I have so many of my mother’s old recipes. I’m 88;so you can imagine how old they are. In saying so remember back then they did not have electric mixers so the cookie dough did not get as creamy as the modern cookie. Mixing by hand of course created a dryer dough and not as much flour was needed. I make orange drop cookies from a recipe that’s over 150:years old. To this day I still mix that cookie dough by hand. Just sharing a little yesteryear’s way of cooking.

I have had this exact recipe for years from my ancestors. These were a.ways part of our holiday cookie tray. My recipe has an icing for the cookies made with brown sugar ,coffee and powdered sugar and butter. It's delightful.

My grandmother didn't have a cookbook. She had memory. I was able to learn the basics of country cooking, but sometimes she would prep so quickly that I had trouble catching them with my own memory. She wouldn't talk, she would do, moving from cabinet to cabinet and pulling out what she needed. Once everything was out, she went from one ingredient to the next, scooping a spoon of this or a couple of spoons of that, all without a word. It was strictly 'watch and learn', as she liked a quiet kitchen. I was lucky she would even let me watch.

And I was raised with my adopted brother. My adoptive parents weren't able to have children of their own. I truly have a success story with being adopted. Not many can say that. I am now 51, and my brother 55. My dad is 83. And is still taking care of the house I grew up in. In the country. Without his wife and my mom. Needless to say, lol. I have tons of recipes to share. My grandmother's mother ran boarding houses while my grandmother was growing up. Both ladies were great bakers. My mom grew up i. The 30s and remembers watching them bake and watching them check temperature by putting a hand in the oven, even when using a recipe with oven temperature given.

Glad to hear you add coffee to your chocolate baked goods. I use espresso powder and normally mix it will a little of whatever liquid is being used to dissolve the powder.
Coffee enhances the Chocolate flavour. Cinnamon does as well. I have heard that a small pinch of Cayenne Pepper does as well, but I’ve never tested this!
Yes, we have heard the same thing. I love how cinnamon flavors and enhances recipes. Coffee definitely does the same thing. I don't know about cayenne pepper, but it's a reasonable guess that it might.
Tom occasionally has a coffee when we are Derby Dinner Playhouse but almost never anywhere else. But with or without coffee, the cookies are fantastic!

Tried these cookies and found them to be a little too sweet. They have a very different texture and took more than 15 minutes to bake. We like trying different recipes so thank you for sharing this one.
It was probably that 2nd egg yolk in the batter that required some of the extra flour. LOL. I am anxious to try these cookies, a little nervous about the walnuts as we do not like them. We always have pecans, though. 🙂. Thanks for this and all the recipes you share. Bless you both!

These are a substantial sized cookie, they look filling, like you could only eat one…well unless you’re Tom of course lol! @@comesitatmytable9044 when I first started there it took about two weeks to not feel like I was going to vomit at the end of the day from the smell. I did over time learn to enjoy the smell but never the taste.
Thank you❤ I omitted the cold coffee 😮 I ran out. I omitted the walnuts 😮 I ran out. I started with 4 coos of All Purpose Flour and stuck with that 😮. I omitted the raisins and went with frozen blueberries and Blueberry Green Tea 😮. I omitted the shortening and butter 😮. I went with Pink Himalayan Sea Salt 😮. I set the oven to 360 degrees and baked for 15 minutes 😮. I am taste testing with a glass of milk with lactose 😮 now. While, the second batch is in the oven. 😊 😳 WOW! I'll bake these again and again. Thank you🎉 baked on parchment paper. Soft like a soft Ginger Bread 🍪 Cookie I used 1 1/2 cup Blueberry Green Tea. And simply forgot to add the melted softened butter and Duck Fat, it remained in the microwave forgotten and only noticed upon clean up, while I was stuffing my face with yummy Blueberry Cookies. Now, the second batch is cooled and ready to taste test 😮. And only two of the first batch remain. 😮 I'm full of cookies now.😊❤ Yup 👍! Second batch as delicious as the first. Tom and Melissa, love your channel! If you like using the scraper beater, try slowing your mixing speed down until all flour is added, then turn up the speed to finish mixing. That works best with both beaters for me.

I will probably mix in the additional flour by hand to prevent friction from the beater, which could make the dough too soft. Also this would help prevent the gluten from developing too much, resulting in a tougher texture. Just a thought! Thanks for sharing!
Hi Tom and Melissa, you should use your flex edge beater. It doesn't cause flour to fly out, it's the speed you're using. When adding flour you should use #1 or #2 speed, also for adding chocolate chips and nuts, etc. I have a Mixer Bible. It's a stand mixer encyclopedia, also great for all stand mixer attachments. Melissa, tell Tom that the speed of the. Kitchenaid can be fixed. I had to fix mine once. I used 4 at once,I was a cake decorator/Baker for 50 years. Google it ! I love everything I have made, and I have mademany of them. Another tip; I don't buy or make brown sugar anymore. I use cane sugar and add 2 tsp. Molasses for each cup of sugar used. Same results!!!!
Hello from Lincolnshire UK. I am definitely going to give these a try, my hubby loves coffee. I adore old recipes they are just the best. I just hope I get the measurements correct, here we use grams or pounds and ounces. I do have a cup measure so things like flour and sugar are ok, when you talk of 2/3 cup of fat then I have to convert to gram's 😊 I only found your page yesterday and I'm going to try making your Amish white bread & this recipe. I have heard that a small pinch of Cayenne Pepper does as well, but I’ve never tested this!
Yes, we have heard the same thing. I love how cinnamon flavors and enhances recipes. Coffee definitely does the same thing. I don't know about cayenne pepper, but it's a reasonable guess that it might.

Tried these cookies and found them to be a little too sweet. They have a very different texture and took more than 15 minutes to bake. We like trying different recipes so thank you for sharing this one.

It was probably that 2nd egg yolk in the batter that required some of the extra flour. LOL. I am anxious to try these cookies, a little nervous about the walnuts as we do not like them. We always have pecans, though. 🙂. Thanks for this and all the recipes you share. Bless you both!

That's incredible. You worked at a Starbucks as a manager but did not like coffee! It's a taste I never learned to appreciate.

Thank you❤ I omitted the cold coffee 😮 I ran out. I omitted the walnuts 😮 I ran out. I started with 4 coos of All Purpose Flour and stuck with that 😮. I omitted the raisins and went with frozen blueberries and Blueberry Green Tea 😮. I omitted the shortening and butter 😮. I went with Pink Himalayan Sea Salt 😮. I set the oven to 360 degrees and baked for 15 minutes 😮. I am taste testing with a glass of milk with lactose 😮 now. While, the second batch is in the oven. 😊 😳 WOW! I'll bake these again and again. Thank you🎉 baked on parchment paper. Soft like a soft Ginger Bread 🍪 Cookie
I used 1 1/2 cup Blueberry Green Tea. And simply forgot to add the melted softened butter and Duck Fat, it remained in the microwave forgotten and only noticed upon clean up, while I was stuffing my face with yummy Blueberry Cookies. Now, the second batch is cooled and ready to taste test 😮. And only two of the first batch remain. 😮 I'm full of cookies now.😊❤ Yup 👍! Second batch as delicious as the first. Soft, yet firm and definitely by my error a fat free delight🎉!! Thanks to you getting me into my apron. :) AL

Tom and Melissa, love your channel! If you like using the scraper beater, try slowing your mixing speed down until all flour is added, then turn up the speed to finish mixing. That works best with both beaters for me.

I will probably mix in the additional flour by hand to prevent friction from the beater, which could make the dough too soft. Also this would help prevent the gluten from developing too much, resulting in a tougher texture. Just a thought! Thanks for sharing!

Tom always says to make a recipe your own. The cookies would be great without the raisins, too! It's great having you at the table with us.
Hi Tom and Melissa, you should use your flex edge beater. It doesn't cause flour to fly out, it's the speed you're using. When adding flour you should use #1 or #2 speed, also for adding chocolate chips and nuts, etc. I have a Mixer Bible. It's a stand mixer encyclopedia, also great for all stand mixer attachments. These Drop Cookies 🍪 look and sound delicious! I don’t like or drink coffee either. My family were and still are Tea drinkers. But I love smelling Coffee! My sister bought me a cutest old fashioned coffee candle. Walnuts adds moisture that’s needed in my Mom’s Tunnel of Fudge Cake from the 70s. Thank you so much for sharing this recipe!! Looks like a good cookie...I am a coffee nut lol I drink coffee hot, cold, iced and spiked 😅 Walnuts are a nut I've come to use more that any other after see an article about foods that resemble the part of our body that they enhance...walnuts are brain food!!! I'll try this recipe.

Melissa, tell Tom that the speed of the. Kitchenaid can be fixed. I had to fix mine once. I used 4 at once,I was a cake decorator/Baker for 50 years. Google it ! I love everything I have made, and I have mademany of them. Another tip; I don't buy or make brown sugar anymore. I use cane sugar and add 2 tsp. Molasses for each cup of sugar used. Same results!!!!

Hello from Lincolnshire UK. I am definitely going to give these a try, my hubby loves coffee. I adore old recipes they are just the best. I just hope I get the measurements correct, here we use grams or pounds and ounces. I do have a cup measure so things like flour and sugar are ok, when you talk of 2/3 cup of fat then I have to convert to gram's 😊 I only found your page yesterday and I'm going to try making your Amish white bread & this recipe. Take care of you & yours, keep these great recipes coming.
