    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.       Tried it, thought it was overpowered by the sesame oil - I would halve it next time - otherwise I liked it a lot

    I made this recipe and took it to our local monastery for a Magha Puja meal offering. Our community is Theravada, Thai Forest tradition, Ajahn Chah lineage. It was very well received. The monks usually don't finish all the dishes offered but they finished this one. Your ideas of roasting the cashews and searing the chicken made this much better than other versions I have made. Love your channel and cook books.

    I watched the video last week and finally made it tonight. What a PERFECT recipe. I could not get thighs so used breast; your marinade trick with adding water worked beautifully. Also roasted those cashews fully, as directed. Better than takeout for sure! Can’t wait to make more of your recipes!

    I have made this recipe for the first time, my teen daughter loves Thai food but so far she wasn't very keen on my attempts at home cooked Thai food. This time, using your recipe and recommended Thai soy sauce and chili paste, it was a wow. Thumbs up from my daughter. Thank you for sharing this.

    Hey Pailin, I just wanted to say I love your channel. I have wanted to make Thai food for a long time. I have your 2 books and have learned so much. I made your stir fry sauce and made the best shrimp stir fry I have ever tasted. It had sugar pea pods, broccoli, onion, mushrooms, carrots, and garlic. My family loved it.       Make sure it's a big one. For curries those small ones you usually get in shops aren't big enough.

    I’ve lived in Thailand for 30 years and have tasted this dish in at least 40 different restaurants. This recipe is the best best I’ve tasted. The only change I made was more than double the amount of chili paste. It’s the chili paste/oil that makes the difference between this dish and the bland stuff sold to foreigners in Thailand and overseas, in my opinion. Thanks so much - now I can really enjoy this at home!

    I made your recipe this past Sunday. Wow! Wow! Wow! (My best Mark Wiens' impression.) It turned out to be my best ever Thai dish. I'm teaching myself how to cook Thai dishes using your cookbook. I added three Thai chilies during the garlic/onions step of the cook. And, I roughly broke up the cashews in my mortar in order to have more smaller pieces of the cashew flavor spread in the dish. I have got to do this again very soon. How about tomorrow, ya'll? I can't pronounce the Thai name for this dish, but I sure can whip it up and tear it up. ;)

    I live in Houston TX and we have many Thai restaurants we go to where I have their Cashew Chicken and it is my favorite meal to eat above all else!     I made this last night and it was SO GOOD! I had the universal stir fry sauce ready to go. Great tip roasting the cashews more. What a difference! Will make this again and again!

    Made this for the first time today, and it was delicious! Now that I have several of the basic Thai ingredients, I found the recipe quite easy. (It's especially easy if you have a husband that does all the prep!) In addition to tasting great, the dish looked great. Thanks so much!

    This is a simple and terrific recipe! I followed it precisely, however, I did go about 10% over on all of the vegetables and thighs. To compensate, I added 1.5 tablespoons of water to the sauce to stretch it out. It came out perfect. I wouldn’t deviate at all from her sauce ingredients. I was able to find them all in an H Mart here in the US. And yes, roast those cashews! It really makes a difference, and use unsalted. I had raw cashews on hand so I had to do it anyway. I highly recommend this dish! 👍👍

    I just made this for the first time tonight, my parents came round for dinner and we all loved it! I doubled the amount of chicken for my fitness diet, and so I added more soy sauce to marinade in and it turned out fantastic!

    made this tonight, absolute keeper, turned out fantastic! I did add a handful of sweet snap peas for some additional crunchy texture and flavor, just dropped in at the end to warm a bit but keep tight. Wonderful recipe that's gonna be in rotation here, thank you!

    i dint have chili paste. i used sweet chili sause and left out the sugar. 2nd time i made it added a couple hot thai chilies. really good. i love your vids !!!!! taught me a lot...

    Made this last night. I found the golden mountain sauce at my local H mart and used gojujang instead of Thai chili sauce. I am using the Thai sauce tonight to see the difference. I loved this recipe.

    Good deal Pailin making this this weekend for family. I use thai green curry paste for seasoning in many American dishes, I serve it on the side because not everyone likes the spice or the herbalness (Guess that's a word). Definately will try the heat on the side for a couple of family members, or they can just have oatmeal :D

    Used Maggi Sauce as a substitute…. And was unable to find Thai chilli paste but used a hot chilli pepper paste from Korea that seemed to provide a good flavour as well.

    Amazing! Another gem tutorial on an amazing dish. By the way, I made your Thai green curry for my mom and she really like it. She said, "ใช้ได้" (loosely translated meaning, "usable"), which was high praise coming from her.

    I got the golden mountain sauce, Thai chilli paste and dried chillis delivered because they don't stock those kind of things in shops where I live, but I wanted to make it authentically, and I've go to say, worth the money and extra effort, it's the best I've had chicken and cashews since I was in Thailand!

    We made the glutenfree version of this dish (used tamari, and glutenfree Kecap manis, gochujang +more sugar), delicious, definitely gonna make it again! Ty Pai!
    Side note: I fried 2 chillies (not 7-10), one for my partner one for myself, and i tried half of mine, couldn't bear the heat :D , but my partner told me his was spot on.
