I was expecting you to grill them over charcoal. Then you said you're going to smoke then cold water. Now that's some Moroccan American fusion. BTW, that snap is unbelievable, "I like that". Good job. I've been using collagen casing. I only bought lamb casing once, I got them from a local butcher and was disappointed. The lamb casing you have seem to be well packaged. Are you happy with them, would you recommend?

Bought a similar 6" press, sure makes it a zillion times easier!. Stupid gas grill was fighting me though 🙄, some were a bit too rare.. A HOT cast iron skillet ftw!

anything stopping you from freezing the other breasts in the vacuum bag before the sous vide. then sous vide them as you need it? im not likely gonna need to have 6 whole turkey breasts cut up at once
you can do that too...cook as you go
I use a different method. I season and smoke the tongues between 200-230 degrees for a few hours on my Weber kettle, then I braise them overnight in a mix of beef broth and beef tallow. Made a tongue with some chachete this way and had the best barbacoa you could have short of digging a hole and wrapping a whole cabeza in banana leaves. Coolest part about living in a border town is that cuts like these are plentiful.

What is the ideal temp to start putting your meat on the cooker
you can put the meat anytime you wish... I usually wait till the smoker comes up to temp (250-275) to avoid dirty smoke

This place awesome. Every time I go back home (Lockhart ) to visit my parents, I stop in and buy a couple pounds of brisket and a pound of turkey. I get back home and throw them in the freezer and pull a pound out when I'm feeling that BB-Q itch.

Thanks for the review! I have a 1969 with an ETA for June. Did you add the grate in the firebox to elevate the fire when cooking on the cowboy grill or for another reason?
Mainly for air flow and looks.Also trying to protect bottom of fire box for constant hight heat, usually bottom of firebox is first thing to deteriorate in a smoker.But I doubt it would be the case seeing the thickness of it.
I was just in Marrakech and this is exactly how I was told to make it. I brought a tangia back to the states and making this tomorrow!
