  • Pasta can mean different things to different people… and mine isn’t always so traditional. But you know what? Pasta is such a personal dish, and I'm here for it. This is pasta, but my way: with surprise Asian ingredients that you'd think would have no place in an Italian dish, how I sneak hidden veg into my family-style bolognese, what to do with leftover meat sauce and my winning recipe for homemade pasta.

    You can also cook eggplants the way Italians do, by frying them until golden like you would in a puttanesca. They’ll be sweet and feel like meat bits. Add them just before serving.

      Durban Indian community has always used brinjal. Fried, curried etc. Also good fried in batter.

    My daughter found out that I put brinjal in the mince when she was in her twenties. Told me I was a bad parent as she does not eat brinjal and I lied to her. She now does the same to her children. Circle of life.

    Hello there from Central Mexico!! I am a Chef specializing in Classical Mexican Cuisine but I do cook everything else, love Thai and all Asian dishes! Wanted to write to tell you about my "cheat" for Lasagna in case you don't find Ricotta, which used to happen a long time ago, so I use plain old Cottage Cheese, add 2-3 eggs, salt & pepper any additional spices you like and some melting cheese on top, now I don't beat it so much since it won't matter so just bring it all together and use as a regular Bechamel layer in the dish. This will firm up with the baking and you'll get a nice even creamy layer to your lasagna, of course, Parmesan Cheese and do your layers as regular... hope you try it.

    Made the first recipe tonight but replaced the eggplant with a sweet potato & a little capsicum, because that is what I had, and so delicious! Will definitely make your way from now on, thank you ☺️

    There are ragus all over Italy, the bolognese is just the most famous. So while we might not be able to call it a "proper" bolognese, it's still a totally legit ragu and I would smash it 100% if I ate meat. Might have to make it with lentils or a minced veg mix. 🤤

    made your bolognese tonight! added spinach on top of the sauce at half time... and red pepers... It was a win for my son!!! Parmegiano reggiano on top made it the bomb!!! Thank you for this deliscious recepie! and yes i added soy sauce!

    Ohh how I understand the Asian twist on Italian food! I travelled twice to Hong Kong and fell in love with the culture and food. Since,, I myself put a little twist of Asian in every recipe even Algerian’s I grew up eating. My sister is horrified everytime I do it but I’m not stopping it life is too short!!

    Love the clever ways you created to use leftover bolognese, definitely want to give that a try. Also love the other recipe of fresh pasta with tomato, butter, garlic with an Asian touch. Both winners, thank you Marion, you are the best!

      Very much, particularly adding aubergines to my bolognaise repertoire. I hide lots of veg from myself in my bolognaise, (even as an adult, not good with veg) I grate carrot, parsnips and courgettes into mine 😀

    For me here in the Philippines, I use canned Spanish sardines and infuse it Creamy herb and garlic pasta sauce with lots of cheese and fried garlic and chili flakes. One of my most requested pasta creations ❤❤❤

    I've been doing something rather interesting lately. I've been making oat porridge and making it asian, with sesame oil, soy sauce, chilli, coriander, sping onion and eggs! It's really good and wonderful for your insides!

    I ‘ve been adding soya sauce to so many dishes over the years, including Italian. It takes it to the next level and my kids love it as well! Try adding it to Indian meat marinades as well, sensational. Thanks Marion 👍🙏👏

    I eat bolognese with sambal belacan (Nam prik kapi is a close equivalent) as a condiment 😁

    Poor Vincenzo, he's gonna have a heartattack over 'his' Italian cuisine not being made per decree 🙈🙈🤣
    That said, I love your creativity! And this all just seems so yummy 🤤 never had a recipe of yours fail me (well... maybe spice wise, but I'm Dutch our traditional food has NO spice, Nothing! 🙈🙈 and now since that I'm cooking for myself, ive been experimenting and trying to up my tolerance 👌 youtube is absolutely amazing for getting to know different cuisines around the world and trying to recreate all kinds of dishes ❤ channels like these, that respect traditions, but aren't afraid to adjust and be creative (especially for people still getting to know certain foods, traditional levels might be too much of a 'new experience' 😅 having certain other creative options is great!)

    Being Italian i kinda feel as I was the keeper of the holy graal of pasta 😂... However... Pasta is such a flexible base to work on, that will be good with more or less everything and everyone (except French and Germans 😂😂) can cook it the way they feel.

    That leftover roll up dish is a great idea! I'm not particularly fond of cottage cheese 😬 so I'd probably substitute ricotta but otherwise that looks delicious!

    I was on a bus trip around Australia one time, and I put my hand up to help the cook. She made bolognese one night, and put NO MEAT in it! It was completely eggplant instead. I was shocked - but we were the only ones who knew, and you couldn’t tell there was no meat.

    I haven't eaten eggplant before. I think it's the look that doesn't appeal to me, but I liked the way it melted down in this video. Maybe this might be a good way of introducing eggplant to my taste buds. 🤔😇😁

    Maybe it’s the style of pan I’m using but I cannot for the life of me get mine to look like yours. What am I doing wrong?!! My sauce doesn’t get thick or stick to my pasta. It’s so frustrating. I don’t bring pork in my home for religious reasons (I’m Jewish and I try not to but I do eat it), so I use beef bacon and beef mince.

    How did you cut the carrots so small for the bolognese?

      I enjoy chopping LOL. You slice the carrot into thin sheets and then julienne and then chop into cubes. Or you can use a mandolin to slice into julienne and then dice :-)

    What can be used instead of meat in a bolognese sauce? We are vegetarian.

      Fellow veg here. I like a mix of finely minced mushrooms (king oysters work quite well, or rehydrated shiitake), zucchini, and eggplant. You could use a fake ground beef substitute, but I like to keep it less processed. 😉
