Quick Scalloped Potatoes - INSTANT POT RECIPE

  • How to make savory, sinful scalloped potatoes with sharp cheddar cheese and the Instant Pot pressure cooker.
    Ingredients
    7 - 8 small potatoes (2lbs), peeled and sliced ¼ in thickness
    1 cup vegetable broth (I make mine with Better Than Bouillon)
    3 tbs heavy cream
    ½ tsp salt
    8 oz shredded sharp white cheddar (2 oz reserved for top)
    ¼ tsp pepper
    ½ tsp garlic powder
    ½ tsp dried thyme
    Instructions
    Place sliced potatoes into the Instant Pot with 1 cup of vegetable broth and cook on the manual pressure cooker setting for 1 minute. (standard pressure cookers, 1 minute on HIGH).
    Instant release the pressure once the timer expires.
    Preheat the oven on BROIL
    Transfer the potatoes from the Instant Pot to a pie plate or other oven-safe dish leaving any cooking liquids in the Instant Pot. *There will not be a lot of liquid in there, but what does remain should be enough.
    Add the remaining ingredients (reserving 2 oz of cheese) to the Instant Pot and set to "Saute" and stir until smooth.
    Pour the cheese sauce over the potatoes in the dish and toss to evenly distribute the cheese sauce.
    Top with reserved cheese.
    Broil in the oven for 4 - 6 minutes until the top of the potatoes are bubbly and browned.
    Serve.

    I made this tonight for the first time. I substituted the Sharp Cheese for Extra Sharp Cheddar Yellow Cheese because that was all I had. I also used chicken broth in place of the vegetable broth, again because that was all I had. My (almost 14 years old) granddaughter, who is a very picky eater, (especially when it comes to potatoes) absolutely loved them and went back for seconds. Thanks, Joanie for a great recipe!

    Joanie!! I just tried this tonight..wow, it is so good! I added one thing. I diced up some ham and put it in the Instant Pot with the potatoes (to make sure it would be warm enough). Most scalloped Potatoes I’ve had have had ham in them. Even my grandkids who will not try anything new, tried them & loved them!! Thank you so much, this is a keeper!!

    I have made these a lot! They are so good! Tonight, I browned some Kielbasa and added it, along with some ranch seasoning mix and they were especially good. Thank you so much for sharing the recipe!

    Thank You, Girl. There really is a difference in shredded by WALMART cheese and shredded by me cheese. My mom used to buy the block and dice and the Mac and Cheese was way better! Thanks for tip

    This looks delicious, I'm going to give it a try. Thank you for the recipe and tutorial. And just because someone commented that this recipe is for potatoes au gratin, doesn't mean they are a "hater". They're right, scalloped potatoes have no cheese in it, potatoes au gratin do.

    What a great recipe! I had to improvise a bit and used an Alfredo sauce with grated Parmesan on top and included some cubed ham that was left over and it was a huge success! Will make this again. Your video was very well put together and under 6 mins is awesome.

    Thanks for the great recipe. I will definitely be trying this soon. It will go well with my Instant Pot meatloaf, which also goes under the broiler for a few minutes. IMHO your videos are very well done and your instructions are easy to follow.

    Just made this tonight, first time ever making something like this from scratch rather than the box! It turned out pretty good, though I guess I didn't QUITE get the potatoes thin enough. It was still good though!

    Joanie, we don't have any new gadgets like the Instant Pot but that won't stop me from making this great potato recipe. I love it because it's gluten free. All the recipe's I have need flour to make the cheese sauce. GF flour works but I like the idea of heavy cream instead. Chicken stock for me since vegetable broth has celery and carrots in it. This is great! Thanks! I LOVE potatoes!

    If I want to double or triple the recipe, do I double or triple the liquid in the IP?

      Life of Rina I would say no, don't triple the liquid, but if your cooker is an 8 quart you could put a cup and a half.

    could you just add the potatoes back into the cheese sauce in the pot and heat - would not get the crust but all the oven is doing is browning the top?

    I’m making it right now my sauce was way more dry and gooey than yours looked I had to add more half-and-half that didn’t work so I added some water I got it to your consistency wish me luck I’ll get back to you how it turned out

    Potatoes in cheese sauce isn’t scalloped potatoes, it’s Potatoes Au Gratin (potatoes with cheese)
    Scalloped potatoes is a white sauce with onion, lots of onion, (and usually ham)

    Potatoes look too soft and dry in finished product. I prefer to just put the cheese sauce over thinly sliced raw Yukon gold potatoes and bake them that way. It takes a bit longer, but not as long as russets would take in a traditional recipe. End result is a potato that holds together and is rich and buttery, browned and delicious.

    We look up instapot recipes so we don't need an oven. Not having an oven is kind of why most of us have an instapot. I mean, duh! Talk about a waste of time and electricity or even gas for your oven. Cook a dish in 2 different appliances? Does that make sense?

    I don't have an oven, so I cannot do this recipe. I don't consider this a good Instant Pot recipe because you are using more than just the IP.

      MajiMarji I think the recipe would still be just fine putting the potatoes back in and putting it back in instant pot in sautéed to heat through

      MajiMarji - that's hardly a fair critique since obviously one cannot brown food in the IP. just skip that part. or use your food torch, you have one of them, right?

    Typical scalloped potatoes does NOT include cheese. You are making au gratin potatoes.
