How To Make Authentic Puerto Rican Arroz Con Gandules

    I'm ashamed to admit, I don't know how to make Puerto Rican dishes so I recruited my friend Rebeca Nieves Huffman to teach me how to make Puerto Rican arroz con gandules just in time for Christmas.
    🤪Special appearances from my entire family.
    😂My husband was the cameraman and sus chef.
    🇵🇷Arroz con gandules by Rebeca Nieves Huffman
    -3 tablespoons of olive oil
    -2 large spoonfuls of Sofrito
    -1 tablespoon of Sazon
    -6 oz of Tomato sauce -2 cups of medium grain rice -2 cups of water (you can also use chicken
    stock or broth)
    -1 tbsp of Salt
    -1 teaspoon of Oregano
    -Pitted green olives to taste (personal preference here. I use about 1/4 cup)
    -1 can of gandules (they are also called pigeon peas), drained and rinsed
    Instructions
    -Add your oil and sofrito and let cook for 1 minute. Then add tomato sauce and mix. Add the sazon, olives, rice, and water then give it a couple stirs to incorporate all ingredients. Then add the gandules.
    -On the same medium heat let the mixture come to a boil and evaporate the vast majority of the liquid. Then cover the pot, lower your heat to low, and let it cook covered and uninterrupted for 20 minutes.
    -Uncover and gently fluff up the rice with a couple of gentle stirs of the spoon (don’t too aggressive mixing or your gandules will break and turn into refried beans texture!).
    -Enjoy!

    My husband is Puerto Rican and I had to learn this dish 3 1/2 yrs ago because it’s like the staple dish in every Puerto Rican household.. I am a white girl but I learned quick when his sister taught me how to make this lol

    Making rice takes practice. Definitely use only one packet of Sazon add salt to taste. I am Mexican married to a Puerto Rican and I am officially the PR rice maker for all parties.

      I was married to a puertorican for 20 years and I did all the cooking . I learned how to make everything. Alcapurrias, arroz, pasteles, tembleque, flan, etc. You name it .

    Little tip to make any rice, let the rice boil uncover (like Rebeca said) in medium heat, when the water evaporate and get to rice level cover up and lower the heat to the minimum. Let the rice finish and do not stir, stir and stir. When you stir the rice, you let the heat escape, only stir at beginning to combine well the ingredients.

    We don't use sazon or oregano. We still make fresh achiote for color and alway fresh sofito. Looks good, good job!

    These are the steps I use to make my arroz con gandules, too. I used to boil my rice without frying it a little. I realize it cooks quicker when the rice is fried and the cold water that gets added to the rice is boiling hot. That's, the first step I do is boil cold water for the rice. Be careful adding the boiling hot water to the rice, it could splatter a little. But, overall, I love the sound it makes being added to the rice.

    Just so you know, there is fluid ounces (fl oz) that referes to volume & ounce (oz) that referes to weight.

    I make my own sofrito and on one of my trips to PR my sister gave me a few bottles of that sofrito and his garlic as well. It was delicious. I was born and raised in Chicago lived in an apt bldg front of Humboldt Park. Now I live in Tampa,Florida. Saludos a las 2.

    You will definitely notice the difference when you use the right caldero. Also, when you make it with pork, yum. I was taught to boil my water in a different pot then add the boiling water. Just curious if anyone else does it. Both my mom (Moca) and my mother in law (Santurce) did it. I know everyone makes it different. I was taught without tomato sauce. I did it one time and my kids didn't like it. So I stick to no tomato sauce. I have watched many videos and your rice looked good 👍.

    Love this dish. I had a very good Friend who is a New York Puerto Rican and she taught me how to make this dish. We use one envelope of sazon and we add adobo to it also. It could be too much sazon that's making it taste salty.

      This video is for someone who knows Spanish. and English since you mixed both in the explanation. Also if one doesn’t have “sofrito” in one’s grocery store you didn’t talk about “ sofrito” what to do if there’s a supplement you can use.

      You can make sofrito from scratch because it's basically green peppers, garlic, and a few more spices. You can google the recipe. The friend you see in this video has a recipe on her UA-cam and Tik Tok. I always buy mine already made.Sofrito is the basic ingredients for a lot of Puerto Rican dishes.
