I make Beef Wellington all the time. Actually, I just made one 3 days ago. I used mushroom duxelles, homemade chicken liver pate, & puff pastry. I've used spinach, but as a paste, not a pancake. Next time, I'll use the pancake. FYI- Put the plastic-wrapped part in the fridge for 10-15 min. Once it is cold, remove it from the plastic wrap, & fold the pastry around it (the middle section will stay closed if it's cold). ALSO, VERY IMPORTANT- MAKE SOME KNIFE STABS ON THE TOP OF THE WELLINGTON BEFORE COOKING IT OR THE PUFF PASTRY WILL FALL APART (FROM THE STEAM INSIDE). I place parchment paper, sprayed with non-stick cooking spray or brushed with oil on both sides of the paper, in the baking dish, & then I put the Wellington on top of the paper. (The paper keeps the bottom of the pastry from sticking to the baking dish when you remove it to a plate.)

Trust me and all the recipes on the internet : smear Dijon mustard on the beef before wrapping it in the mushroom duxelles and wrap all of it in Prosciutto ham instead of the pancake, and it’s gonna be good.

I don't like using prosciutto or Parma ham instead of the pate' because they're just too salty & overpowering. I've also seen chopped spinach instead of the mushroom duxelles or spinach, blue cheese, & the duxelles. I've also tried it with phyllo dough instead of puff pastry- very hard to work with, the layers shredded when I pulled them apart, & they weren't as crispy as the puff pastry.
