  • INGREDIENTS:
    2 pounds of chicken
    1 tablespoon of “epis”
    1/2 of a lime or (sour orange)
    1 teaspoon of Cajun seasoning
    1 teaspoon of black pepper
    1 teaspoon of salt
    1 scotch bonnet pepper
    A small bunch of parsley and thyme
    1-2 cups of djondjon (depends on how dark you’d like it to be)
    1/2 teaspoon of olive oil
    DIRECTIONS:
    Wash the chicken according to video, then marinate it with the “epis” let it sit for at least 15 minutes. To a pot add water and djondjon, let it come to a boil, let it boil for at least 10 minutes. Then sear the chicken following the video. Continue following the video to for instructions on how to get the authentic flavor of the “djondjon”. Enjoy!
