    My dad was stationed at Ramey Air Force Base in Puerto Rico in the early sixties my sister was born in 63 so I know I was there before then. One thing that I remember I am now 63, is the pigeon peas and rice smell and it absolutely Drives Me Crazy. 8 years ago I was invited to a baby shower where there was a roasted pig and as soon as I walked in to where the food was in the tent I could smell the pigeon peas and rice it is a wonderful dish. Today is Monday December 13th 2021 and I am making pernil roast pork I did not have a shoulder so I'm using a sirloin roast. It was on sale and I could not justify the big piece. But I can make it work I paid my bills for 26 years out of the kitchen but my accompaniment is pigeon peas and rice. My home health aide is Dominican. I have two friends that are art instructors at the college one is from Brazil and she absolutely loves it and her husband is from Puerto Rico. I will only eat a taste of this but one is for my house home health aide and her two children and the rest is for my friend and her husband the artist from the college it is Christmas time and it is my way of saying Merry Christmas

      At the same time period we lived in St Croix. Our landlord was puerto rican so we ate all of this glorious food. Now I cook the rice and pernil every fall. Still have not mastered the pastelles though.

      You made me smile, thank you! I'm half Puerto Rican, my grandmother was a good cook. I would say great, but turned out she only stuck to 5-6 recipes she was good at, lol! One of which was pasteles! Wish I had one now!

    I'm sure some people don't know what sofrito is. Depending on how much you want to make. This is what you need. 1 bunch of Cilantro stems and all, 2 medium green bell peppers,
    10 to 12 garlic cloves, 1 large onion or 2 medium onions and a handful of small sweet mix colored peppers. in a food processor quarter the onions and bell peppers remove the seeds
    and white parts as well as the small sweet pepper and set your food processor on low add the garlic and cilantro until chopped, then set it on high and process until finely chopped
    you may need to add 1/4 cup of water to thin it out. and whala you have sofrito. from Gypsy Nick.

    Nice job. The only thing I would differently if I may be so bold to suggest is to add the liquid from the gandules as well. This little bit of extra liquid will allow the rice to absorb the flavors of the sofrito and spices more easily. Reduce water by .5 cup.

    I just made this and it came out great! I doubled all of the seasoning though, because I added about 5 stripped down (cooked) chicken thighs that I cut into small pieces and wanted to make sure they had plenty of flavor. I added the chicken at the same time as the rice and mixed everything. The cook time was the same. I did add about 1.5 extra cups of water on account of the chicken.
    This is similar to how my mom used to make pulao, a rice dish that's popular in my parents' country, Trinidad. Sofrito is a lot like Trini green seasoning.

      Oh I should mention, only difference is I use one bag of frozen Goya Gandules (same amount as a can), and I use about half a can of tomato paste rather than sauce

    The Sazon you want to use has Achiote and Culantro. And a Tip. add one packet of goya Hammon a ham flavored bouillon as tradisional Arroz con gandules has bits of ham
    in it, Some people don't like the bits of ham in their rice this way you can still have the ham flavor. and the ham flavor is subtle not overpowering. Just add 1 tbsp of adobo red cap.

    Tomato sauce is very thick i use 2 spoons for 3 cups of rice n put the gandules at the end so they dont mush they are soft to begin with 1 sazon with achoite n 1 azafran gives it a nice color thks or ur class
