Since I keep getting comments telling me these are not low carb, let me clarify....these pancakes are NOT Keto or Diabetic Friendly!!! In no part of the title, description or tags of this video does it say that they are Keto OR Diabetic Friendly. 1/4 cup of flour in an entire recipe for pancakes is low carb for those not doing a Keto or diabetic diet. Especially when you compare that amount to the amount in traditional pancakes. Hence the "low carb". That being said, they can easily be made Keto/diabetic friendly by simply subbing out the regular flour with almond flour. Simple fix.
I used 1/4 cup Bob’s Red Mill gluten free flour as I cant eat gluten and they were sooo good . I made some with ham and my most delicious farmers market white cheddar and some with apples cooked inside with some butter on top . I love this recipe I think the cottage cheese gives them a great flavor !

Also the best thing, you can remake the batter and just make one and put the batter back in the fridge. That way no mess. what a great discovery! Thank you.

I raised my kids Frequently eating my cottage pancakes. Gaylord Hauser had the recipe in a magazine. didn't like with white flour, but are very good with WW flour. We ate them with syrup and peanut butter. This was in the 70's. They still like them. I fix them for me at least once a week. I am 82 years old. I don't use a blender. Just mix them with a fork, and cook in a frying pan. Sometimes I have to add a little milk if too thick. you only use 2-3 Tablespoons so they are low carb, but the syrup and peanut butter make up for that.
I love cottage cheese, and I love thinner pancakes and crepes. This is the perfect recipe for me. Thank you! One suggestion re prep: break eggs in a separate bowl one at a time, then pour each egg into the blender. That way, if a shell gets in, or if it’s a bad egg, you’ll be able to catch it before it gets into the batter.
You are totally right about the eggs, I just never do it myself. But then again, I'm also the kind of person that likes to eat raw cookie dough, also a no no. 😉 Thanks for watching.
Great recipe. I used muslei in place of flour. The sunflower seeds, dates & raisins mixed with the cinnamon & vanilla extract I added to the batter made them like thin apple cinnamon pancakes with a little crunch. Phenomenal!

if you use corn starch , gluten free and yes been making for years ... and vanilla or butter extract peanut butter extract too , put fruit or veg . make a filling of cream cheese roll put in baking dish covered with cream put in oven at 350F bake 25 to 30 min. great desert. enjoy. gluten free
Just tried these, tasty. Definitely doing them again I eyeballed the ingredients seen in the video because metric system and laziness to search online the equivalent amounts: 4 eggs 2 dl cottage cheese 1/2 dl normal wheat flour I got 4 pancakes, with the diameter of abouts 19cm. With my stove top it took 3-4 minutes before flipping and little over 1 minute after flipping on a sizzling hot pan.

I use ground oatmeal (oat flour). If using Oat flour or whole wheat flour, make the batter the night before and store it in the fridge. Letting it soak overnight softens it and it tastes more like eating white flour. Enjoy.
