- Want to make better chicken at home? Chicken is one of those very ‘basic’ ingredients and yet I think its ubiquity has somehow relegated it to the ‘not so special’. But it can be, whether you’re roasting from scratch or using a store-bought rotisserie chicken. I do love to use the very best techniques to get the best out of ingredients like chicken but I’m also not adverse to saving time… and we all need that more often than not.

When the kids were small, I would roast a few chickens on Sunday to have it easy cooking in the week. The butter chicken will be made this week, and maybe I will have to roast a few chickens this week.

Kasoori Methi aka Dried fenugreek leaves are a must for a good butter chicken. Try adding them when the dish is still in the pot. The warmth of the pot helps its flavor to marry with the tomatoes and cream sauce. And Marion- Its just Naan and not Naan Bread.

What a great video, despite the fact there's not one fried chicken recipe from la reina de pollo frito. These are for me real world home cooking recipes and we can always use ways to use roti chicken and we're always happy to find yet another spatchcocked chicken approach. Thanks again.

Marion, you are the best! Though rotisserie chicken is easily accessible, I don't buy it too often because we tend to eat the thighs and then struggle with what to do with the breasts other than make chicken salad. Now I have a couple of excellent, easy options. Thank you SO much! I will be trying All of these recipes in the coming weeks.

For Butter Chicken/Paneer you don't need that much butter. Let me explain:
As britshers weren't that culturally or linguistically involved in India they misunderstood what butter in Butter Chicken meant!
In Hindi "Makhan" means butter but here in cuisine it also means creamy, smooth & buttery (not in the literal butter but more as in silky texture kind of thing). Also can be called "Makhani".
So instead of putting unhealthy amount of butter in to butter chicken/panner, try to soak some cashews in water for 10/20/ 30 minutes or use warm water to fasten the process & grind them into paste & add that into the sauce, it will give that real authentic buttery, silky, smooth texture to the gravy. Trust me you will love it. Adding that much butter isn't healthy in an already heavy dish! Use cashew paste instead.
And for some basic All-rounder masalas for veg/vegan/non-veg dishes, some of the most basic masala I would suggest are:
Coriander Powder, Kashmiri Lal Mirch (gives color without much heat), Cumin powder (can also be lightly roasted), Turmeric powder, Garam Masala (King of Masala, should always be added when cooking is finished at the end & just simply stir it after you have sprinkled it over the dish, adding it with other masala is waste & doesn't have any effect, best for all veg/vegan/non-veg dishes) & last Sabaji Masala (sabaji in Hindi means vegetable) its more oriented for veg/vegan dishes.
These are the basic powder masala that can cover 60-70% of dishes without any problem.

Hi! First off, I LOVE your recipes. SO accessible, so delicious, and I love the production of your videos, you're truly one of my favorite chefs! I don't often comment, but I did want to pop in with an alternative view to pre-diced garlic and ginger. I used to completely agree with you - how hard is it to chop a clove of garlic? Why would anyone use that hideous jarred stuff?! Thennnnnn.....I was diagnosed with a disability where it's hard to be on my feet for long periods of time, but I still want to make food from scratch. Enter....jarred garlic, pre-minced veggies, and the like. I realize it may upset experienced cooks, but as a fairly experienced home cook, it truly makes the difference between being able to put a home cooked meal on the table (with a few helpers) or having to order take out or to resort to frozen pizza. The pre chopped veggies, mirepoix, herbs, and other "helpers" keep me cooking the way I'd like to, albeit with a few shortcuts. To be honest, in most applications, you can't tell the difference. It's the same with the rotisserie chicken shortcut, you do what you need to do to get a homemade meal on the table. If you see someone using these shortcut ingredients, please don't assume they are just lazy or a psychopath. Some of us just need a little helping hand to feel like our food (and lives, and love for cooking for our families) are still possible. ❤ Can't wait to try these recipes!

I grate ginger and freeze it. Does well in soups and stews. I don't think rotisserie chicken comes out as flavorful because since it's cooked, it doesnt soak in the flavors but it is a fast way to make a meal.

So, your mayonnaise tip for crispy chicken skin......I was making a J. Kenji López-Alt recipe where he said if you don't have a convection oven the skin might not crisp as much......so I added homemade mayonnaise on the marinated skin........wow.......came out perfect, sooooo crispy

How long can you keep bacon grease or lard for?
A couple months in the fridge. Or freeze it for up to a year. But just be sure to smell or inspect it before each use. I keep an eye out for any weird discolouration or rancid smells. If those exist I bin it straight away

Oh no! Kasoori methi is not a garnish (although, I guess you can use it as a garnish as well). It should cook in the curry for at least 2 minutes.

Hey Marion, I've always loved most of your recipes but this isn't one of them. I'm an Indian living in India and this is the west's version of our butter chicken. It is an uncomplicated recipe and that gravy isn't it. Sorry.
