  • An absolute classic Thai dish that's a favourite of kids and adults alike. If you know my "Garlic Pepper Chicken" recipe, this one is a similar idea but different...apart from the obvious pork vs chicken, we are also deep frying instead of stir-frying, although you don't need that much oil. And trust me, the deep frying makes all the difference!
    It's a dish that you can commonly find sold by street vendors or short order restaurants. (My chicken version is actually not something you can usually buy, but rather something people make at home.) Have it with some rice, or even better sticky rice, and maybe a cold beer :)

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

    I just tried your recipe for dinner tonight, following your directions to the letter. IT CAME OUT AMAZING!!! I couldn't use a whole pork butt though, so I just bought two pork chops, and cut them up. I like my Thai food spicy, so I also bought one serrano pepper, slicing it thin and throwing it in, too. Perfect. This dish was so delicious that its going to be one my my all-time favorites. Thanks for posting.

    That pork is looking so good and I have to remember putting the corn starch in the container with the pork. That is a nice recipe you shared and I have to use it when I get some more pork to cook.

    This recipe is the same way my mother do it.
    But ... sometimes I make a super quick version of deep fried pork. Which only use Seasoning Soy Source (Golden mount, the green cap one. ฝาเขียว/ซอสปรุงรส)
    Use 150g of a thin pork piece, deep fried it .looks done turn heat off and pour extra oil off, left the oil about 1/2 tbsp then immediately pour 1/2 tbsp soy source when oil still hot,
    Then mixed (pork + oil + sauce) with warm rice and add 1/2 tbsp of fresh lime juice. The lime juice surprisingly do the magic (or simply eat with boiled rice).
    The same idea from ข้าวแมว (fried mackerel + fish sauce + lime juice) 5555. Give it a try.

    Awesome! It looks like gochujang bulgogi in South Korea. The way to cook is a bit different tho. I will defiantly try this food. I wanna apply fusion Thai and Korean recipe as well. Thank you for sharing :)

    Made this last night using pork loin. Like Pai said, you have to watch it very carefully so it doesn't get overcooked. Mine came out perfectly. I added some lemon grass and Thai chili's into the marinate to kick it up a notch. Also, I used a wire mesh flower sift to dunk the garlic in the hot oil which saved me the time of scooping it up and created zero risk of burning it. This dish is Dope!

    Pailin,
    This is a great dish to accompany the many different craft beers out there now. Quick and easy to prep ahead of time. Could you freeze the marinated meat to be cooked at another time? If freezing doesn’t affect the overall taste small batches frozen in one layer can easily be thawed out and cooked up when friends come over for a beer or two. Thanks for the quick and easy recipe.

    Hi Pailin, can you do a video in the types of flour to use for the different kind of effects that we want from frying? Eg. Rice flour gives a crispy coat but it can make the coating hard if too much is added. I see that you used corn flour, what kind of texture does it give to the pork?

    I like to cut them in a big piece. It gets a better crust when deep fried. Frying time 2-3 mins then double fry for 30 secs to 1 min. Slice it served with white rice. Yes WHITE! So homey

    I'm not usually 'deep-fried' the pork because I always make the dish when I'm hungry. I can't wait that long (haha). But a crispy fried egg is indispensable.

      Just had to see what Nuea Phat Prik Thai Orn is... not sure what the Orn part means, but search revealed Nuea Phat Prik , Thai Pepper Steak. Sounds very yummy, for SURE. All our usual favorites are there, thai fish sauce, oyster sauce and soy sauce, palm sugar, chili peppers and herbs... Definitely want to try this one. Would love for Kaan’s little Mama to demonstrate the authentic method. ❤️

    Is there any particular reason to shallow fry the garlic instead of deep frying if you're just adding more oil later anyway?

      FrostedCreations It would take longer to heat up the oil.

      This dish is a regular street food dish in Thailand. Most of the time, people will come order and get back to work. So the timing of cooking this dish becomes crucial. Deep fried takes longer time to prepare the oil therefore stir fry is a better option for this quick meal.

      You can substitute with any protein in thai food.

    Hi Pailin, this dish is indeed delicious, thanks for sharing the recipe!
    I have a question for you, and I would really appreciate if you'd have the time to answer. My latest recipe is stir-fry asparagus (ผัดหน่อไม้ฝรั่งกุ้งสดเห็ดหอม
    ), and someone told me in the comments that it could be dangerous for health to just stir-fry asparagus without boiling it first. I have no idea if that's true or not, tried to search on Google about that but couldn't find nothing. Since you are a Chef and you know Thai food very well, I was wondering if you could tell me if that's true or not ?

      Hi Nin! Only the young stalks have some toxicity if eaten raw, but even if you eat raw, which wouldn't be enjoyable, the symptoms would be very mild. Once you cook them they're safe to eat. The mature asparagus like you used is completely safe, and you cook it any way you want
