You demonstrated two Japanese recipes: steamed egg custard and Tamagoyaki. I have never tried making steamed egg custard, but this method is the simplest. Keep the egg recipes coming; they are cheaper than meat and can provide good nutrition.
The steam eggs are more Chinese style than Japanese Chawan Mushi. The Tamago Sando is too watery. And the tamagoyaki is overcooked and not supposed to be rubbery thin. All in all, very unauthentic. I wouldn't call them "Japanese recipes"
My husband is pure Japanese and he taught me how to cook Japanese foods. I always cook Japanese egg without oil. Just last day only I cooked eggs same like that and I pour Japanese soy sauce on the top to make more delicious.

love love love the egg recipes ... I adapt them a bit ... as a diabetic I do not eat carbohydrates, so no rice, pasta and no bread ... I often use lettuce or cabbage leaves for bread, and sometimes nothing else ... one of the best ideas that I didn't know was making mayo from boiled eggs and boiling eggs in water in the microwave... thanks for the tips... one more question, can you make a dinner without carbs and sugar ?

I also have a tip 😅 : In the winter, I boil the eggs for four minutes (I want hardboiled), take them out and put them in my pockets to keep me warm. After they very slowly cool down (I might carry them for an hour) they are perfectly cooked for me and still warm.

Boil the water first and then put the eggs in...the shells will always fall off when peeled under cold running water. Boiling the water before you put in the eggs is critical.

When using the mincer machine, when you have put all your food in, put a slice of bread in. It will force all the unminced food through. It’s easy to stop the mincer when you see the bread starting to come through and get every bit of your good things in your dish.

My air fryer is a dual Ninja and each side holds 2 slices of bread so I could make your egg sandwich for one in the air fryer. That's a great idea. I also cook 4" round egg frittatas for egg sandwiches in individual silicon molds. Try making some things using the 4" round molds as I'm interested to see what you come up with. I love the poached egg in the microwave idea and will try that in the morning. You are the only chef I have seen toasting bread in butter in the skillet. My experience is that the toast comes out so much more flavorful than if toasted in a toaster and then spread with butter. Is that why you do it that way?
In my household, these amount of cream or butter will truly be called 'hearty' breakfast. Dont get me wrong, the flavour comes from the risk is definitely worth it as long we dont cook it frequently
