  • It's time for another buckwheat recipe! Today we're making overnight buckwheat groats! Super easy to make-ahead, and a great option to have if you need a quick breakfast in the morning. Hope you guys enjoy!

    🌱 Directions:
    1 cup buckwheat groats (or more/less depending on how much you need)
    3-4 cups water for soaking
    Optional: add 1 Tablespoon lemon juice or apple cider vinegar to your soaking water
    Rinse the buckwheat thoroughly before soaking. Let the buckwheat soak 8-12 hours. Rinse again and wash away the soaking water. Top with your favorite toppings, and eat with plant milk (like cold cereal). Enjoy!

    You mention buckwheat is a grain, but it isn’t. It’s a seed of a flower that’s related to the rhubarb. Breakfast looks good!

    My wife is Ukrainian; we eat buckwheat on a regular basis. I noticed that your buckwheat is "green", or raw. We buy buckwheat from international grocers, or the Russian store. Almost all the buckwheat used in Eastern Europe is roasted....it looks more brown in the package.....a little more delicious. Love buckwheat.

    Another good option for soaking is to add a tablespoon of Kefir. The probiotics do a good job of fermenting the grains making the nutrition more bioavailable.

    Hey there! Thank you for sharing your recipe!
    I used to do something similar with wheat berries, they would sprout for 2 days before being added to fruit and plant milk… I’m definitely trying this! A word of caution : buckwheat is an allergen, so to those who’ve never had it, try a very small amount first, like half a teaspoon, and wait a few minutes (a friend of mine got a violent - but short - reaction from roasted buckwheat used as garnish in a chia pudding… fortunately it was a very small quantity)

    give me that buckwheat..I always pray for healing from SIBO and SIFO. Any good nutrition that I can eat and assimilate is my favorite..Amen

      Buckwheat and white rice are the only grains we can eat 😬

      @@carltonwillams3962 Never heard of people actually eating raw oats. I boil mine usually with some milk and butter, sometimes with water. But i still get heartburn even with 10 minutes boiling. Should i still try toasting first?

    Does the soaking also remove some of the oxalates? Buckwheat is VERY high in oxalates. Last time I tried it my kidneys were hurting for days. Maybe cooking it would remove the oxalates?

      Soaking and cooking both help remove oxalates. You can try soaking first overnight and then cooking. 😊 Make sure you discard the soaking water too!

      @@LetsEatPlants Thank You for the video and the quick reply, Quick Question - I've seen other videos mention that too much consumption of sprouted buckwheat can create a toxicity to fagopyrins in the buckwheat (causes light sensitivity). I'm looking to replace my daily oatmeal and I'm wondering if you've ever had any issue related to this (you might not eat it that regularly. Thanks Again

      @@mattclark6482 I have not, but I also don’t eat it that regularly! Maybe a few times a month at most and then will take a few months off. Not too common of a breakfast here. I haven’t heard of it causing any issues, but couldn’t say for sure. I’d check with a health professional if you’re concerned about it. 😊

    Ground flaxserd looses its nutrientritional properties within minutes of being ground. You must grind it immediately before use. If it gets a smell it's gone rancid. And that can happen rather quickly when stored. It smells like linseed oil when it's gone rancid.

      I like to store my ground flax in the fridge (and actually I have extra in the freezer too!), but good point about it going rancid easily! I wish I had time to grind it everyday. 🙂🙂

    Can I eat this soaked in coconut milk overnight ? As in no rinsing in the morning. I usually just mix honey and water with my overnight oats and then just stir and eat in the morning. Can I do this with buckwheat?

      I think it should be fine! I have read that it is OK not to rinse. 😊
      What I would do, personally, is just to rinse the buckwheat with water BEFORE soaking it in coconut milk. So give it a thorough rinse with water (until the water runs clear) and then add your coconut milk and let it soak in that overnight. 🌱 Hope this helps!

    Great Video :) . I have a question, I've never tried buckwheat before, but the kind sold where I live is roasted. Do I still soak it or do I just add my toppings + milk, like cereal?

      Hi there! So glad you enjoyed the video. 🤗🤗 I have to say, I'm not as familiar with roasted buckwheat. (I believe it is called kasha here?) But I do believe it still needs to be soaked or cooked before eaten! You may want to double check on the package, if there is any information. 😊 But all the recipes I have seen for kasha require it to be soaked or cooked before eating, same as you would raw buckwheat. Hope this helps!

      they called it "toasted buckwheat" where I get it. I don't bother soaking it. I just put it in a small bowl, with water and put it in the microwave. It takes a little longer than oatmeal to get soft, maybe seven or eight minutes, but it's really good, not as mussy as oatmeal. I love the toasted kind. Bulgar is also a good substitute for oatmeal.     Okay this is a very dumb question but I accidentally ordered roasted Buckwheat - can I still do this with them?? I wanted the raw ones to make a raw cereal but the roasted ones are like chewing on pebbles lol 🤦🏼‍♀️🙈

      Not a dumb question at all! Someone else actually asked before as well so you are not alone. 😂😂 The only thing is, I'm not as familiar with roasted buckwheat! 🙈 I tried to google if there are recipes for eating it in the same way (just soaking overnight), and I couldn't really find much info. I would say it's worth a try, and if it doesn't seem to be the right consistency after soaking 8-12 hours, then go ahead and cook just it to be sure. (And keep in mind soaking it will reduce the cook time!) Wish I could be of more help, but hope this works!

    The buckwheat I just bought is roasted & I've been soaking it for 5 hrs how and
    the outer dark skin is coming off as I change out the water. Is that suppose to
    happen? I've rinsed it about 4 times and after I refill the bowl with water, more
    dark skin keep coming up. When does it stop? Can I still leave it for an overnight
    soak? I'm trying to get rid of as many ANTINUTRIENTS as possible bcos of my
    health issues.
    I wonder if the raw version you show us in this video would be a problem for my
    IBS & digestion compared to the roasted I bought? Hmm?
    Would you know how long the roasted buckwheat takes to cook if left to soak overnight? Thank You.

      Hey there! I’m actually not familiar with the roasted version (I believe it’s called kasha?) so unfortunately I can’t help you much with that one. I do think the raw might be ok with your health issues, but definitely try a very small amount first to test it.
      I’d be curious how it goes with the roasted one you bought! Usually with soaked grains it cuts the cooking time in half, if not more!

    I was concerned if I could eat Buckwheat Groats RAW, in place of Old fashioned oats. This video answered that question. However, do they get kinda get milky, like oats do??? I'm hoping they do because I don't want to add plant milks. I'm like your husband Q. I don't want excessive salt!! 👍I usually just add like pineapple banana organic raisins walnuts and ginger.       You could definitely experiment with adding just water instead of plant milk! I do feel they get a bit creamy... but definitely not as milky as oats (I usually eat my oats with just water for example, but these I do prefer plant milk). That being said, I think if you added a lot of other items such as those you listed, you might not notice that they're not as milky (especially banana for creaminess!). Let us know if you do try it out! I'm curious about the results myself. 😀😀

      I am liking the Overnight Buckwheat Groats!!!! In water is fine for me. They are delicate and even have a floral scent when you soak them in water. It's a WIN for me!! 👍👏😁🥰🌟🌿🌱💚💜💛❤💙🌾🌾🌾🌾 I take two bananas and a cup of water, blend in blender a few seconds to make banana milk, pour on the Buckwheat Groats and add other ingredients. 😋

      It tastes raw maybe a bit from the texture. It's much more crunchy than when cooked. But I prefer it actually! I'm not sure if it's low in carb or if the soaking water gets starchy, but here's what ChatGPT says: "Soaking buckwheat overnight does remove some starch, but the exact amount can vary depending on the soaking time, temperature, and water-to-grain ratio. When grains like buckwheat are soaked, water helps break down the starches, making them easier to digest and lowering their glycemic index. Some of the starch is released into the soaking water and can be rinsed away. There isn’t a precise percentage widely documented for buckwheat starch loss during soaking, but based on similar grains, you can expect a small portion, likely around 5-10%, of the total starch content to be removed."     I soak for 6 hours, rinse. Add water and salt and nutri bullet it. Fry in dry pan. Bu kwheat tortillas. Yum

      Yep! Should be totally fine to mix those together. I do rinse the overnight buckwheat, whereas overnight oats I usually don't rinse... But I guess you could mix them together after rinsing the buckwheat. 😊 Buckwheat is fine to eat without cooking, as long as you soak it first. Same with oats. Hope this helps! 🤗

      That is a great question! To be honest, I don't actually know the answer! The only two I've ever heard of are buckwheat & oats. I've seen soaking & sprouting grains before cooking them (and beans as well), but not sure if any of those could be eaten _without_ cooking. I'll be sure to ask in my sprouting FB group!     Thanks so much for making this video! I'm new to eating plant-based and I'm also reading Woman Code and trying to sync my eating a bit to my female cycle.     I tried this last night and when I woke up I went to it and it smelled a little bit. Like the top water it sat in. Is that normal?

      Hmmm I don’t remember there being a smell, but sometimes I will see some discoloration of the water. Definitely give them a good rinse or 2 just in case and then taste them and see if they taste ok. 😄 If any unusual taste or odor once rinsed, you may want to toss them but I haven’t had that issue before so not entirely sure!

      Hi! Yes, that is correct. You do not need to cook it. You only need to soak it first for 8-12 hours until it is soft. Enjoy! 😊😊

      Yes, you need to soak them first! After soaking you can eat them raw. You cannot eat them raw without soaking. 😊

      @@BB-ux5wd Oh wow! I'm surprised! I find them wayyy too firm. 😆 I think it's not recommended to eat them without soaking first due to digestion.
      Once soaked & drained, they can store in the fridge for a few days! Probably max I would go is about 3 days in the fridge. 🤗

    I didnt rince them and tgey were like the buckwheat that is shreaded already

      You can do it either way! I do also have a cooked version if you prefer. But this is nice to have in the summer since you can eat it more like a cold cereal. It also retains more texture this way, more like a granola, vs. the cooked is more like porridge. Enjoy! 🤗
