- So we did a Nagpur tour recently to explore the wide range of unique street food the city has to offer. Taj Matka Roti is a gem we found in Nagpur serving delicious Matka roti also known as Randani or Lambi roti. Matka means a pot. This pot is heated on the inside. A scoop of the slimy dough is then stretched over the arm and draped on a sizzling hot Matka. Within 30 seconds, the crisp, dosa-like roti bread is ready to eat.
After going through all the comments, one thing i could understand is everyone has a child alive inside us ...so all of us enjoyed the sound of doungggggg doungggg as much as the looks of the roti...i guess we should try similar trick as a stress buster ... lets Keep doing dooungggggggg doungggggg 😄

It tastes yummy... Best with non veg curry.. Remaining rotis next day we eat with tea... Memories when my Nani use to make I miss those days

@@onkarpatil5490 i hv made it at my home. We called the professional get it done in front of my eyes. And im a nagpurian this roti stalls are common on road side. These roties are prefered to eat with nonveg curries.

Saw them making this in the souk in Fes, Morocco. Fasinating! I took a picture and the woman yelled at me in such anger I had to beat a fast retreat.

Wheat contains glutenin and gliadin, these are two types of protein. These two remain separate in dry wheat flour, but when mixed with water they combine to form "Gluten". Gluten makes the dough stretchable.
Without water, gluten is not formed. The more the dough is mixed, the more gluten is developed. This causes the dough to become elastic and stretchy, as you can see in this video

This looks really interesting - it's unlike any type of bread-making I've ever seen before.
How is it possible to make such a wet dough that still doesn't stick to anything? I'm baffled and curious at the same time.
It seems like they greased the surface very well, and it's probably very hot, which makes the dough harden quickly. One it has hardened, it won't stick, kind of like frying a steak, it will stick until the surface forms a "crust". I'm not a chef, just guessing. 😉
Something is added to the dough else it will separate out.
Its pure gluten nothing else.
Its plain white flour .
They use lots and lots of oil, in dough, on hands and also on cooking surface.
ppl worried abt sweat and germs: (a) the surface is probably 500 deg C. 30 sec on it and germs are all done for good. (b) Chemical content of sweat remains but then these are not particularly unhealthy.
But bro how can you eat food which has touched somebody's sweaty arms.....
@@Johncena..8 I guess the same way I can drink water from the tap, knowing fully that somewhere up the river, someone has bathed in it. I feel safe just knowing that the city supply has done the water treatment. And yet, I know the water has washed another man's unspeakables :D

This is hands down the best roti you'll ever have in your life! People in my family know how to make this. It is a staple of the Mahar community in Vidarbha region. It is really laborious to make it. It uses floor from a special kind of wheat called Lokwan. The dough is beaten for about an hour and a half to develop the gluten so it can form a thin film.
