much you rock!!!!
I know you mentioned that this product can be piped can I pipe it on wax or parchment paper or does it have to be silicone? I do have The MAT for fondant if you think that would work better to pipe it on or saran wrap even. I wish you had a tutorial telling how its done.
I cant get it out :( I tried the 6-8 hours airdrying, and it didn't work. I tried the oven and it just cracked. I'm not sure what to do. Also whats the syrupy liquid? I want to order more because I'm going through the liquid faster than the powder as i'm trying this
Hi, I followed your tutorial and LOVED THE Sugar dress product -- my first attempt was to make black lace -- it turned out beautiful. My second attempt was to make a white lace -- but the lace seemed to get a transfer of color from the lace mat, and turned out pink.... any suggestions to keep it white?
+Lisa Link It is not the silicone mat that is bleeding color into your white lace. It is the food coloring you used in the last batch that is still in the mold. You may need to soak the lace mat in a dilute bleach solution to clean out all traces of food coloring. This is a common problem when making colored lace pieces and then trying to make a white piece in the same mat.
+GlobalSugarArt Hi Chef Alan, to avoid the little challenge Lisa encountered with her black colouring, can one make a white sugar lace and paint with pearl or luster dust, to get the desired colour? Thank you.
If you lay it on the buttercream while it is still fresh and moist, it will stick to the buttercream. Once the buttercream has crusted over, it would be difficult to attach.
Chef Alan, I just made the laces using one of your mats. It turned out really nice! Will this adhere to frostin' pride or Swiss meringue cream cheese buttercream?
Hello!! Amazing tutorials!! I have a question. I made the mix and it wasn't as pure white and it has lots of bubbles...... What did I do wrong? I followed the instructions exactly please help!!
Hi Alan - love the videos, very informative! Quick question - what is your preferred work surface? I notice in all your videos you roll directly onto a large sheet - silicone, vinyl or something else? Cheers!
I do enjoy working on the large Ateco Silicone mat. For gumpaste and fondant work it's the best. Even when decorating with buttercream I find the surface easy to clean and tools tend to stay in place.
It really depends on the lace mix that you are using. Some brands dry far faster than others. Also, if you live in a dry area or you are heating your home, the lace will dry very quickly. Remove the lace from the mat as soon as it is dry and place it in a large plastic bag to keep it soft and fresh. If it is a little dried out, place a slightly damp paper towel inside the bag with the lace ( but NOT touching the lace ) and it will absorb the moisture and soften the lace.
Hi Chef Alan. Loved the video. We have been on the search for something other than sugarveil. Can Sugar Dress be used for free hand piping designs too? We have an India wedding cake that has quite a bit of Henna work to be done and I think this is the way to go as long as we can use it in a piping bag.
You sure can! Use a little less water per batch, maybe 9 teaspoons instead of 11 and reduce the Stage II (glycerin) to 1/2 tablespoon or even less. Make it the day before and refrigerate overnight. It pipes BEAUTIFULLY!
How would you compare this product to the sugar veil product? Which is best? I find that even after making the sugar veil, that I have to store each individual piece between parchment paper in zip lock bags or they will stick together.
I firmly believe this is a much superior product for many reasons. It is not brittle, comes out of the molds very easily and stores for months without drying out.
I've found that the sugar veil I used is brittle. Did I mix it wrong? This happened on the second batch I made. It ts upsetting as this stuff is not cheap. And waste is money out of my pocket.
I'm having trouble getting the lace out of my mold. I followed the instructions on the sheet and baked it at 170 degrees twice, but can't seem to get it out the mold without it tearing and it seems to be just a tad sticky. I'm using a Claire Bowman lace mat. Please help!!
Here are my suggestions if you live in a humid climate and are having difficulty with the lace. Use only 9 teaspoons of water and 1/4 teaspoon of the Part 2 liquid. Refrigerate the mix overnight in a covered container before using. Apply one coat, bake for 10 minutes at 170 degrees F then cool and recoat. Allow to dry overnight in your oven with ONLY the light on. This will keep the oven dry and slightly warm.
Great video. I'd like to purchase this product. It looks great but, how does it taste??? If it's going on top of a cookie , it really needs to taste as good as it looks.
It has a light vanilla flavor but when the lace is dried, it is rather rubbery. Most people remove this type of decoration from the cake or cupcake prior to eating.
Thank you for this "clear cut" tutorial. Purchased this product, and to my delight, it works "beautifully" My question is, I want the lace to stand up firm around the edges of my cake to look like border. What changes would I make to the mixture? Would it "crack and break" while removing it from the mat? How far in advance would I have to make this lace before applying it to the cake? Thank you for your expertise.
Sydni Kirkland Yes, you can color the mix with gel or paste colors before spreading on the lace mat. You can also airbrush a dried lace piece or even brush it with luster dusts.
I was so excited to get my mats and Sugar Dress - I mixed it according to the directions had fun putting it on my mats - I put it in a 170 degree oven for 15min like they said than another coat and let it sit for almost 26 hours - went to unmold my lace - it was sticky, tacky and fell apart - what am I doing wrong do I need to treat the mat please help!
Try reducing the Part 2 liquid to 1/4 teaspoon for the batch instead of 1 teaspoon. Be sure to measure your water very carefully. Even with the full teaspoon of Part 2, my lace always dries beautifully but it will dry better in humid condition if you only use 1/4 teaspoon.
Tanya, I'm having the same issue and just made a post on it before I saw yours. I will definitely try his suggestion and see what happens. How did yours turn out??
Valerie Cudnik This product is available at www.globalsugarart.com in the US. Also, the Claire Bowman line of lace mix called Cake Lace is a comparable product. Here are links to both: www.globalsugarart.com/sugar-dress-confectionery-lace-mix-500-grams-by-martellato-p-30484.html www.globalsugarart.com/search.php?q=Cake+lace The Sugar Dress is temporarily sold out but will be back in stock within a few weeks.
GlobalSugarArt Thanks a bunch for the response! I wasn't sure if the products were similar. There are so many that are quite a bit different. Mostly I'm dabbling as I learn new skills. I used to do traditional wedding cakes, but now that my kids are grown and nieces & nephews are getting married, I don't see them wanting an 'old style' cake. I look forward to watching all of your videos. You are easy to understand and the videos move at a great pace. (found you on craftsy, btw) (and yes... I subscribed!)
Hello! Sorry to bother you again, I was wondering what would be the best way to color this product a true BLACK. Should I use a mix of powder color and gel paste? I do have Super Black gel paste by Americolor. Do you think it will be fine if I just add a few drops of that to the mix? Thanks!!!
You can color the mix with gel colors but a deep black color is very hard to achieve. We do have black Dress Lace mix by Claire Bowman coming into stock in about 3-4 weeks.
GlobalSugarArt I made a second batch and measured 42 grams instead of the Tablespoon measurement, it came out much better. I like to measure by weight rather than volume I should have done it that way to begin with. I use the first batch and then went over it with the thicker second batch I made. It came out fine but it was better with a double coating of the second batch I made. So far I am loving this product!
Hello! I was wondering how this stuff holds up on non dairy whipped topping? about 99% of the cakes I make I frost with whipped topping (Pastry Pride). I know that gumpaste and fondant do not do well with all the moisture in the whipped topping. How well does his hold up to moisture?
If you are laying it on a cake top or sides, it will hold up to the moisture. It would not hold it's shape in a bow or ribbon, etc. The added moisture would cause it to collapse.
I have used Sugar Dress several times on a couple of mats without any problem. However, I recently purchased a new star flower mat, and the Sugar dress seems to shrink before it even goes into the oven. Has anyone had any problems like this? Any suggestions? I love the lace mat, but it's a problem.
Shrinkage is always an issue with all the lace products but is much more noticeable on thin and lacy designs. That is why we recommend to dry the first coat in the oven for 10 minutes at 180 degrees, then re-coat and allow to dry.
Is the bake time 170 degrees, 175 degrees, or 180 degrees? Your tutorial above says to bake at 170 degrees, but no more than 175 degrees, but your comment above says 180 degrees? Also, what would you recommend for for Fahrenheit conversion? My oven is Fahrenheit doesn't have a digital temp setting so to get a comparable Fahrenheit temp would seem somewhat tricky! I just want to make sure I have the info to be successful in using this product. Thanks for any suggestions you can offer! :)
Hello Chef Alan! First let me say I love your work and thanks for your tutorials. I wanted to ask can the sugar lace be airbrushed to add color or only use luster dust? Thanks!

Help Chef Alan! I used the color paste Violet, from Wilton for my lace and now the color is fading to a blue. What could be the problem? I thought I could use this lace for the wedding cake I'm doing, and the wedding is still 1-2 weeks away. Am I doing this to early?
Wilton colors do fade a lot. All purples will fade to blue when left in the light. I would suggest using a better quality food color then keeping the lace away from ALL light until you put it on the cake. Then, keep the cake away from light until the reception. Even light bulbs will fade it.
Hai Alan! My a Sugar Dress is cracking & breaking into pieces, I 'm from India, Is there anything that I can do to troubleshoot this problem, I've done as per your video & instructions given on the pack..is it temp..or the water & the liquid content that I've to alter according to our climate which is humid?
If you live in a humid climate, I would reduce the Part Two liquid to 1/4-1/2 teaspoon. I have never had this product crack or break into pieces. Please double check your measurements to be sure they are accurate.
Hi Alan, I was watching a tutorial using Sweet Lace Express. This product is from the UK but it looks awesome and simple to use and can be ready to use in minutes. Have you heard of this and if you have do you know who carries it in the US. I am very much interested to purchase it.
To my knowledge it is the same product as Sugar Dress, only a different name. There are now many vendors selling the same product under several label name. None of these are like Sugar Veil which is very different.
Chef Alan, can this be colored and used on Swiss meringue buttercream? I was hoping to purchase the red Claire Bowman pre-mixed sugar lace but it was sold out on your website. Thanks!
I've never seen this product before. My whole world just opened up of new designs that I can do with this sugar medium. And it looks like so much fun!
+Kyori Sato You can certainly make the lace months ahead. Keep them sealed in a plastic bag and in a cool location but not refrigerated. Some people wrap each piece of lace in a waxed paper, parchment or plastic wrap so that they do not stick together.

Alan can you use this product on buttercream Icing?
Nancy mills yes you can. Just lightly moisten the back of the lace and attach to the buttercream iced cake.
Thank you Alan!

I know you mentioned that this product can be piped can I pipe it on wax or parchment paper or does it have to be silicone? I do have The MAT for fondant if you think that would work better to pipe it on or saran wrap even. I wish you had a tutorial telling how its done.
You can pipe it on plastic wrap or acetate works great too. I have not tried it on waxed paper or The Mat.
thanks Alan

They should easily stick to any buttercream or icing you choose to use.

Same one u using in the video
Hi Alan - love the videos, very informative! Quick question - what is your preferred work surface? I notice in all your videos you roll directly onto a large sheet - silicone, vinyl or something else? Cheers!
I do enjoy working on the large Ateco Silicone mat. For gumpaste and fondant work it's the best. Even when decorating with buttercream I find the surface easy to clean and tools tend to stay in place.
vivo en bogota colombia donde puedo conseguir los tapetes , para trabajar los encajes. le quedare agradecida.
Is it suitable 4 vegiterianes?
Please can u help me, dont know why my cake lace is turning out crispy. Its coming of the mat by itself. Room drying. No over.
I have tried so many times but i did not get good result.
After mixing the product, how long will is stay for before it expires and can't be used?
krys p I have kept mixed product in the refrigerator for up to 10 days and it was still good to use. Be sure it is tightly sealed.
WHAT IS THE LIQUID USE ? I ORDER THE SUGAR LACE BUT THE LIQUID IS NOT INCLUDED.

Ok thanks! Already ordered my Sugar Dress! Can't wait! :D
Is it better to let if sit a while. I just made some and doesn't look as thick as yours.
It does thicken overnight in the refrigerator in a sealed container. I always get the very best results if the product is made 1 day ahead.
GlobalSugarArt Thank you for your prompt reply!
Hi. Can we spray paint them black?
Yes, the dried lace can me airbrushed.
Hello Chef Alan! First let me say I love your work and thanks for your tutorials. I wanted to ask can the sugar lace be airbrushed to add color or only use luster dust? Thanks!
It can be airbrushed or dusted as well as adding gel colors directly to the mix.
+GlobalSugarArt Ok thanks!
GlobalSugarArt .hello .sir please tell me how I made suger lace at home.?

Anywhere from 170-180 Fahrenheit is acceptable.
Even light bulbs will fade it.
hello chef .
is there any home made ingrediemts to make cake lace instead of the productas this product isnot available in my country
I do not know of any homemade recipes for lace.

Please double check your measurements to be sure they are accurate.
did you put it in the oven at 170 Celsius or Fahrenheit?
Celicagamer
Fahrenheit at 170
could you tell me whay the board is made of to be able to put in oven please
+glynis allen I was just using a cardboard cake board. Since the oven temperature is very low, a cardboard is safe.

Hello!! I just wanted to know if the temperature to th owen is F or C ??

Hi Alan, I was watching a tutorial using Sweet Lace Express. This product is from the UK but it looks awesome and simple to use and can be ready to use in minutes. Have you heard of this and if you have do you know who carries it in the US. I am very much interested to purchase it.
To my knowledge it is the same product as Sugar Dress, only a different name. There are now many vendors selling the same product under several label name. None of these are like Sugar Veil which is very different.
Hello Sir, where can i get that silicone mat?
