I’ve been meaning to make Cajun (not Creole) jambalaya for quite some time and I finally did it today. I followed your general approach, built a good fond, used sausage, pork shoulder, and a little smoked jowl and it was fan freaking tastic. I think I like it more than Creole style. Built up that fond nice and brown and was in flavor town! Great vid. Thanks!
Creole adds tomato sauce/paste, Cajun wouldn’t be caught dead with tomatoes in his jambalaya!! Ask Anyone! I was shocked when this guy said real… authentic Louisiana, not creole jambalaya! I am from Lafayette, Louisiana, and we would never, never add a tomato flavor to cajun jambalaya or gumbo, or etouffe, or most anyone of our classic dishes!!

@@countrycookingwithjoney Parboiled is pre-cooked rice. You work hard to get water flavor tasting great then put precooked rice in that won't absorb that great tasting liquid. Parboiled rice has to be over-seasoned to cover up it taste because it won't absorb. Improve your jambalaya dramatically and learn to be consistent with regular long grain rice.
@@countrycookingwithjoney It's not just seasoning but texture is completely off. No matter how much you cook it, it never fluffs . The rice splitting when its steamed correctly makes a big difference in taste and texture. Hey if you like it knock yourself out, But we don't use. Good cooking to ya.

im creole but I typically dont like too much tomato in my jambalaya. maybe a little paste for color. I do like the cajun style "brown" jambalaya

I use both. I’ve never had any isssue with parboiled. If you know how to seasoning your jambalaya then it don’t matter which rice you use
