Recreating food dishes is important for any & all culture. That's how new dishes come to be. I always thought chitlins for Bland and only take on the flavor of whatever they're cooked in which makes tofu a perfect vegan/vegetarian substitute
I grew up eating chitterlings but haven’t eaten them in 10-15 years but I’m soooo eager to try your recipe. I’m sure it taste far better than actual chitterlings.
I love Asian markets! You can get some really good deals there. I had always been afraid of buying products that say artificial beef, pork, chicken flavor etc on them because I thought they'd find some way to sneak in other animal products that aren't listed (looking at you, imitation crab). But good to know these type of products can be vegan!

Every single time someone asks why vegans eat vegan substitutes, I immediately think they are not too bright. You can't even hazard a guess why people who ate certain things still wanna have them, but catered to their needs now? So people who became diabetic shouldn't have sugar free desserts? Or people who are lactose intolerant can't have milk alternatives? They know why. Nobody can be that dense, I hope
