- This delicious Crumb Cake recipe was inspired by a Christmas tradition from my childhood. Light and fluffy, filled with sour cherries and topped with the most delicious crumb topping. It's the perfect coffee cake recipe for your Christmas morning breakfast!

BETH’S SOUR CHERRY CRUMB CAKE
Makes 1 loaf

INGREDIENTS:
¾ cup (180g) of butter, softened
1 cup (200 g) sugar
2 eggs, room temperature
2 tsp vanilla extract (10 ml)
2 1/2 cups (300g) flour
2 tsp (10 ml) baking powder
½ tsp (2.5 ml) baking soda
1 tsp (5 ml) salt
1 1/2 cup (350ml) sour cream, room temperature
1 cup (150g) frozen, pitted cherries
CRUMB TOPPING:
½ cup (60 g) of flour
1/2 tsp (2.5ml) baking powder
2 tbsp (25 g) sugar
2 tbsp (23 g) brown sugar
¼ tsp (1.5g) cinnamon
5 tbsp (75ml) melted butter
1 tsp (5 ml) vanilla extract
1/4 cup (40 g) of sliced almonds
GARNISH:
Powdered Sugar
METHOD:
Preheat oven to 350F/176C. Spay a 9 (23cm) x5 (13cm) loaf pan with baking spray.
Prepare the crumble. Whisk together the dry ingredients, then add the butter and the vanilla and stir until a wet crumble appears. Then stir in the almonds. Set aside.
Cream butter and sugar until very fluffy. Add eggs one at a time until combined. Add vanilla extract.
In a separate bowl whisk together flour, baking powder, baking soda, and salt.
Add the dry ingredients to the butter mixture in thirds, alternately with the sour cream. The batter will be thick and sticky!
Transfer half of the batter into the pan. For this, I like to use an ice cream scoop. Make 5-6 batter balls then smooth out with a spatula.
Then add a single layer of cherries on top, keeping them from touching the sides of the pan or they will stick.
Cover the cherries with the remaining batter (5-6 more batter balls) Smooth out and then top with all the crumble.
Bake on the lower third rack of your oven, this will prevent the crumble from getting too browned.
Bake 1 hour and 10 mins, check for doneness with a skewer it should come out clean when inserted into the center of the cake. Bake 5-10 mins more if needed.
Allow to cool for 30 mins. Then release the cake from the pan, dust with powdered sugar slice, and serve!
NOTE: If the top starts to become too brown at the 1-hour mark, cover loosely with a sheet of foil.

What a wonderful video Beth. How lucky you are to still have your parents. Both my parents have been gone for a while. I miss them so much. Foods definitely bring you back to wonderful memories. My mom was my teacher in the kitchen My favorite meals to cook are ones she use to make for my family growing up. She was also quite the baker, my sister and I have taken after her there. Hello again from Texas ! That coffee cake looked really good ! I have a 21 year old recipe of my late mother in Law’s wonderful sour cream coffee cake ! Which I have made every year ! She has been gone since Oct of 2007 and my father in law also gone since 2003 ! Anyways I have lots of good memories of great food from her ! She was German and made the best food and I got a few of her recipes! I miss my family also ! They are all out in Orange 🍊 county California! My mom was here for me 2017 after my surgery for Brest cancer and my single brother was was here with us in November of 2018 ! We had fun ! Haven seen my dad or my married brother and the rest of the family since I was out there in Late September of 2016 ! We are hoping to move closer that way next year ! That cake sounds delicious! We usually have a light breakfast on Christmas morning, eg toast or juice then, off to church as we have a big sit down family lunch around 2pm. But that cake would be great at any time too!

Aww that's so cute :) Dad is definitely "Father Christmas" and we couldn't let this year pass without his annual appearance! It was a pretty funny exercise in technology and "determination!" a bit of a Christmas miracle it all worked lol! I'm so glad you enjoyed it! If you can't find the cherries, raspberries, blueberries or cranberries, just skip the fruit and do a cinnamon swirl instead! (Mix Together: 1 tbsp (15 ml) cinnamon 1 tbsp (15 ml) sugar 1 cup (150 g) chopped pecans) then sprinkle this mixture on top of the first layer of batter, swirl a bit with a skewer, then top with the second layer, and crumble. This would also be totally delicious too! Hope you enjoy and happy holidays!

I soooo know what you mean! I’m from CT and crumb cake was everywhere then I moved to LA and I never see it! Nor am I able to buy a split top bun for my lobster rolls either! lol! It’s like being in a different country?! Lol!

I actually mentioned to my parents that crumb buns and crumb cakes aren’t “a thing” here (they’ve both lived in LA for 13+ years now) and they went “No! Everyone knows what they are!!” Until I had them really think about it for a minute or two... then they realized you and I are correct! Anyway, I made this this afternoon and it was perfect and amazing! Thanks to you and your awesome parents for teaching me how to make this, so now we can continue our slow drip, now 2-person strong movement of bringing crumb cakes and crumb buns to the west coast (3 if you count my now-converted husband)! Lol 😂 hope to meet one day soon since we are “neighbors” - either once we can go outside again or on zoom! Have a great night :)
