- This Cheese Puff Recipe comes from my dear Aunt Mellarie who contributed many recipes to my parent's "family recipe box". Feeling nostalgic this year I was hunting through this box and rediscovered this family favorite and wanted to make it with my Dad for the holidays! It's SO good, despite one little tedious part! But well worth the effort!

AUNT MELLARIE'S VINTAGE CHEESE PUFF RECIPE
Makes 3 Dozen
INGREDIENTS:
6 thick slices of soft French Bread, cut into 36 1-inch cubes
1/2 cup unsalted butter
1/2 cup whipped cream cheese
2 egg whites
1 1/3 cup Sharp Cheddar Cheese, grated
1/2 tsp Smoked Paprika
1 Tbsp Fresh Chives, minced
METHOD:
Preheat the oven to 400F. Line two sheet pans with parchment paper and set it aside.
Slice bread into 1-inch cubes removing crust, until uniform in size. Set aside.
In a double boiler, add the butter, cream cheese, and cheddar cheese. Stir gently with a whisk until combined and a cheese sauce forms. Transfer sauce to a large bowl and allow to cool slightly and then set aside.
Meanwhile, whip the 2 eggs whites until stiff peaks form. Fold the egg whites, in thirds, into the cheese sauce, lightening the mixture gently with each fold.
Dip the bread cubes, one by one, into the cheese mixture with 2 forks, rolling the cube around the sauce until the cube is coated. Transfer the cubes to the baking sheets lined with parchment. Complete the process until the trays are filled.
Sprinkle cubes with paprika and fresh chives. Bake for 13 minutes, switching trays at the 6-minute mark. Serve immediately.
NOTE: Trays can be refrigerated until ready to bake. Or freeze until solid, then place in Ziploc bag and bake as needed. No need to thaw first.

OMGoodness! How Cool is that?!! I have a box exactly like that, minus the painted flowers. It was my mother-in-law's from the 1960s. Includes heirloom handwritten cards, some missing info too, and cut-out recipes from magazines, product boxes, ect. ❤

So cute! I love you and your parents! I just discovered my grandmother's recipes. She has recipes written multiple times in multiple notebooks, I think she just forgot them. And as you said recipes only with ingredients, or not specific measurements, like half a butter, half a what, half a cup, half a kilogram, what? 😂 But they remindes me of my childhood and what we ate, it is so special. And also, I remember when I baked with her, she would not want to follow the recipe. "I know it's says zest of a lemon, but we have orange, let's put that instead. It doesn't say in the recipe but let's add raisins", and so on. 😂I will laminate the recipes and catalogue it. ☺️

I'm actually doing a menu week by week, so next week will be the main course and then week after the dessert then I'll upload it all together with a game plan :) If you prefer to watch it all together. Since the menus take so long to shoot and edit (and I had a snafu with my kitchen appliances!) I had to do it this way this year :)
