Today I'm demonstrating how I peel and 'fillet' a mango in less than a minute. This way saves me plenty of time when dehydrating mangoes! Plus, there is significantly less waste and a higher quality to your mango slices as they aren't crushed as much.

I do the same as you, except I quarter it instead of halving it. I usually eat whatever mango is left on the skin.
