    I made tamales for the first time. I made them specifically following your masa recipe, the masa was what I really was worried about. -They came out fantastic!
    I just went for the texture you described while mixing and never floated it. I also found using the spreader to be a real time saver compared to using a spoon, which I tried. I rolled them up and cooked them for about 90 mins.
    When I pulled them out I thought I ruined them, the liquid from the lid had dripped down onto them, making them too soft. I pulled one out and it would not hold together. I simply left the pot uncovered for a couple hours and they firmed right up. I could unroll them easily and they stayed together.
    The real test is the taste and texture. The red chili sauce was perfect, maybe mine came out a little redder than I wanted as I had made a rich chili colorado mixture. The taste was spot on, I could taste the corn just the right amount, not bland. But, the texture...heaven! It was not rubbery or crumbly and was firm enough to be picked up with a fork.

    Going to try making tamales for the 1st time. I grew up with my mom and my grandmother making them but sadly they passed away before I took the time to learn how to make them. I learned many things from them like their enchiladas, green chile stew, posole but Tamales and tortillas I never got the chance to learn. I attempted to make tortillas a few weekends ago and that was a failure. This week I am going to try the tamales. I will use your video and your wisdom as my guide and hopefully my mother and grandmother will be on my shoulder as well. Thank you

      Joe Hurley I have your same story. Here’s the thing, Tortillas are something you have to do over & over again till you “get it”. So don’t give up on the Tortillas!! Practice makes perfect

    I love how she explains as she demonstrates each step. Also nice is once she explains the step, she fast forwards to the next step. No boring 5 minutes of the same thing, but also no magically done either. I was able to see the whole process!

    You are the first person I see that makes tamales as close as my mom use to. 2 things are different. She didn’t use peppercorn and she didn’t add chile to the masa. But everything else is the same. I’ve been making tamales since she past 7 years ago. I finally figured out that it was the Manteca I wasn’t using enough of. After seeing you, I know now that was my problem. Thank you for sharing. 🤗

      I was taught by my Mother, but "peppercorn?"
      Also "Lard" (Manteca) Was Not Melted.
      My MOTHER INCLUDED CALIFORNIA DRY CHILES.
      MADE DOUBLE ON SALSA TO POUR ON SERVED TAMALES FOR FAMILY WHO LOVE SALSA FOR MORE JUICE. THANK YOU.

    OK, I know I've already commented on this once but update: I finally did it, I made my very first Tamales. My husband always claimed he didn't like them, but I do so I wanted to learn and guess who loves Tamales, that's right Mr. Otero LOL!! excellent recipe Laura, thanks for the easy lessons and your words of encouragement you an angel!

    I quit buying tamales because some were too dry, too bland, or too greasy. I followed your recipe exactly. I had the meat, masa, and husks ready when my husband got home. We ate dinner then started putting the tamales together. I spread the masa on the husks, and he filled them and wrapped them up. We steamed them for two hours. We took out 2, let them cool for 10 minutes and decided this recipe is a keeper. DELICIOUS!!!! By the way, I’m 66 years old; my mother never made tamales so this was my first attempt EVER!! Thank you so much!!!!

    This is my first time of making tamales and this video is helping me a lot and I'm 75 years old. Thank you for helping me with such clear instructions. Pork is almost ready, chili sauce is made and now on to the real fun of making the masa and putting it all together.

    I made this recipe today and they came out amazing! I've watched several different videos, recipes,but yours was the most informative..watching how u did it step by step was more helpful than just a recipe..i used about 3 and a half cups of monteca and put almost a cup of my chile in my masa.also made the meat and chile the day before...I'm 37 italian and have never made a tamale,or have even had one..perfect recipe,thank you so much for the video!! Will try again with other flavors

When I was young, my mother, grandmother and a lot of our relatives that live here in San Antonio would come over and spend the whole day making tamales.     I learned years ago while dating a Mexican man how to make Tamales. We video taped it, so we had how to make them once his momma passed away. Well, we split up, and I didn't get a copy of the video. I'm still very close to him and his family, though. All I can say was that it was an entire day's process to make them. It was at that point where I understood how his mom kept her arms in shape (with the masa). She also would add some of the chili to her masa. They were so yummy!!!! I appreciate your very well put together video on the process. Now I will give another try to make them. Thank you!

    I know you made this video 2 yrs ago, but I just came upon it… I was so excited to see it because it’s just like we made our tamales for years. Our family would get together a few weeks before Christmas. We would sit around a few tables and would spread the masa and my mom would fill them. We made a few thousand. My mom had a lot of kids and the rule was : he who does not make the tamales, does not eat them. 😊
    Anyway we made so many because we would freeze them and on Christmas Eve we would eat them and have them again for breakfast….. also each family would have a lot to take home.
    Boy I miss those Christmas…
    Every time I hear about Pork Tamales I think of my Mamá y Papá

    You are so easy to listen to. Your directions are clear, and you give visuals of the products you use, and that makes the recipe so simple to follow.
    The best thing about your instructions are; after you give the specific details, you point out a few times that it is okay to find the way that works best for us. Want more meat? Fill it up! Want more sauce? Go ahead and add it!
    It's nice to know that there is no right or wrong way to make tamales. Once we get the procedure down, and are comfortable with it, we are free to find what we like best, and do it our way.
    I'm a feeder. It gives me great joy to cook and fill the bellies of people I love.
    It's not uncommon for the younger guys at work (the all call me "Moms") to come to me and say, "Moms can you make me (insert food here)?" Of course I will!
    I don't like to leave any of "my boys" feeling left out, so it's a good thing I naturally cook for a crowd 😁.
    I can't wait to try this recipe. I'll have time this next Wednesday and Thursday on my days off. I am done with Christmas preparations, so my two days off are mine to cook, and this is what I'm going to prepare! 😋

    I loved this video! I've made tamales a few times with my aunt and once on my own. But they just didn't seem as good as yours look! I can't wait to try your recipe and methods!     Dear Madam, as a Texan living in northern New England, I miss my Christmas tamales (and breakfast menudo). I refuse to eat them from a can or buy them frozen. I will try this recipe and have a tamale making party with my family. Thanks for the lesson.

    I have watched every single tamale video trying to learn how to make them because the East Coast sucks when it comes to Mexican food. I’m use to good Tex-Mex flavorful food.     Followed your instructions and hit a grand slam. I never made Masa for tamales from scratch, so this was a first. I used our Kitchen Aide mixer and followed your instructions. The Masa came out great and spread easily on the corn husk. Best of all Tamales were great. Thank you.

    Hello Laura, my Mom use to always try to teach me how to make tamales. Unfortunately it never stuck. Now that she is gone to be with the Lord I wish I had paid more attention. This video was basically the same technique and the way you explain it is very good. Now with technology I can always go back if needed. Thank you so much for for a good memory of my Mom.     I am 75yrs young, I grew up watching my grandmothers making tamales and started helping with spreading the mass on the hoja when I was about 9. Never more than that and never new the recipe for the meat or the mass. It was just remembering the taste and what I liked. one of my grandma's was from Texas and had a lot of children plus tons of grandchildren. So she would make them very thin and that's the way I like them. I like the amount of meat you put on the tamale. About the age of 40 me and my sister decided to make tamales. With just a call to my aunt for a little advise, we made our tamales and they were good. We have improved since then. But I do want to thank you for teaching me something no one ever told me or explain why I would drop the ball of mass into water, I would knead the hell out of the mass and that mass would never float!!! So THANK YOU. I have sheared your video with my nephew in Idaho so he can see what I am taking about.

    My daughter and I made tamales for the 1st time yesterday- we bought the masa prepared and added the chile- I followed your instructions to the letter on the chile and the pork guisado filling - they were delicious - my grandma would.be proud - this is the flavor for the guisado that I had been yearning for - thank you - Happy New Year from LA

    The best and most descriptive tamale video I've seen yet. I made them for the first time yesterday, before I saw this video. They came out ok, but a bit dry inside. Now I see my mistakes. I just followed the recipe on the Meseca bag. Your masa was thinner and easier to apply. Mine was more like dough and I had to press it out with my fingers. Thank you. 👍

    Laura thank you.I just finished up w/ the Pork meat and my red awesome chili.The mix w/ the stock and chili to me was perfect.It will go into the fridge over night and the finished job we be tomorrow.I am going to use an 8" tortilla maker plate ,its simple and quick.Felix Navidad,,,,

    When loading the prepared tamales into the steamer basket, I recommend loading them while the basket is horizontal (like a front loading dryer) and then when it's full, placing the basket into the larger pan that has the water in it. My wife makes large batches of tamales and we found that its easier this way when you have to put 300 tamales in one steamer pot.
