Chef Alan, I'm excited about making some dahlia's soon! My best friend was called Dahlia and sadly she passed away from cancer in August. I am going to make a cake that will look (hopefully) like a vase with dahlias in it and it will be raffled for a cancer charity, I will definitely post it to facebook when I'm done. Thank you Chef Alan for a clear and instructive tutorial, and the dahlias are beautiful. However, when I made mine, the flower fell apart at the last stage, when I picked up the assembled flower to finish the drying process. Were the petals too dry? or too heavy? I made an earlier lot thinner, but they broke off at the thinnest part, where the petal joins its own centre. Any help will be greatly appreciated.
If your flower fell apart you may not have used enough glue or water between the layers of petals. It is also possible to that you did not allow them to dry long enough before assembling them.
GlobalSugarArt Alan, thank you for those suggestions. I live in quite a damp climate and the petals don't hold their shape even after 6 hours. I think that there'll be quite a few attempts before I get it right!

Yes. If you steam flowers after dusting them, the colors become a little deeper and the dust is set so that is does not come off as easily when handling the flowers.

I would suggest only using the very top few layers and eliminating the larger bottom layers for a smaller flower.

Not really. The flowers will not harden and may collapse in hot weather.
