Looks great Rik, and a welsh classic, I make one almost every week, so many variations on this one, my mum used to say put plenty of fried onions and plenty of grated cheese in it you wont go wrong AL, oh and a good squirt of tomato sauce as well. and it was fantastic, I have seen and tasted many variations of this fab pie,. some put carrots and gravy in it , but each to their own taste, I now put a little hot sauce in mine but, I'm a heat freak. lol.. Good on you mate love it. .Cooking is all about taste and variation. and what your family did .Your version of liver and onions, and steak and kidney pie would be great to see, because you love a good pie just like us.
A staple of any family gathering lol. I love how you roll pastry exactly the way mam taught me, roll & turn. For years mam didn’t have a rolling pin, she used an old lemonade bottle, the kind with the rubber stopper & the name embossed on the edge. Used to see the words imprinted 😁 Fantastic stuff

Luvly jubly mate. Rik, there is a pie shop where I grew up in The Dingle Area of Liverpool that still makes these, we were brought up on them and it's the old school that still goes there today. They are so tasty, I love them. The Potato with Spring onions is amazing, you soften the Onions in hot Milk and mix it with your Mash and Butter, the Irish call it Champ. Its Beautiful as it is, or fried into potato cakes. Give it a whirl, no effort and maximum taste 👍👍
Thanks for sharing. Thanks mate. I love Champ. I actually do eat that quite regularly. Great to know they are still being made. Most young people stick their nose up at corned beef, us oldies being brought up on it - love it in a pie! Best, Rik

Yes, shortening is a type of fat used in cooking and baking, similar to lard. However, shortening is typically made from vegetable oils, whereas lard is rendered pork fat. Both are used to create a tender, flaky texture in baked goods, but they have different flavors and properties. Lard tends to be more flavourful and can impart a savoury note, while shortening is neutral in taste. Best, Rik
