For my bithday my mom would ask what I wanted for supper and I would always ask for ham and scalloped potatoes and a whipped cream apple salad. Many memories. I will make this in my insrant pot. Thankyou again Kristen!

Another well timed video Kristen:) Will give this recipe a try this weekend and be more careful using the mandoline this time. It doesnt pay to be in a rush using those things so I will keep my pinky finger tucked in this time. Going to try using my butane torch instead of oven broiler to brown the topping. Take care.

FYI.....just keep pressure on the plus button to set time and the timer will add time. You don't have to keep pressing up and down on the plus button.....The potatoes look wonderful....and I will be making this soon!

@@AMindFullMom I set the time on mine like you did till one time I kept pressure constantly on button and time went up on it's own with steady pressure.....I did it like you for the first couple of years I owned mine. Have a great day!

Kristen - I need a larger pot for pot in pot cooking. Can I place a 3 quart liner inside my 6 quart liner? I assume if I can I would need a trivet to ensure the weight of the 3 quart doesn't push out all the water from underneath.
Also would I still need a certain amount of water in the 3 quart?

I am always happy to answer questions. If you can fit your 3-quart liner in your 6-quart on top of a trivet, it should work. While you won't need additional water in the 3-quart liner, be sure to put 1 cup of water in the 6 quart. Also, the liners are MUCH thicker than pans sold, so you would likely need to add additonal cooking time (and I haven't tried enought to give you exact timing)

Hi Deb! Hit Manual.
If you need to adjust pressure, hit the pressure button until high or low pressure is lit up (unless you have the Instant Pot Lux--it only cooks on High pressure)

Could I use coconut cream instead of half and half?
Hey there! I haven't tried that myself and would worry the coconut flavor would massively overpower the dish and the cream would be too thick. I would suggest using half broth and half soy or oat milk.
