In this episode, I went with a lot of people's recommendations on where to buy meat online and purchased some Dino ribs from the folks at porter road. The packaging and shipping was very good and the meat was trimmed and cleaned.the quality is unmatchable on these dry aged ribs.
the whole experience was excellent and will definitely buy again from them...enjoy

Do you actually go by your thermometers or do you go by a grate probe. I have a 1975 also. My grate probe usually runs 25 degrees higher.

It's unfortunate they left the lifter muscle on top. I'd love to support more small/local businesses but until they get the butchering correct I'm not going to waste money paying for meat weight that needs to be trimmed off
