Thank you for the video! I just bought three bone in turkey breasts myself and will be making smoked turkey deli meat next week. Could you post the recipe for your for the brine and the rub? Also I am very jealous of your smoker! Have you ever tried smoking the breasts all the way to 150F or 160F? Does sous vide make them more juicy? I wasn't on planning on sous vide, i was just going to smoke them till 155F or 160F.
The main ingredient in the brine is salt ,sugar and peppercorn ,the rest is personal preference.Rub is just salt, pepper and your spices of preference. And you dont have to finish them in sous vide, you can cook them om the smoker until done.

You were walking up fast on people sticking your camera up in their business while they're helping customers. Some of the people even looked at you like "what the heck do you think you're doing". You cut in long lines, walked all the way to the front counter sticking your camera all up around staff areas like you own the place. Disgusting, disrespectful behavior not just from you but these platforms are turning people into narcissistic zombies who only care about themselves for the sake of "content". .

Why would you trim the picanha cap, Flavor: The fat cap renders while cooking, adding rich flavor to the meat. , Juiciness: The fat cap keeps the meat juicy while cooking.

Does your RFX send a new reading at a timed interval (like every 15 seconds, every 30 seconds) or does it send a signal when the temp changes? Or is somehow both? I do half chickens in a similar way, however i use the offset and finish on the kettle. I take them to 160 or so and then let them rest for a bit. I then fire up the kettle finish them there when im ready to eat. Its a little more work but i like the crisp skin 😊

It turned out well. If you like eye of round......invest in a meat slicer. Those thin slices make it so much more tender. The one I bought was a little over $100 and it was well worth it.
