Cake and Chips TRADITIONAL YORKSHIRE Style
Вставка
- Опубліковано 2 сер 2024
- The fish cake is a popular item in Yorkshire fish and chip shops that may not be as readily found in other parts of the UK. When ordering in a Yorkshire chippy, you might hear the following exchange:
Customer: "Cake and chips, please."
Server: "Do you want bits on, love?"
Customer: "Yes, please."
Server: "Salt and vinegar?"
Customer: "Yes, please."
Server: "Wrapped or eat now?"
The fish cake differs from a traditional fish fillet as it is made of two slices of potato and fish bits fried into a patty or fritter. While not all chippies across Britain offer fish cakes, they are a staple menu item in Yorkshire takeaways. The unique combination of flaky fish and sliced potato in these golden fried patties makes them a favorite for customers in Yorkshire's fish and chip shops.

I love this channel, it's such a cultural treasure trove - there are so many things I forgot existed, and then things like this which I have NEVER seen before. The little role-playing intro was really insightful as well, it seems like such a simple thing, but capturing the interaction and language used for the dish is something you don't often see (hear?!) and I love that extra detail! It gives it context that would otherwise be lost :)
Thank you. I'm pleased you enjoy the channel. Best, Rik
hi have you tried a pttie @@BackyardChef
Proud Yorkshireman 'ere. Yorkshire fish cakes done in beef drip are to die for!! Unlike those little orange hockey pucks they sell everywhere else.
Agreed. Best, Rik
We grew up on a cake butty for lunch pretty much every school day. Your mam gave you a quid for lunch and you could get a cake butty for 50p, a can of Quattro / Lilt / Cherry Coke for 20p, a pack of pickled onion space raiders for 10p and a Milka Lila Pause chocolate bar for the other 20p. there was nothing better than a hot crispy cake in a soft buttered breadcake with tomato sauce and loads of S&V. Every day and we were still thin as rakes from walking a mile to and from school, playing football or BMXing until dark every night. Good days.
I always wondered how they kept them together in the fryer. I would have never guessed ground rice in Yorkshire!
Yes 100% straight from my favourite chippy, when I was there last year. They showed me everything. I din't know until then. It amazed me. Actually if you google now Fish and chips shop, rice cones it comes up in a couple of very small mentions. Best, Rik
Yes we were thin as rakes cos we used our legs x
The local chippy where I grew up, deep fried battered thick slices of potato and called them potato scallops. Delicious with lots of salt and vinegar and mushy peas.
Yes, I made scallops as well. Best, Rik
This is wonderful! British food has so much to offer!!
I moved from Yorkshire to Lancashire over 30 years ago and recently have been craving these fish cakes. I'm hopeless in the kitchen but a couple of weeks ago decided to make some. Took me back to being a kid again.
Great job. Don't be helpless, take your time there is no rush - don't get flustered, you can make anything. You can do it. Best, Rik
Being a Yorkshire lass i can attest to the cake and chips being the best treat ever on a Friday teatime, we even got a bag of scraps to share for free.....We had the best chippy.
Agreed. They were amazing! Thanks for sharing. Best, Rik
By 'eck, duck! That takes me back. Scraps? 'Appen'!
Aye, it's a belter. Best, Rik
I'm Australian, so have not had fish cakes like this. I bet my late English father in law would have though! I'm definitely trying these. I could smell them cooking from here! Plus, the sound of that crispy batter......I'm drooling!
Hope you enjoy, mate. Good on ya for giving them a go. Best, Rik
Try them they are really for someone who cannot afford a battered fish its a little cheaper but a good cake is a treat.
Hey up, lad! We had these in Lancashire too, tha' knows. 😆 My mother reckoned it was a cheaper meal than the normal fish filets made for poor people. 😮 I loved them.
Nice one! Thanks for sharing that. Best, Rik
Yorkshire fishcakes are the best
From a Yorkshire bloke, I can't disagree. Best, Rik
I went to boarding school in Yorkshire, happy days. The chips were to die for. I have never had fish cake like I ate while I was at school. 😃
Happy days mate. Good memories there. Best, Rik
I'm a kid again in Hemsworth Yorkshire. Our chippy was a front room of a house in the village. ♥️
Hemsworth has changed now! Was there last year! Great memories. Best, Rik
Ya the world changes eh? I remember the guy at the drugstore lifting kids up on the counter to grab as many jellybeans as they could with one hand, from a big old jar on the counter...price...1 penny :)
Went to a fish shop in Hemsworth many years ago, on the main road across from the market and asked for fishcake and chips. They give me one of those round things covered in breadcrumbs. When I complained and pointed to a fishcake in the warming cabinet, she said ' You mean a turnover' . 'What's a turnover 'I said. 'One of these'. Where I come from they're called fishcakes. I live at the other side of Wakefield.
@@davidwatson5855
We called them horrible fish cakes
Rissoles
And a cake a Cake (Sheffield)
@wendydevereux4375 many Northern chippy’s were front rooms of terraced houses
Wonderful places most used dripping too. The Best 💝
" what does it taste like? " ...it tastes like heaven mate ....tastes like heaven....
Thank you. Best, Rik
They're lovely. In the North East they call them patties. Thanks for sharing. Yum.
Yup, I know them as fish patties and I’m from the north east. Eitherway, I remember them being great as a kid
@@stevennunn4550 yes mate delicious. It's been far too long since I had one..
I haven't had fishcakes like this since I was a girl. All the chippy's used to sell them - lovely!!! 😋
Thank you. There is a decline in everything - shame really. Best, Rik
Bang on. I fondly remember cake and chips as a kid, with scraps, with salt and vinegar which I would mop up with a tea cake. Nice one, chef from a fellow Yorkshireman 👍
Thanks cocker, nice memories - I can tell ya - as soon as I think of salt and vinegar my mouth starts to water. Best, Rik
Well ya bugs……I lived in Bradford for 14 years & always wondered how the fish didn’t fall out 😂🙈 so THANK YOU! Love your channel…..only recent discovered it! 👌❤️
Thank you. Best, Rik
We used to have fish cakes like this as a kid when I grew up in the 70s and 80s in a Nottinghamshire town that was not far from South Yorkshire. I think they had a slightly different name as we also had fish cakes made with mashed potato and fish. But they were always handmade by the fryer, never frozen.
And in a chippy you never asked for fish and chips, it was always “one of each” or “one of each with peas” if you wanted mushy peas.
Nice one. Thanks for sharing - we are all learning this around the country on here - fantastic. Best, Rik
I was brought up in the West Riding of Yorkshire in the 1960's. My dad would sometimes bring home fish cakes and chips and I loved it! We went south in the ate sixties because of my dad's work and I have not eaten them since, but still have a strong memory of how great they were. Curiously I was reminiscing about them only the other night and this video has turned up by coincidence!! Thanks so much for the memory!!
Great memories. Best, Rik
Im from New York but I'm loving this channel and recognize you're keeping your cultural traditions alive! Good on ya mate.
Thank you, Love to New York. Best, Rik
Rik, you have made my day. The first time I tried these was when I used to go to a Chippie in Yeadon, that was back in the mid 80s when I used to go to a place that was one of our customers and they were then and still are, the Best Fishcakes I have ever eaten and I have worked all over our Country and I always looked forward to it. No matter where you go, the best Fishcakes are in Yorkshire Mate 💯%. Some of the Chippies in Wigan still do Scraps and I love them, who wouldn't, with Salt & Vinegar. Nice tip with The Batter too 👍👍
Thank you for sharing, enjoyed reading this. Best, Rik
It may lack in nutritional value but this is grade A comfort food ...
It certainly is. Best, Rik
Not really. Potato is highly nutritious when cooked without water. It has high amounts of vitamins and minerals, and together with the cod fish providing protein and more minerals. Back in Ireland, the Potato Famine was so impactful because potatoes were a staple supplemented by oats, wheat, eggs, cheese, milk, and vegetables. Meat was a luxury the tenants farmers couldn't get hold of, as the British colonists exported food for sale in Britain, and allowed the Irish to starve, and didn't stop when Blight attacked the potato crop. The only questionable thing about this meal is the quality of fat used. Beef dripping would have been traditional and less damaging than hydrogenated alternatives, and too much polyunsaturated oil consumption is suspected to be implicated in inflammatory disorders. So... Do not look down on the humble potato. Nutrition used to be bad before World War II and because fresh fruit, veg, and dairy were expensive. And those times have been visited upon us again by lousy ideology impoverishing people in the Cost of Living Crisis.
Here in the midwestern part of the United States my grandma called the scraps "cracklins" . We begged for them when she fried catfish! I love this channel!
Thank you so much. Thanks for sharing I love hearing about other countries foods, and home styles. Thanks. Best, Rik
In Bristol UK we called them Scrumps...Loved them!
What a great name! Thanks for sharing that. Best, Rik@@ernstarado7578
When I lived in the uk, I lived in Dorset. The scraps as you call them are known as scratching there. One of the best things to have with fish and chips, makes it all worthwhile. Since living in Thailand, I haven’t had this type of dish for the past 30 years. This video brought back a lot of memories of going to the local fish and chip shop. Never a lover of fish cakes myself but pineapple fritters, potato fritters, a piece of roe in batter, lovely. Have to introduce my son to this stuff this week and get in to the kitchen. Thanks Rik for the memories :)
You are very welcome mate. Best, Rik
There are a few good places to get fish and chips UK style in Thailand. Busters in BKK is excellent.
Oh back to my childhood in Tingley no Morley fish cake and chips wi' scraps yes please. Thanks for this xx
You are so welcome! Tingley ahs changed I was there last year and at that big Asda up there. Best, Rik
I used to go to the Tingley one and the Mermaid(?) near that ASDA.....
@@ScratchySlide that was not there when I was a child it was local chippy near country baskets, which was a woollen mill when I was a kid.
@@megfreeth4377 My family are out East Ardsley way. I think I remember Country Baskets opening. There's a great little chippy near the Bay Horse.....
In the black country the chips get battered as well. YUMMY!
"This is real cake and chips. Not that cake you eat with your tea. You can have a cuppa tea with this." LOVE IT!
Thank you - all true. Best, Rik
Im so glad I don't have a deep fryer . If i did i would eat this all the time dipping my fries in mayo and be 300lbs. In no time! 🎉😂
I'm already there - I'm going to the fridge for the mayo. Best, Rik
I miss the Yorkshire fish and chips especially the fish cakes. We don’t have them in OZ. (Loved going to Harry Ramsdens 😊 as a kid) I’m going to make tonight as I never knew how to make fish cakes. 👍
Good luck - nice and steady, no probs, hope you enjoy. Love to Oz. Best, Rik
I must be living under a rock because I've never seen fisk cakes like these! Brilliant!!!
Thank you. Best, Rik
They are called fish scallops where i come from. South yorkshire. All that needs now is some sloppy peas, mushy peas for those who don't know 😋
Agreed, Phillip. Love mushy peas. Bet, Rik
These take me back, a long way into the dim and distant past, yum, yum. Great recipe, Rik
Thank you. Best, Rik
Top tip there with the malt vinegar activating the batter, Rik - Free Golden nuggets shared with us along the way. Thank you 🕊 ….What, with this gem & the choc sponge/pink custard delight on this week’s treat list, not sure the daily 10,000 steps’ll be making a dent, & I don’t care 🤩 Nom 👌
Very welcome. You are the first to comment on that - thank you! Best, Rik
What a fascinating recipe! You are making this New Yorker very hungry! I love how the scraps are contained between the potato slices. I've never seen that technique before, with using the "rice corns" (what we might call farina or Cream of Rice cereal) as kind of an absorbent glue. Bet it gives some texture, too, similar to external cornmeal "breading" on southern US fried catfish, etc. I've never seen the vinegar technique, either, to catalyze the leavening. Here we might use baking powder/baking soda, or in the south, buttermilk to provide the acidity for lift. Really enjoyed this, Rik!
Thank you. It's nice to see something different. Best, Rik
When I was young, I used to go into old town Alexandria Virginia and have a huge plate of shoe string potatoes all for 25 cents.. and a Coca-Cola, and we thought that was the best thing in the world, smothered and catsup sometimes Malt vinegar…
As a young'un I would have thoroughly enjoyed that. Thanks for sharing. Best, Rik
You have malt vinegar in America. I didn't know that.
JUST LOOK AT THAT! Classic Rik! I don't eat fish myself but I used to get battered sausage, chips and curry sauce and scraps! 😋 make a dirty sandwich yum!
Thanks mate. Filmed sausage will be up in a week or two mate. Love it. Best, Rik
@@BackyardChef I look forward to that mate. Also potato scallops😋 double scallop butty was a fav of mine back in the day with lashings of salt and vinegar...fantastic
Ha ha ha - I filmed that too! Will be up after the sausage mate. Best, Rik@@mrdangiles90
@@BackyardChef we are being spolilt mate👌😋 look forward to that!
Spoilt* even bloody sausage fingers😬
I love these more than fish n chips. ❤
I can see why! I'm a same for both - I love fish and chips. Best, Rik
My first full time job was at a store next door to a fish shop. The fish shop had a deep fat fryer & we used to get fish & "chips" for lunch. It was the best fish & french fries I ever had. It's gone now, been gone for a long time. 😢
Now that's a cake and chips. On my list to make. Since you popped up on my feed my list is getting longer. Day off next week
Thank you. Glad I popped up. Best, Rik
Wrapping up is what I preferred whilst living in Yorkshire 😮😋
Call me old fashioned, I loved the paper soaked through with the salt and vinegar (not to eat) the smell - nothing like it, Fantastic. Best, Rik
That looks good! It reminded me of what they have in Wigan- a smack. Which is basically a potato fritter. Youd have em on a barm cake with mushy peas 🤤. Easy enough to make your own too! Some neighbouring towns call em "specials" instead of smacks
Oh yes! Yorkshire call them scallops. Filmed and will be up in a couple of weeks. Thanks for sharing. Best, Rik
We call them scallops as well here in brum
Yes a huge reminder, fantastic.. I remember my local chippy in Bradford… where the batter was always smooth yet crunchy.. ooooofffff 👏🏻👏🏻👏🏻👏🏻👍🏻
And there's me thinking he's doing fruit cake and chips LOL, well we don't get those in Wales, but I would love to try one., I was going to ask you if you do fish cakes. thanks Rik
Aye lad, this is a cracker for you Allen. With all the cooking you do - you can knock these out. Best, Rik
That looks delish... Round our way (Hartlepool, in the North East) they're called a fritter or fish fritter. The savoury ones are called a pattie.
Thank for sharing. You know I couldnt remember (must be an age thing) I spent a few years up there! Thanks for that. Best, Rik
10 mins up the road in Horden + Blackhall once we're (I still call them it and a few others do too) known as Yorkshire Patties (also called that once upon a time in the HPool indoor market - must have been ran by a pit yacker lol) brill vid cheers 👍
@@ianwilson3862 Aye, Lol... I've never heard of a 'Yorkshire Pattie' until now.
Oh heck!... Rik - mouth watering! Your recipes are preserving our history... Eggy bread or 'Gypsy Toast' as my mam called it was another treat that minded the coppers. Great tips- regards.
Thanks you so much. Best, Rik
I’ve never had these, but I already know I love them!
Fantastic comment. Thank you. Best, Rik
Never seen this anywhere..I worked at a Scottish merchant, old town, Alexandria, Virginia and Irish connection in Occoquan, Virginia the Washington metropolitan area. Have many cookbooks it is definitely a local regional loved dish..
It is - Its a classic Yorkshire Fish and Chip shop dish! Loved by many - it used to be so cheap to buy back in the day - not so anymore, still cheaper than Fish and Chips. Best, Rik
Fish cakes (generally not as good as these though) used to be available in chip shops everywhere in England years ago. Mostly in breadcrumbs but sometimes in batter like these.
Being a Yorkshire man I grew up on cake and chips it was great when the fish and chips shops only sold the basics none of this kebabs and burgers rubbish , whenever I get back to west Yorkshire I try to find a small back street chippy and have cake and chips finishing off the cake in a well buttered bread roll , proper fish cakes are getting harder to find where I live now so I'm going to be giving this a try at the weekend thank you for an excellent video to follow
You are welcome mate. Yes times change - to make a living they have had to add all sorts of rubbish in the Fish and Chip Shops! You get back to West Yorkshire my favourite chippy by far is; Park View Fisheries 83 Ackworth Rd, Featherstone, Pontefract WF7 5LY, United Kingdom. I ate from there regular - picking up and taking to Mum's. I always got a bit extra sharing with her (even though she always said she didn't want any) She always did. Good times! Take care mate. Best, Rik
Here in Hartlepool we call this fish a fritter, delicious!
That looks delicious, but I’ve never deep-fried anything. It might be easier to just go and visit my cousins in Yorkshire. 🇨🇦
Have a great visit. Best, Rik
Fish it is then, off to the shop first thing tomorrow, thanks Rik
Good luck! Grind the rice for the rice cones. Best, Rik
I love that you dig deep into regional loved favorites, learning so much😊
Glad you like them! There will be many following along. Folks like seeing them especially you guys over there in the States. I love hearing about your dishes too! Many have mentioned on the channel. I would love to cook some and I may. Best, Rik
Man this was so cool. I really wish I had tried this when I was in the UK, alas I was ignorant of this awesome dish.
I wouldn't put it down to ignorance - there are many different dishes to eat in the UK and this is more regional to the Yorkshire region - It is in other parts, however not as much. Next time! Best, Rik

I live in Yorkshire too, we call that a Fish Pattie, with chips and scraps, never take the scraps, but I like a fishpattie.
The cake and chips remind me of when I was a young boy. I loved cake and chips with salt and vinegar,a lovely treat usually on a Friday tea time 👍👍
Oh yes! Thank you. Best, Rik
These are brilliant! I will be making these. Please, more traditional British food Rik. Thanks for the vid :)
More to come! Thank you very much. Best, Rik
Your channel is the best cooking one on UA-cam. I love the way you have a down to earth approach to cooking. As you are making different dishes from back home (the UK) I'd be very grateful if you could find out the recipe for the M & S, creamy chicken pie. Also, I'd love to be able to make both pies and quiches with the pastry they use, is it like the 'exceedingly' good one you made the mince pies with, but without the sugar. Thanks again. BTW where are you from? Yorkshire or Lancashire?
I'm a Yorkshire lad. Thanks for the accolade, I'm not sure its the best on UA-cam, however I do appreciate that. I will see what I can find out. Thank you. Best, Rik

Love it a true Yorkshire man despite all your travels? I have cooked all my life land I am enjoying watching a true food lover

Loved your chippy conversation example - asking if you want "Salt & Vinegar" sounds much better than "Salt and Non Brewed Condiment, love?" ha.
I know the dish is more about the Cake but those home cooked chips look absolutely stunning. The colour, the softness inside and the size are what I would describe as the perfect chip.

They look handsome! I've put on a stone just watching this video! We have scraps down here in Brighton, but never the fish cake! Our fish cakes are made with cod roe. When I was little in the 50s and 60s, my mum used to get fresh cod's roe from the fishmonger, flour it and fry it. It was lovely.

I did a year at law school in York early 90's, when the Terry's factory was still making chocolate orange (what a smell) - coming from the south I'd never had scraps before. I am lucky enough to live near to, what I think is, the best chip shop in Leeds. He still makes his fish cakes like this whilst many others have gone on to (I can only describe as a filling of mashed fish and mashed potatoes combined) horrible things. I hope this wonderful video inspires people to have a go at these because they are wonderful things to eat.
Sounds great! Thank you. Best, Rik
Just a delight! Exactly how Yorkshire chippies were. I’ve never seen how cakes are made. Never heard of rice cones.
Great way of making batter.❤
I think it's rice flour, which is a bit coarse. Not to be confused with glutinous rice flour a
which has different uses.
Yes not many do know about rice cones and its uses. It is ground rice - still a little coarse - not to the flour. Best, Rik
It is ground rice, not ground to the flour stage. Best, Rik@@132allie
Never knew of this one , thanks!
Happy to help! Best, Rik
