My mom would take Cod and poach it with some fennel in the water. [1 heaping teaspoon in 2 quarts of water and some salt] Then we would have some melted butter in a bowl and drop the pieces in with some of the boiled fennel. Salt and pepper to your liking. My mom called poor mans lobster. Super simple and very tasty. I bet that fresh water Cod would be fabulous.
Have you tried deep frying these? I can see killing a boat load of smallmouth on the Columbia, pre-making these and serving them at a big get together. that way, one would burn through a whole lot fewer walleye.
all so you pulled out those fins needlessly,when you were going to fillet it any way. I would like to time you on 20 of these doing it this way.too painful of a prosses

Back home in Mississippi we would nail catfish to a tree using a nail through the head to skin it! Wonder how that would work for this fish?

just fillet it first and then skin it like a walleye or blue gill, Skip that skinning prosses ..
