I like to coat all my chicken then let it rest a good 10 to 15 minutes rather than going right into the hot grease. It helps make even more stay stuck rather then flaking off in the fry and gives it even a little more crunch. I usually do it before I start my grease and by the time it's good and hot is about perfect.Give it a try👍

better to marinade it in buttermilk overnight the night before. then rinse off and dry and do the breading process. can still add a little buttermilk to the egg wash to thin in. buttermilk and yogurt are natural tenderizers and help to soften the meat as well as make it more juicy. works for any meat, but especially useful for chicken/pork
