    Chef Alan, I'm excited about making some dahlia's soon! My best friend was called Dahlia and sadly she passed away from cancer in August. I am going to make a cake that will look (hopefully) like a vase with dahlias in it and it will be raffled for a cancer charity, I will definitely post it to facebook when I'm done. You know I'm grateful for all the videos and that I've learnt a lot from you but I'm especially grateful for this one :-) xx

    Easiest way I've seen to make dahlias ever. So clever. Where can I buy that set? Do you ship to Canada? Nevermind I found them on your website. I just ordered the Martellato Dahlia Plunger Cutters and Flower Drying Tray. They seem amazing! The results look beautiful. No more convoluted, time consuming ways to make beautiful dahlias. I have them in my yard btw. Still not blooming. Not time yet ;)

    Thank you Chef Alan for a clear and instructive tutorial, and the dahlias are beautiful. However, when I made mine, the flower fell apart at the last stage, when I picked up the assembled flower to finish the drying process. Were the petals too dry? or too heavy? I made an earlier lot thinner, but they broke off at the thinnest part, where the petal joins its own centre. Any help will be greatly appreciated.

      If your flower fell apart you may not have used enough glue or water between the layers of petals. It is also possible to that you did not allow them to dry long enough before assembling them.

      GlobalSugarArt Alan, thank you for those suggestions. I live in quite a damp climate and the petals don't hold their shape even after 6 hours. I think that there'll be quite a few attempts before I get it right!

    Hello. Just received my cutters and tray. thank you. To make smaller ones, if I just make 10 small petals and place in tray, I suppose this will work? Making these for a wedding cake this weekend. They are so pretty Thanks MJ

      I would suggest only using the very top few layers and eliminating the larger bottom layers for a smaller flower.

    tried to make today, the whole flower fell off of the center... so I will just lay on my cake! can you tell me how thin your gumpaste is,, and is it mixed with fondant. my flower was very heavy.. how long do you let the flowers dry,approximately? I ordered the cutter and tray you are using so I would really like to get this right. can you tell me what I am doing wrong

      Not really. The flowers will not harden and may collapse in hot weather.

    A client of mine is using some dahlia in her bouquet and has asked me to incorporate it into the cake. I wanted to know if there is a way to do a crystalized one like you do poinsettas or the other gelatin flowers. Her theme is snowflakes and hearts.

      Yes. If you steam flowers after dusting them, the colors become a little deeper and the dust is set so that is does not come off as easily when handling the flowers.
