Old School Cheese Flan BRITISH CLASSIC
Вставка
- Опубліковано 1 жов 2024
- Old School Cheese Flan BRITISH CLASSIC, often enjoyed in school dinners in the UK, is a savoury dish resembling a quiche. It typically features a shortcrust pastry base filled with eggs and cheese and sometimes includes additional ingredients like onions. This dish is known for its comforting, home-style qualities and was a staple in many school cafeterias, particularly popular during the 20th century. The recipe's simplicity and the availability of the ingredients made it an affordable and satisfying option for school meals. The cheese flan served in schools would have a distinctly British character, likely using local cheeses and ingredients, and would be both nourishing and familiar to the students, usually served with chips and baked beans.

Nothing worse than a soggy bottom, thanks Rik 👍
Dead right, mate! Not many know the trick; even the celebrity chefs on the tube don't show it. Mind you, they never show the pastry bottom. I've shown the bottom and given the trick. I hope others can enjoy baking at home more now. Best, Rik
Wipe it then 👍
If you're ever doing a bacon and egg pie, a sprinkling of grated cheese on the bottom before adding the filling stops the soggy bottom scenario as well. Don't ask me how it works but grandma told me this 40 years ago, and I've never had a soggy bacon and egg pie bottom 😊
Such a shame that schools dont have home technology lessons anymore. I learned to cook watching my nana ( my mother could burn water and once a boiled egg) and carried on in home tech for 2 years ❤. Ps love your recipes keep them coming
I too had my love of cooking sparked from school home economics, it’s a shame a lot of young people now can’t cook
It is a crying shame - everything for convenience and when there is no convenience they haven't a clue. Best, Rik
Domestic Science / Home Economics. It taught how to cook and look after the home.
One of the lucky ones eh! Best, Rik@@independentpuppy7520
We called it, domestic science when I was at school in the late 60's.
School dinners at Primary school were always tasty. One of my favourite meals was cheese and onion flan served with mashed potato. Chips were never served at school mainly because the meals came from a central kitchen and arrived at each school in large metal canisters or sealed trays depending on the food.
You know, I'm a mashed potato person I love the stuff, then roasties down to chips - mash any day for me. Thanks for sharing. Best, Rik
I was a cook in charge in school meals from September 1978 to june 1987
This video takes me back we cooked everything fresh from scratch the kids use to "wolf" it down
Thank you for cooking great meals - we all enjoyed them - well most of us! Best, Rik
The meals were fabulous back in the 70s & 80s ❤ proper fresh ingredients, not over processed 😊
I remember eating Cheese and Onion flan on cold or rainy winter days with chips and beans, got me through High School 🙂 Great regional recipes
I agree! Thanks for sharing. Best, Rik@@jeangreenfield5993
😂😂"wolf it down",, your the first person outside my household I've heard use that saying. 👍
My Mam was the best cook Ever, born in 1921 she made everything from scratch with basic ingredients, she had to for 11 kids 😂 I enjoyed All school meals in the 70s because the Dinner ladies were COOKS
Egg wash on the crust before you put the filling in, what is this sorcery 🤯
Ha ha - no soggy bottom, a perfect seal - many do not know this. There you go, you do. Hope the baking turns out great. Best, Rik
You have been taking me back to the late '50s for a while now. Thank you.
I cannot remember EVER getting Chips for School Dinner. Boiled, Mashed and Creamed Potatoes although I could not tell the difference between Mashed and Creamed except perhaps that Creamed went onto the plate with an Ice Cream Scoop thingy and Mashed was a dollop.
I see you have contrived to give everyone a Corner piece! So no arguments :-) from the family.
Love the corners! Thanks for sharing. Best, Rik
FLANNNtastic!!! Sorry... I'll get me coat... lol That looks wonderful, Rik. In fact, you have truly inspired me. I am going to make one myself for dinner today, but I'm going to add some sauteed onions, only because that is my personal memory of this school dinner classic. And home made chips and beans, of course! :) Another pie I remember is creamy chicken pie with puff pastry. I have never experienced such a delicious pie since then. It was DEEP with filling, too. Rich, creamy chicken filling. Some chunks, but a lot of the chicken kind of shredded into the sauce. But no mushrooms or ham or sweetcorn. Just pure, unadulterated creamy chickeny deliciousness lol Even I have not been able to replicate it, and I have the memory so seared into my mind from all those years ago. It was a real treat the day that was on the menu. Good times. Makes me snarl when people knock and dismiss real British food. They have NO idea what they are talking about. I love these old school British classics. Thank you :)
Thank you. Loved reading this. Good Memories. I have an idea for a fantastic pie and will make it later this week. Best, Rik
I’ll tell you how outstanding that is Rik!! It’s the only meal at school I ever remember having, it was that delicious 🤩🙌🏻
I was always - trying to have seconds - always at the back of the queue too! Best, Rik
Oh that flan is great. I will make it this weekend. School dinners were so lovely. Chocolate concrete went flying as you cut it. I did not realise how poor my mother was at cooking/baking until I got to big school at 11. I didn’t know the names of dishes as I had never eaten them at home. Stew. Cottage pie, toad in the hole, jam and coconut sponge etc. You know people talk about favourite dishes their mum or aunt or grandma made. I don’t remember any. I phoned my brother who is five years older to ask him why I don’t remember, and he said we lived on sandwiches. Thank you for this video. It was well worth the effort for me to enjoy watching.
Ha ha ha, Joanne you have made my evening. I love your brothers answer. This is why school dinners back in the day were essential, a lot of kids relied on them. Good memories. Thanks for sharing. Best, Rik
We called it chocolate crunch with pink custard we were always ready for second's.
We called it "Chocolate Brick wall". It was so hard you could make a wall out of it. 😂
Hahaha oh my ,I shouldn't laugh but not everybody is good at cooking ,I suppose. 😅😊😅
I'm sorry, but your brother's answer is hilarious. In the USA I think a kid growing up with a non-cooking mom would say they lived on boxed mac n' cheese and cheap hot dogs.
Loved this at school, can't wait to make it. This is my new favourite UA-cam channel, well done!
Yay! Thank you! Hope you enjoy it. Best, Rik
👍 Memories! Perfect pastry! Dried parsley is a no no for me! The one herb that needs to be fresh! We had dedicated dinner ladies - [until THAT woman arrived]
Thanks for sharing - "That woman"? There is a lead-in. Best, Rik
Ohh the days 😁 Flan, chips and beans was a favourite of mine! Second to butter pie, beans and gravy 😁 Great recipe 👍
Thank you 😋Thanks for jogging my memory too. Best, Rik
Now come on Rik you can’t keep coming up trumps. Another school dinner favourite I had completely forgotten about. Another one to try. Thanks for these school dinner themed recipes, brilliant idea.
Thank you. Hope you enjoy - don't forget some added onions too! Best, Rik
Cheese flan chips n beans was my favourite in junior school .. until on one occasion there was leftovers ... I had thirds 😂... Didn't have it again for months .. needless to say I got over it and still make it to this day with chips n beans ..😂😂😂 peace
Nice one! Thanks for sharing. Best, Rik
I would like to see your take on the old school strawberry/chocolate cornflake blancmange .. show the world the good stuff 😂😂 peace
My son was wanting to know why evrybody had such thick shiny hair in the 70's - it was evidently this sort of food. Using evaporated milk is a total revaelation.
There was some great hair styles. Evaporated milk is an underrated ingredient in my opinion. It could be and should be used more. Very creaminess in a dish it is amazing! Best, Rik
I love evaporated milk. I always have 3 cans in my pantry and use it all the time because i have to pre plan transportation and this stuff doesn't go off before I can use it. Love quiche and make it monthly. Good for breakfast, lunch or dinner. ❤
Annette, I'm with you - I have tins all the time! Its one of the best ingredients in my opinion that was ever invested years ago. I use it in all sorts of cooking, baking to curries. As you say the shelf life is long. Best, Rik
well you have done me again Rik ,I would never have thought of using evaporated milk, so I'm making one tomorrow, but I will put some onion in mine, thanks mate. good one. Oh and I am a chipaholic . chips with everything please, especially with a curry.
Top man, Allen. Evaporated milk i one of the best things ever invented. I use it almost daily in everything from baking to curries, mate. It's a must to have a couple of tins in the cupboard. The shelf life is long. Best, Rik
Mmm. I love your recipes,.but best of all is listening to you give instructions and then OHing and AHing over the completed dish!😋
Thank you. You won't get any BS on this channel. It's plain old cooking that produces everytime. You just have to adjust to taste, how you like it. Best, Rik
@@BackyardChef I think you are great!
Flan and baked beans were a classic back in the day. And chips and beans (Heinz only) were the other combo for me. Flans are quick to make but you wouldn't catch me trying to flip it unless I wanted to redecorate the kitchen floor. Nice one mate. I'd add a little one to the flan and bingo.
I wouldn't normally it should be served in the tin - however it did show the bottom was perfectly cooked and not soggy after my tip for everyone. DON'T do it was the cry! Best, Rik
loved cheese flan but my favourite was old school bakewell tart
Good favourite. Best, Rik
What about pineapple upside down cake?
Hi Rik. Would you ever consider putting fried onions in ?.
Eddie, some did and do - some put thin sliced raw onions in too! all add a great flavour. So yes. Best, Rik
Brings back many happy memories.....All the best, Tricia and Neil......
Yes good memories. All the best to both of you. Rik
My old Nanna used to make this, and she always added a little mustard powder to the egg mixture - a scant teaspoon maybe. It seems to enhance the cheesiness, and it gives a wee bit of eggy colour to the mixture.
Sounds great! Thank you. Best, Rik
Best and healthy school dinners back then 70's ❤ love that cheese flan yum yum great memories infants and primary school ❤😊
Yes, agreed! Best, Rik
Oh, a School classic, remember it well, I was taught about soggy bottoms when I trained as a chef at York College of Arts and Technology in the early 80's....great!
Well done mate. Best, Rik
Looks amazing! Where will I find the recipe for the pastry please?
All in the description. Just scroll down a little. Best, Rik
That's a bosting flan Ricky🤪
Cheers me dears! Its a cracker. I've enjoyed it. Best, Rik
That flan looks delicious 😋 I will have to make some of that!
Just had breakfast, but that meal looks absolutely wonderful
It was! Hope you have chance to make it. Best, Rik
I remember the cheese flan at school it was absolutely delicious definitely going to make it RIK another old school favourite liver bacon and onion in gravy do you think you could make it thanks
I love liver and bacon - yes on the to do. Best, Rik
Lovely flan, though here in the US we never had this...neither at school nor at home. At least not in the Mid- west. Looks like we missed out on something good.
I'm sure there are many things we never had that you did. Hope you enjoy it. Best, Rik
When I went to school in 50s and 60s don’t think they would have used black pepper. It was probably white pepper xxx
Probably. Best, Rik
I used to eat everyone else's who didn't like it and if you got chocolate sponge with pink custard for pudding................🤤
AWESOME! Best, Rik
Ooh I remember chocolate sponge and pink custard and the sponge a bit crispy and chewy on the top. Yummy
Yes, it was a strange combination, but we all enjoyed it. Best, Rik@@ronnies462
OMG! cheese flan I'd forgotten all about that!! 😋 yummy. Did you try those chips?
Thank you. Yes I did I ate the lot! Fat bloke enjoys food! Best, Rik
@@BackyardChef take it from the "chip queen" they looked delicious as well as the flan. 😉
Thank you - love real chips. Best, Rik@@mrsplumbridge4888
Oh yes i remember it well! Do you remember fudge tart from those days? I loved it! Thanks for recipe! 😊
Yes I do! Thank you. Best, Rik
I’m salivating! Just come across your channel and I’m certainly going to try several of your delicious recipes!❤
Hope you enjoy them. Thank you. Best, Rik
Just discovered the perfect cooking channel for my taste. Please may I ask why put apple cider vinegar into the pastry mix and how does this flan differ from a quiche. Cheers take care.
Yes you can! Alan there will be a video explaining why in a couple of days - many have asked. Best, Rik
A lot of the kids in my primary school, back in the 1970's, hated the cheese flan until I suggested putting mash potatoe on the top and the beans on the top of that. It was also a great way to finish it quicker so we still had time for seconds of pudding and play time.
Great suggestion. Good memories. Best, Rik
Wow, this is an amazing recipe. I have been discharged from hospital after 16 weeks and Ive to follow the same meal plan as we had there. It was stuff like Cheese flan and mash and salad, Veggie quiche, liver onions and mash, gammon steak, breaded haddock or poached fish, haggis or stovies, proper old school food with semolina or creamed rice or custard and something for dessert, and scones doughnuts and lots of milk. I didnt think this would be easy to make, and your right about it being nutritious. especially I think pre made pastry doesnt have butter in it, and butter is good for me, I'll take a look at your other videos. I need to learn to do creamed rice do, the hospital chef says its easy, and delicious with stewed rhubarb. Thank you
Thank you, Carol. Wishing you all the best and a good recovery. Best, Rik
Once again another nostalgic walk down memory lane, that will be done next week😂👍from BIGMICK IN THE UK
Cheers, Mick. You already know I'm sure great with salad and chips too! Best, Rik
Thanks for the posting. Brings back memories. Love to you from Canada.
Thank you. Love to Canada. Best, Rik
I love this and will be making it. I was thinking of asking about this after seeing the old school dinner type dishes you have been doing.
Hope you enjoy. If you have any memories of any other school dishes they may not be on my list. Let me know. Best, Rik
Oh I remember having this at school in the 80's. I know some people complain about school meals but I always enjoyed them. During secondary school, I think I had chips and beans nearly every single day - I just loved the combination x
Agreed! Thank you. Best, Rik
In 1972, when my junior school 'moved' to a new school, there was a kitchen with a cook and an assistant. They made some lovely meals at only 12p a meal!! My best memories of school were lunchtimes. Thank you for walking me back along memory lane...
That is awesome! Thank you. Best, Rik
Wow you must have read my mind. Only a couple of days back I thought I wonder if Ric would do a cheese flan if o request it. Not only are you an awesome chef but a mind reader 😂
And I’ll be honest, not an easy thing to replicate. 😊
You can do it mate. Best, Rik
These meals are what make our UK " I say our UK" from basic to" ultimate of every county's traditional dish", meat, veg bread etc food 'meals' are works of tasteful art ,we don't want imitation flour, veg meat fish milk, powdered insects etc etc,,we want REAL FOOD BRITISH, SCOTTISH IRISH WELSH ,this is what our UK was built on ,industries, inventors entrepreneurs artists etc etc
Agreed! Best, Rik
Terence, I'm Welsh; thank you for including me and mine under the British heading, but, come on, you missed out my English neighbours (including Rik... and he's the one bringing the recipes to life for us)! 😉
@@yvonnewalesuk8035 sorry Yvonne and for Rick and everyone who helped and contributed to making of such beautiful food, AHH Yvonne it's making me feel hungry, well I'll just go make breakfast, some toast and cereal 😤😄😄 god bless everyone

I love cheese flan when I was at school ours it wasn’t served with chip and beans, ours was served with mash and peas, but it was till delicious
Yes, there were variations around the country. Best, Rik
Been making flans for years and never bake the pastry blind i put grated cheese in the bottom then add cooked bacon onions and mushrooms then milk and eggs
Spam fritters and chips and beans were my favourite.😋
Loved spam. Make my own here. Best, Rik
Sounds yummy!
I have never before been told to egg wash the inside after docking the pastry and blind baking. It makes perfect sense. Thank you.
You are so welcome! Hope it helps with the soggy bottom. Best, Rik
Made the flan for dinner with homemade chips and beans. The texture of the flan is just as I remember it. I did cheat though and bought ready rolled pastry. I think next time I will do 2 times the filling as it was just delicious! Thanks for the video. Tomorrow is chocolate sponge and pink custard. It would've been on the menu but it's blowing a hoolie and I'm out of cocoa powder 😂
Wow, thanks for trying. Well done! Best, Rik
Haha, this spooky, we ate this very thing yesterday.. Thank Rik, a soggy bottom is not good.
Ha ha ha - wow. You are right. Best, Rik
Being from South Texas moving to South Oklahoma we’re use to rich, spicy, bold flavors of chili peppers, mole, and bar-b-que. the simplicity of this quiche style dish will be a fantastic break from Tex-Mex.
Reading the comments now I’m interested in “chocolate brick” , pink pudding, toad in a hole and more.
Thank you. I love bold flavours too! Best, Rik
Brilliant! Super crumbly pastry. Perhaps too crumbly for what I intended. Also, probably not sweet enough for my taste so will add more sugar next batch. If I reduce the butter/ lard marginally(say 20 gms.) will that make the pastry less crumbly? Loved it and looking forward to the next batch
Thanks for sharing. It will indeed stiffen the pastry. Thank you. Best, Rik
I'm an avid calorie counter as I'm always on a blooming 1000 cal a day diet. That flan is at least 3000 cals. Possibly more. One quarter portion is at least 750 cals. Lovely to eat, but I'd have to try to make a more lightweight version. Thanks for the lovely podcast. I love your shows. Xx .... ps. Those chips look yummy.
I need to get my calories down to that, just can't do it. Thank you. Best, Rik
Can't believe this flan is virtually calorie free!!!!!
Is it? I've no idea! Best, Rik
My high school Aigburth Vale High School for Girls in Liverpool served up CHEESE PIE on Fridays it was everyone’s favourite. Many years later I found someone on the school FB page who was the daughter of one of the dinner ladies and she reproduced the recipe. It’s gorgeous. It certainly wasn’t a flan, and the pastry certainly didn’t need an egg and ACV in it either! Evaporated milk????? Never! 😂 Nit we always had chips with it. Always.
Hi, Lynne. Glad you enjoyed someone's recipe. You have absolutely no idea why I make pastry the way I do! There will be a video up soon making it - it will rock your pastry world! All the folks that say cold hands, cold butter, no egg no this no that - living in the past, when we had it all drummed into us "It's the only way to make it" so whether you think it didn't need this or that. Stick to what you like and know! You have seen the crumb on my pastry and look at my other videos - exceptional short crust! Thank for your comment. Best, Rik
My two weaknesses cheese and pastry, I'm so hungry right now.
Thank you. Best, Rik
Rik, you make me feel that you are cooking just for me, and I know that there are thousands who follow your videos and are watching at the same time, and that my friend is an Art in itself. That is why you have so many followers like myself who have actually been baking for many years.!
Wow, thanks. Appreciated. Thank you. Best, Rik
My smallish infant school used to fill with the aroma and us kids used to scream FLAAAAN, best day of the week. Great tip on the evaporated milk, always wondered why it was different from other flans. Cheers mate, nice one.
You are very welcome. Hope you enjoy it. Best, Rik
Made this over the weekend.Brilliant recipe - took me right back to my school days. Absolutely delicious.Served it with home made baked beans (as per Rik's recipe) - also delicious ! And dont get me started on the pastry - so easy to make and the result is fantastic. Big thanks Rik 😁
Wonderful! Thank you. Best, Rik
My elementary school lunches in Dallas, TX, USA, were fabulous. We never had flan of course, but we had homemade rolls daily that were a meal by themselves. I love custard type dishes, and this looks really good.
Sounds great! Thank you. Best, Rik
I loved cheese pie at school. One of my all time favourites, and I'm going to do one next week. I love cooking, it's so medative.
Sounds great! Best, Rik
I remember lovely school meals in the 50's and 60's, chocolate sponge and chocolate custard were my favourites for Afters. We had cheese flan regularly, just like yours, it was delicious and filling!

It was called 'DOMESTIC SCIENCE' when i was at secondary school in 1974-1980
Yes
There were very few school dinners I didn't enjoy back in the day. My school dinner days were when we moved from Scotland to England in 1966 when I was almost 10 up till when I left school in 71'. This cheese flan was one of my favourites.
Bakewell tart which I've seen on your channel was a well beloved pudding as was jam roly poly and custard. There used to be another favourite but I don't recall a name, only that it was a pastry base with red jam on top with a couple of small dairy cream swirls. I'm positively drooling now and trying to recall the many great things we were served up compared to the rubbish of today. I'm not even trying to moan, it's just a fact.
My mum was a great cook but it was all standard Scottish fayre which was fantastic but completely non adventurous and predictable. She did fantastic battered whiting though and would drop some more piping hot chips on my plate whilst I was watching tv and not realising. I would then pop one of those chips in my mouth and proceed to try and swallow that red hot poker as fast as possible, lol. Why did we never learn to remove it rather than go through the pain??
She baked daily as well, apple tart, rhubarb tart, Dumpling (clootie pudding), treacle tart, tablet, shortbread to name but a few and her soup aka kale was legendary.
My parents never even tried mushrooms let alone a curry or a spaghetti. Items such as mustard, spices and even tomato ketchup were never in the family cupboard. Now I'm retired I have suddenly got interested in experimenting and trying to rediscover tastes from the past. I believe I've found the right place.
Wow! This was fantastic to read. You have good memories right there. I was lucky, Mum experimented with various foods back in the day - she was a proper home cook - Old fashioned , parents Dad out earning the crust, Mum at home. However she along with many, introduced Vesta meals for us all. Giving us a chance to try risotto and curries. Obviously not the same as homemade. However an introduction. We had a roast every Sunday left overs always on Monday, with mash potato. She baked all the time. Just amazing when we think back. Thanks for sharing and good luck with the discovery. Best, Rik
Great job ❤ That flan looked so YUMMY 😋
Love watching your videos. You have inspired me to have a go at making pastry again 😊Thank you Rik❤
Go for it. You can do it. Wait until you see tonight's video 2 more options on pastry both excellent. Best, Rik
Looks great. Husband loves this. Thank you. My abiding memory of school dinner is baked egg. I do short sharp spells in a local NHS hospital where they used to make this nicely and tasty... recently it reminded me of the bland school dinner one. We has a similar 'pie' to your good looking pie and it was bland.... Seriously thinking they have found a stash of powdered egg to use up 😂😂😂.
Shame, some onions would have sorted that out. Best, Rik
As an American I’ve never heard of this but it sounds good. I’d probably put a little bit of onion in it. My grandma was a school cook back in the 40s-60s in Nothern Wisconsin. Ai went to a local history museum, the old ladies there remembered my grandma and what they remembered was her baked bean sandwiches on homemade buns. I still use her recipe for buns that have a little honey in in them.
Sounds amazing and good memories. Thank you. Best, Rik
When we had cheese flan it was served with roast potatoes and a hot tomato sauce I have never been able to replicate the sauce,it was unique and never had it anywhere else
I never had it that way. Will look through my notes to see if I can find it. Thanks for sharing. Best, Rik
I remember that sauce, we had it with roast fore end (gammon) I suspect it was cream of tomato soup in hindsight. I cooked gammon a while back and used a cup a soup!
At our school we had baked fish with that tomato sauce (I am sure it was cheap tomato soup) and the mashed potatoes dissolved into the soup, ugh! However cheese flan with roast potatoes and raw grated carrot as the vegetables, actually the roast potatoes were deep fried and crunchy. Alternate squares had either a slice of tomato or a slice of mushroom. I liked the tomato. Yummy.
Wow, I didn't have that one. Sounds interesting. Best, Rik@@walkfarm1
I remember the sauce! Loved it. It had a unique taste I’ve never found since. I’d love to make it at home.
I'm in the US and I would have loved lunches such as this!! Back in my day the food was ok but today's school lunches are horrible! I worked as a lunch lady for a while and I could not believe the food they served the children. It is all fast food pre packaged crap... Anyway, as always enjoyed your video, great stuff!
Thank you. You know many have referenced on here that the lunches were terrible. Best, Rik
We never had anything like it in the USA, but it looks hearty and delicious 😋
It's so good! Hope you have chance to make it. Best, Rik
🤍💛⛅️🌠🩷🤍 HI , Thank You . Now Im wondering if Flan " is originally from England as savory , And Spain made It a sweet recipe ? I like to make Quiche , I havent in very long while. Maybe I try to Veganize Your recipe and call It English Flan. 🤍🩷
Good question! Sounds like I'm coming round to yours for dinner. Best, Rik
Ah this was one of my favourite meals. Until the local council sold the contract to the same company who does prison food then it was just turkey twizzlers and cheap hotdogs/burgers. Before then we had flan, casseroles, stews, mince and dumplings, pies and loads of fresh veg. Such a shame
What a shame. Hope you enjoy this one. Best, Rik
cheese and inion flan with mash and beans was my fav school dinner , this reminded me of my school meals in the 70s and 80s tku
Thank you. Best, Rik
😆oh happy day , just stumbled onto your channel, well I went through the videos , I can’t see Spotted Dick or jam roll poly ☹️.
Jam rolly polly is there. Best, Rik
This is the real stuff! I remember cheese flan at my first school. The dinner ladies were a dab hand at it.
I've been looking for a good recipe for years, and this is it. I was trying to explain to my wife what a flan was (she wasn't schooled in the UK for the most part), and she kept asking if it was a quiche...To her, a flan is something else.
Thank you. Best, Rik
Hi Rik, if I were to add cheese to my pastry show would it affect the amount of fat I add to the mixture? Sometimes I think a nice cheesy pastry would be lovely in recipes like this (rich, tho)
Cheese in pastry works ok - cheese powder works even better. Thank you. Best, Rik
So funny - I loved that school dinner but my favourite was cheesie eggies - most kids on my table hated it - I was happy but trumpy later which was good for the squabbling with older brothers and annoy younger sister
Do cheesie eggies please
Thank you for the suggestion. Best, Rik
Great to know about evaporated milk. Don't always have cream in, but evap can always be in the store cupboard ready for use, and what about your pastry, that's a revelation too. Thank you for sharing.
Thank you. There will be a video about the pastry explaining why I make the way I do. Best, Rik
Gutted.I dont know what i did wrong ,but it was more like egg custard.Oh well, cheese flan is my favourite so i will try again....
Sorry to hear that. Did you not cook it long enough? It sounds like it did not set up. If there is a problem with it not setting stick some tin foil over it. That way it will steam itself cooked and set up without burning. Good luck. You can do it. Best, Rik
Loved this pastry, best recipe I've ever made for pastry. Added some finely chopped onion to my cheese turned out perfect.
Sounds great! Thank you. Best, Rik
This recipe inspired me to cook a cheese flan for supper. I made a couple of changes. I spread mustard on the bottom crust to give it a bit more flavour. I caramelized some onions and put them on the bottom of the flan before adding the grated cheese on top. I also sprinkled some basil on top of the cheese. The rest was the same.
That is awesome! Well done, David - always taste and adjust - always! That's how to cook. Best, Rik
Yummy!!
I like your idea! I think I’d slice a tomato too!
Cheese flan OMG I have been looking for an old school recipe for this for so long, I loved dinnertime when it was cheese flan then cake and custard Mmmm ❤ Mmmmmm
Hope you enjoy. Some had onions in. We never had. Best, Rik
Never had that while I was at school. If you add to the mix, some chopped onion and chopped bacon/ham, you've got a quiche. There was never grated cheese, it was always some processed stuff that they put through a mincer so we had cheesy turds on the plate. I loved rice or semolina with a dollop of jam in the middle.
And a very delicious Flan. Agreed! Best, Rik
I knew about blind baking but not the part about the egg wash. Thanks for the great tip. Love your videos.😊
Thank you. Best, Rik
I work in a school, 21 year veteran, when I started we had an old school cook, food was amazing, now we have outside caterers in, the food, if you can call it that is absolutely shocking
Oh dear! Thank you. Best, Rik
Wish I could have shared that dinner with you. I loved school cheese flan it was one of my favourite dinners and my favourite pud if you’d like to make it was butterscotch tart, delicious.
Next time! Me too! Here you go ua-cam.com/video/9Apb7UMtMbA/v-deo.html Best, Rik
My god...we had this in primary school back in the 90's and it was always swimming in water. It was foul. I used to try and spread it around the plate to make it look like I'd eaten it but the dinner ladies used to collect the mush with a spoon then sit there and make you eat it. Yours look infinitely more delicious but it sure brought back some bad memories.
Sorry about that. This is great! Best, Rik
fantastic cooking rick once again school dinners was the best, every day i used to look forwards to my school dinner proper food in the 1970s also got a good tea at home what my mam
cooked, none of these ready meals like these days 👍 up fr me
Agreed! Thank you. Best, Rik
My mum always uses an egg in her pastry and it tastes a lot better than without the egg.
Its richer in taste for sure. Best, Rik
Skool cheese flan. It's what Fridays were made for. I always tried to get a bit from the middle so you got all of the cheesy goodness and none of the boring crust. It made up for the nasty vinegary beetroot ion the side which always dyed the mash pink.
Thank you. Best, Rik
Mmmn. You are making me hungry… this reminds me Boeing back in school.. ah what memories.. thanks mate..
Good memories. Thank you. Best, Rik
I loved cheese flan in school .. I'm going to try making this ❤
Hope you enjoy it. Best, Rik
I made this today, adding caramelised onions, it was delicious. Eaten with a salad but I imaging this would be even better with chips and beans and a dollop of brown sauce.
Thank you. Best, Rik
Oh my god I remember having this at school but we always had tinned tomatoes instead of beans. It really was one of my favourite school dinners .😊
Sounds great! Best, Rik
I'm gonna make this delicious food. Thank you 🙏❤🎉 enjoy your day.
Thank you. Best, Rik
My school in Gorton Manchester served this with mash, beans and a lovely tomato sauce absolutely delicious.
Sounds great! Thank you. Best, Rik
