TASO KABRIT AK BANNANN PEZE (Fried Goat with Fried Plantains)

- INGREDIENTS:
2 pounds of goat (clean)
3 tablespoons of “epis”
A piece of onions
A few pieces of ginger
A few pieces of bell peppers
Half of a lemon
Half of a sour orange
Half teaspoon of salt
1/4 teaspoon of baking soda
1 scotch bonnet pepper
A bunch of parsley, thyme and Rosemary.
DIRECTIONS:
Add the “epis” to the meat
marinate it very well add all the other ingredients.
Let it sit for at least 25-30 minutes.
Then, transfer it to a pot and allow it to come to a boil.
After about 15 minutes or so. Add some “better than bouillon” or any other flavor spices you like.
Add water then let it cook until it’s completely tender.
If it needs more water along the way, add more.
(You can also use a pressure cooker to make it easier and save plenty of time).
When it’s cooked and tender, just remove it from the pot, fry it until it’s golden brown.
Fried plantain:
Wash and peal the plantains, cut it (4-5) pieces each. Then add sour orange juice and salt to 2 cups of water, allow the salt to dissolve then add the plantains let them sit for a few minutes.
Add oil to your deep fryer don’t let the oil get too hot. Add the plantains to fry (make sure the stove is on medium low) when it’s fork tender, remove it then press it right away.
Soak the plantain in the same salt water then fry it again (this time you want you the oil to be really hot) so your plantain can be nice and crispy. Keep an eye on them so they don’t burn.

INGRÉDIENTS pour la preparation de la viande:
2 livres de chèvre (propre)
3 cuillères à soupe de «epis»
Un morceau d'oignons
Quelques morceaux de gingembre
Quelques morceaux de poivrons
la moitié d'un citron
La moitié d'une orange aigre
Une demi cuillère à café de sel
1/4 cuillère à café de bicarbonate de soude
1 piment Scotch Bonnet
Un bouquet de persil, de thym et de romarin.
INSTRUCTIONS:
Ajoutez les «épis» à la viande
marinez, puis ajouter tous les autres ingrédients.
Laissez reposer pendant au moins 25 à 30 minutes.
Ensuite, transférez-la dans une casserole et laissez-la bouillir.
Après environ 15 minutes, ajoutez un peu de l'épice «Better than Bouillon» ou toute autre saveur que vous aimez.
Ajoutez de l'eau puis laissez cuire jusqu'à ce qu'elle soit complètement tendre.
Si la cuisson a besoin de plus d'eau en cours de route, ajoutez-en plus.
(Vous pouvez également utiliser un autocuiseur pour faciliter les choses et gagner beaucoup de temps).
Quand elle est cuite et tendre, il suffit de la retirer de la casserole, de la faire frire jusqu'à ce qu'elle soit bien dorée.
Bananes Frites:
Lavez et épluchez les bananes, coupez-les (4-5) morceaux chacune. Ajoutez ensuite le jus d'orange aigre et le sel à 2 tasses d'eau,
laissez le sel se dissoudre puis ajoutez les bananes et laissez-les reposer pendant quelques minutes.
Ajoutez de l'huile à votre friteuse et ne laissez pas l'huile devenir trop chaude. Ajoutez les bananes à frire (assurez-vous que le poêle est à feu moyen-bas) une fois tendre, retirez-la puis appuyez dessus tout de suite.
Faites tremper les bananes dans la même eau salée puis faites-les frire à nouveau (cette fois, vous voulez que l'huile soit vraiment chaude) afin que les bananes puissent être bien croustillantes. Gardez un œil sur elles pour éviter qu'elles ne brûlent.
