    Ingredients:
    Clean Meat:
    1.6 LBS of Beef for Stew
    2 TSP Salt
    2-3 Fresh Lime
    Hot Boiling Water
    To Season Meat:
    3 TBSP Haitian Epis • Haitian Epis Made Easy...
    1 Sazon Goya
    1 Maggie Cube (Chicken Flavor)
    1/2 TSP Salt
    1/2 Black Pepper
    1/2 Complete Seasoning
    1/2 TSP Season Salt
    2 Pinch of Ground Cloves
    1/2 TSP Cayenne Pepper
    4-6 Crushed Garlic Cloves
    In the Legume:
    4 Carrots
    A Branch of Thyme
    1/2 of a Medium Size Green & Red Belle Pepper
    1/2 of a Medium Onion
    2 Chayote
    1/2 of a Large Tomato or a full Small to Medium size Tomato
    1 Medium Size Eggplant
    1 Medium Green Papaya
    1/2 of a Large Cabbage
    2-3 TBSP Oil
    4 TBSP Butter
    2-3 Cups of Water or even more(Depending on which meat you decide to add in your legume)

    THE ONLY person I followed for legume that finally came out with the right taste after 4 years of cooking for my husband WOW. I didn't even add papaya as it is so hard to find here in fl.

      Yay!!! So happy to hear this Candice. I'm happy it worked out for you. I live in FL and papaya is everywhere like at Walmart, Publix and all those Spanish meat stores. You have to try it next time with papaya love but remember it has to be green papaya not the ripe one!

    This stew is so good over rice and as you said most Haitian restaurants make it oily but when you cook it you can make it better!! I cooked this as a Bahamian where I loved it so much and shared it with some Haitian co workers and they said you are now in the Haitian family!! it was really good! us Bahamians can cook anything you show us and add out own seasonings to make it perfect! Great video Sis!

      Awww, I'm so happy you guys enjoyed it love! Unless you don't like papaya, you should try the papaya next time and see if it makes a difference. I personally think papaya gives the legume a slight sweet yummy kick 😋

    What a fantastic stew recipe! Really appreciate how you chopped everything up in the pan, much tidier that way. The fresh vegetables from your garden make it special for sure. All the healthy ingredients that are so flavorful makes this dish a wonderful treat.

Legume is top tier and it took me a while to actually make it because I was always intimated by it but once I made it I realize it's just a long process but not that hard to make at all with the right guidance!

      Hey my love! Funny thing is I didn't care about cooking until I got married. Living with my mom she always cooked so there was no need to. I mean I did cook of course but not nearly close to what I should've been cooking lol. I discovered my love for cooking after I got married when you leave the comfort of your parents home, it really does change you.

    This look so good & I can’t wait to try it! I did good on my first attempt but didn’t have the color. However, I prefer to add water cress & spinach to it cause I grew up on it. I’m gonna hold on the papaya until I master it. Can I add it during the step when you added the 2nd pair of carrots?

    I definitely love the way you make Haitian legumes with or without meat but I would leave out the Goya and maggy out because of health safety concern.

    Great Vid pitit❤ O make different types of legim legim militon and carrot with morou some tomato for color. Legim militon, cabbage, eggplant spinach and watercress topped off with mixed vegetables any meat beef, pork and that is it for me. When I am done I squeeze lime juice or add pikliz for acid and heat. That piman is key

    Hello love how are you so since you forget to put the papaya in the beginning should I put it closer to the heat or put it on top of the cabbage ??

    I plan on making this but the tomato and the oil is gonna be my first step instead of taking out the meat and veggies and doing that... how comes some legume is green and some look brown??

      Hi there, I'm not sure how that will work out, but let me know. I'm referring to the steps you're taking instead of removing meat. The greens I think you're seeing are the bell peppers. All the veggies massed up create different shades of colors, and as it cooks down with the meat, it changes the shades to darker tones.

    Where can I find green papaya? Orlando is non-existent with Caribbean food and markets ....I miss my home of NYC..

      You have to search online there are Caribbean markets in Orlando. Do a search for "presidente supermarket" they have Caribbean food and I know they have locations in Orlando. You can find green papaya at Walmart in the produce section. Publix may have it too but I know Walmart has it for sure.

    Instead of using oil with the tomato paste can you use butter instead?

      Yes love, you can definitely use butter. Just let the butter melt first before putting in the tomato paste.

    If I wanted to use turkey neck instead is it the same process as you cooked the beef? Let it cook for 20 minutes first add veggies and let it cook again for 30 minutes? And I never heard of papaya in legume. You learn something new lol

      With the turkey neck let it cook for 30mins first then carry on with the same steps. With the turkey neck you may need to add a little more water depending on how they're cut. My mom always add papaya to hers but not everyone adds it that's why you probably haven't heard of it love.

      Hey Jennifer, it makes a difference to me but if you don't have it just use what you have. You can find green papaya at your local Walmart, publix, Spanish or Caribbean markets. I hope you find it because it's sooo good in it.
