    • How to make Tamales | ...
    INGREDIENTS FOR SWEET CORN TAMALES
    2 lbs (908 g) fresh sweet corn kernels (6 to 7 ears of corn)
    1/3 cup (70 g) instant corn flour for masa dough
    1/4 tsp salt
    1/2 cup (125 mL) hot water
    8 Tbsp (113 g) softened butter
    1/2 cup (100 g) sugar
    2 tsp (7 g) baking powder
    2 tsp vanilla extract
    20 to 25 cleaned corn husk leaves
    INGREDIENTS FOR SAVORY CORN TAMALES
    2 lbs (908 g) fresh sweet corn kernels (6 to 7 ears of corn)
    1/3 cup (70g) instant corn flour for masa dough
    1/4 tsp salt
    1/2 cup (125 mL) hot water
    1/2 cup (100 g) lard or butter softened
    2 tsp baking powder
    1/2 tsp salt
    8 oz (227 g) shredded cheese of your choice
    30 to 35 corn husk leaves
    INSTRUCTIONS
    Cut the bottoms of 12 to 14 ears of sweet corn
    Remove the outer leaves / husk and clean the corn silk from the corn
    Reserve, rinse and clean corn husk leaves
    Clean and rinse corn
    Using the method of your choice, cut the corn kernels from the cobs of corn
    Divide the corn kernels if making 2 types of tamales
    FOR SWEET TAMALES
    In a small bowl combine instant corn flour, salt and hot water
    Mix well and set aside
    In a blender or food processor add 2 lbs of corn kernels and puree well
    Now add softened butter, baking powder, sugar, vanilla, instant corn flour mixture/dough and blend well
    Add pureed corn masa mixture to a bowl, cover and refrigerate for 1 hour
    ASSEMBLY
    Take a corn husk leaf, add 2 to 3 Tbsp of corn masa mixture in the center
    Fold the husk around the corn mixture and fold the bottom up to secure mixture inside the husk
    In a large 16 qt steamer pot add 2 1/2 quarts of water to the bottom
    Use some of the corn cobs, place them in the center of the pot and start stacking your assembled tamales around the centered cobs in an upright position
    Once you have assembled all tamales, add extra corn husks on top of the tamales, then cover with a tea cloth or towel and cover the pot with a lid
    Place the pot on the stove and turn on the heat to start boiling the water at the bottom of the steamer pot
    Once you can here the water simmer and boil, adjust the heat to keep a medium simmer
    Cook the tamales for 1 1/2 to 2 hours, cook time may vary
    Once tamales are cooked allow them to set in the pot for 30 minutes before removing
    After 30 minutes, carefully remove each tamal and place on a baking sheet to rest for an additional 30 to 45 minutes
    FOR SAVORY TAMALES

    My ex-husband is Mexican and he always bought tamales at the holidays. Beef, chicken, & pork with red and green sauce... dessert tamales of sweet corn and raisins & cinnamon. Such a wonderful feast and many years later I’m yearning to learn how! Thank you for a great video. Done at the right speed with just the right amount of commentary. Well done indeed!

    Thank you for all the tips my sister and I have been making tamales every year since we were teenagers but she passed away in May so I’m going to try to make them by myself this year I have never done them alone wish me luck

    Haven't seen these made since I was a child in AZ circa 1960's. We went to the fields and picked the corn and went from there. We called them Green Corn Tamales.

    I love love love these. I used to get them at roadside stands in Mexico and now whenever I see tamales for sale, I ask if they have elote, but they never do. (And pineapple... I already found that video, too. 💕) I am SO excited to make my own. This is simple enough. Thank you for this fabulous post!

    Your corn tamales look delicious! I’m excited to try your corn tamale recipe as I have found the recipes in your published cookbook to be delicious and user friendly.     Years ago... shooting a commercial for a restaurant. they showed me how they made their tamales... and yes. corn cobs. When I tried it at home... it really made a difference. Thanks for sharing that.

    Tamales are not part of my cultural background, so it took me over three years of practice to learn how. Not a total purest here, I use an electric steamer. I just bought the corn husks and flour to make pork tamales yesterday. My children are grown now , but this was something they loved.
    I asked myself... what makes the Tamale so revered in the Aztec descendants cultures. So I did a little food research. What I found was the process of washing the corn flour (Maza) in lime adds complex B vitamins that go along way in the prevention of birth defects.
    I know I don’t think like a normal person 🙄

      I have read this too! I also read that the Spaniards took the corn back to Spain and didn't know the lime step. It caused a lot of problems. Men obviously didn't watch the women process the corn, LOL!

      I am both in awe of the natives finding how to make the most out of corn and turn a very poor centerbloock of cuisin into a very good one . . . But also compleatly flabergast that even in this day and age nixtamalisation still is not commen practise elsewhere despite many poor people mostly of of corn.
      It is knowen, it is sientificly droben, why is not it in use?!

    Girl, I give you kudos for your determination with this :). I've also never heard of forcing the corn through the hole in a bundt pan but rather using the hole as a resting spot for the cob so it doesn't slip while cutting.

    This made my mouth water. Looks a lot easier than the meat stuffed tamales. I want to add some chopped roasted poblanos or hatch chilies to the savory with the cheese. Do you think that would work?

    I have not seen a recipe like this before for tamale. The savory ones set up so nicely I guess because of the cheese, if you like a little heat the savory would be excellent with pepper jack cheese, but I would like with a nice white cheddar. This was a really great video for recipe and technique as well. Thanks for all your hard work to show us this.

    Tamales are my favorite food and the corn ones are my favorite. I live just up the road from Zwolle, LA, home of the Zwolle tamales. The thing is, no one knows how to make corn tamales. Im a really terrible cook and these look like a whole bunch of work but I think I'm going to set my cap and give it a go. Thank you for the recipe and instructions.

    Us Native Americans bake these..not as much ingredients used..and we double wrap them. We call them kneel down breads. I'm definitely going to try these though. Thanks for the recipe.

    😄 I've been trying to find videos in English that shows how to make it to Disha no way other videos will show this but using cornbread when they make the tamales thank you so much for showing them the correct way of making it!!!!

    I love, love, love tamales!! The best ones I’ve ever had was Zwolle tamales from Zwolle, Louisiana. We lived in Louisiana when we first got married and always stopped when we went through there going to my folks in Arkansas. I can’t wait until we move to Arizona, and I can buy Mexican table cream. They don’t seem to carry it in Pennsylvania!! lol

    I'd have to make these right after a meal because I couldn't wait the many hours it takes to make them to eat them. I'd probably make them for the next day. Or, maybe not. Thank you for the wonderful recipe. Do you cook professionally and/or have your own restaurant?
