This scene goes further than meets the eye... When you watch the series twice, it is understood why Eugene behaved in this manner. Not long after watching this the first time, a few episodes later, it is revealed that Eugene is an FBI informant. He then commits suicide. This scene is most probably around the time Eugene is starting out as an informant. We can see that he isn't feeling well, which he disguises and blames the heat on. We can then see he overreacts and attacks little Paulie. Not long after this, we see how deep he is with the FBI. Another brilliant lead up by Mr. David Chase himself!
This kinda removes any sympathy you may have for Gene later when he's driven to suicide, when he's not allowed out of the mafia by Tony to enjoy his inheritance money with his wife and son.

Eugene's the asshole not being able take a simple joke, and then attacks him unexpected.
This scene goes further than meets the eye...
When you watch the series twice, it is understood why Eugene behaved in this manner. Not long after watching this the first time, a few episodes later, it is revealed that Eugene is an FBI informant. He then commits suicide. This scene is most probably around the time Eugene is starting out as an informant. We can see that he isn't feeling well, which he disguises and blames the heat on. We can then see he overreacts and attacks little Paulie. Not long after this, we see how deep he is with the FBI.
