How to make Vegan Chitlins... Vitlins!

  • Vegan Chitlins/Chitterlings👍🏾Tasty “Vitlins”
    Recipe and Health Benefits.
    Created by Dr. Mortonette Stephens Ph.D.
    Main Ingredients : frozen “Bean Curd sheets the folded ones..name brand EVERBEST Fresh Soy Chip (vegan) NON-GMO made with soybeans 500g / 17.64 oz.
    I like the fresh or frozen cause the texture is more like the meat Chitlins..
    *However as an option you can use dried bean curd sheets.. you’ll just need to cook them in lots of water..until they get soft..then follow this recipe..
    You can get both kinds at Asian markets...
    1. Before you get started; if using the frozen let them thaw out.

    This is a frozen package.^ ^ ^
    If using the dried bean curd sheets
    Follow the above instructions for Options.*
    Vegetables
    1-2 jalapeños (if you don’t want a lot of heat take out the seeds)
    1-2 green bell peppers
    1 onion
    4-6 cloves garlic
    2. Prepare vegetables
    Chop up finely or use Food processor. I generally use the food processor.
    Preparation:
    3. In a skillet put 4-6 TBS OIL (I USE GRAPE SEED OIL)
    sauté the chopped up vegetables
    4. While the vegetables are cooking rinse the Bean Curd (also known as Yuba skin) in water and gently squeeze out the excess. put in a bowl
    5. Next, pull Bean curd folds apart into strips the size of those stinky pork Chitlins you use to eat! Tehehaha or any size you want. Viola you’ve just created your ‘VITLINS’
    6. Now add the VITLINS/ bean curd to the sautéed vegetables.
    7. If using the boiled dried bean curd sheets… remove from the water and add to the sautéed vegetables. And follow the directions as follows.
    8. Cook for 3 to 5 mins then begin adding 2TBS water at a time to steam it a bit, continue stirring and adding 2TBS of water at a time while it steams, repeat for approximately 15-20 mins.
    9. Now it’s time to add the seasonings.
    SEASONINGS:
    1-2 tsp Onion powder
    2 tsp Garlic powder
    Brags Aminos 3-4 TBS
    1 tsp Organic mellow white Miso paste
    Yellow mustard 1-2 TBS
    Cayenne pepper to taste
    Optional : crushed red peppers dash -1/8/to 1/4 tsp
    Lime juice 1-2 TBS
    Add Liquid Smoke last: 1 to 2 drops
    You can add a lil vinegar if you like that flavor.. optional
    9. Mix well stirring until the vegan Chitlins/ Vitlins are seasoned through; about 10-15 mins.
    ATTENTION: The balance between the yellow mustard, lime juice and Braggs aminos are the main seasonings, that give these Vitlins that (pork chitlins taste) so play with these flavors to customize for your taste buds.
    The secret to getting these Vitlins texture like the meat Chitlins .. cook them the day before put them in the Fridge over night.. then right before you’re ready to serve them... in a saucepan add 1-2 TBS oil ( I use Grapeseed oil) heat it up then add the sautéed Vitlins from the fridge and add the following ingredients to your taste:
    a lil mustard, lime or lemon juice, Himalayan pink salt, or a lil Braggs Aminos for a lil salty flavor, stir through and taste as you go until it’s the flavor you love.. the texture will truly surprise you! Use seasonings of your choice at this point!

    I never heard of Mr. Thomas. I wish I’d heard of him before. I use athletes as examples when I talk about a vegetarian diet. A gentleman of his age, especially a Black man, is always great to hold up as an example of the positive effects of a plant based diet. Another thing I think about as I watched this video is the disappearing of our culture. Our food isn’t “healthy”. It is food that helped us survive. This video shows that we can still have our food, and our culture, but in a healthier way. You didn’t disparage anything. You treated like the precious thread that it is which helps create the beautiful tapestry we are.

      Same, only nobody liked them . I even had plenty the next day (cause nobody liked them) and tried different ways to yum then up (admittedly, I didn’t have grapeseed oil but I did have various other kinds) and nothing worked. 😞

    The Asian supermarket near me did not have bean curd skin 😢 but I couldn’t wait so I decided to try this recipe with oyster mushrooms. These are better than pork chitlins and I didn’t have to spend a lot of time cleaning them. I’m ready to do this recipe with the bean curd skins asap! Good job DR!

      That authentic taste your referring to comes from the miso, lime juice, yellow mustard. And if you like the vinegar... and let’s not forget the Hot sauce.. but favor it with these to your own preference! And remember the tip in the video to prepare the day before and put in the fridge.

    This video is a little dated but when I tell you these Vitilings are the exact replica of the real thing without the stinky smell. Oh my goodness I made these last night and had cold slaw on top. I didn’t know what to do with myself I was like just wait one darn minute these have the same texture and taste where have you been my whole life. Anyone wondering yes these are the truth. The whole recipe just tweak it to your taste.

    How many times you gonna call them stinky? FYi Aunt Bessie Brand sales the upper part of the intestine, it comes out the bag clean. But if cleaned properly and soaked in vinegar or lemon juice there is no reason they should “stink” . Garlic and Cabbage stink as well , its not a argument or reason to discontinue them. Organ meats have tons of benefits, the issue liesnin the over indulgence in eating meat, notably muscle meats. Lol at “dead flesh” Please stop shaming non vegans 🤣 I agree that vegan diets will take help us reach a eco friendly, cruelty free , sustainable society. But shaming, thats not it. Everyone watching this video is here to learn and do better 💜

      Greetings Bazı, Thank you for your opinion on this video... FYI like I said in the video I loved those stanky pork chitterlings I grew up on, and they filled my tummy and heart with love and memories. My intention wasn't to slam on non- vegans, and the video wasn't made for non-vegans. (smile) I can truly say my MaMa certainly didn't know about Aunt Bessie Brand cause the one's we had to clean were very smelly back in the day....So Thank you for sharing your information about the Aunt Bessie Brand for anyone who can use that information. And I certainly agree that Organ meats have benefits, as well as we as humankind over indulging in the eating of meats. And Dead flesh is "dead flesh" didn't say it to slam anyone, it's just a fact! It is what it is... But Bazi most of the viewers checking out a video on how to make Vegan Chitlins may just have to pass your info along to whoever is choosing to eat the pork chitterlings/meat. I've learned a lot from your comment, and I wish you many happy love filled meals with the chitterlings of your choice. As for me I LOVE MY VEGAN CHITLINS/Vitlins tehehaha! and I'm creating new love filled family memories with them. Be Happy and know whatever another is choosing to say or do with their opinions and eating choices, don't have to make you feel any kind of way at all.
